MOM'S CLASSIC SOUTHERN DEVILED EGGS

My mom's classic Southern deviled eggs are simple to make, deliciously creamy and perfect for holidays, family gatherings and special occasions!

1 dozen large eggs
1 tablespoon yellow mustard
1/4 to 1/3 cup mayonnaise (reduced fat is OK)
3-4 tablespoons sweet pickle cubes, drained (optional, see notes)
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
Sprinkle of paprika, hot sauce or sriracha, chopped fresh parsley, snipped fresh chives, capers, pimientos, sprinkle of cayenne, caviar, cooked, crumbled bacon or an olive slice

Steps:

  • Place eggs in the bottom of a large pot and cover with cold water.
  • Bring water to a boil over high heat. Turn off heat, cover the pan and let the eggs sit for 20 minutes.
  • Drain the eggs and rinse them with cold water. (Alternatively you can do baked hard boiled eggs in the oven or make Instant Pot hard boiled eggs if you prefer.)
  • Peel the cooled eggs then cut in half lengthwise. Scoop out the yellow yolks and place them in a small bowl. Plate egg white halves on serving plate.
  • Use a fork to mash the egg yolks. Add the remaining ingredients and mix well. Season the mixture to taste with extra salt and pepper as needed.
  • Fill each egg half with the yolk mixture, mounding it up a little. Sprinkle with any desired toppings and serve.

6 eggs
1/4 cup mayonnaise
1 teaspoon white vinegar
1 teaspoon yellow mustard
1/8 teaspoon salt
Freshly ground black pepper
Smoked Spanish paprika, for garnish

Steps:

  • Place eggs in a single layer in a saucepan and cover with enough water that there's 1 1/2 inches of water above the eggs. Heat on high until water begins to boil, then cover, turn the heat to low, and cook for 1 minute. Remove from heat and leave covered for 14 minutes, then rinse under cold water continuously for 1 minute.
  • Crack egg shells and carefully peel under cool running water. Gently dry with paper towels. Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on a serving platter. Mash the yolks into a fine crumble using a fork. Add mayonnaise, vinegar, mustard, salt, and pepper, and mix well.
  • Evenly disperse heaping teaspoons of the yolk mixture into the egg whites. Sprinkle with paprika and serve.

My Mom taught me how to make these, her secret was the sauce. She used it for these as well as coleslaw and potato salad. I think it is the sugar that makes the eggs slightly sweet. This last Easter, my sister-in-law and I both made deviled eggs and I have to say, that mine won! I don't think I ever have had sweet ones anywhere else. And here is my secret....I eat 2 eggs worth of the whites, while I am making them that makes the other eggs really full.

18 eggs
1 cup mayonnaise (not salad dressing)
1/2 cup sugar
1 tablespoon yellow mustard
paprika (optional)

Steps:

  • Boil eggs to hard-boiled stage.
  • Rinse in cold water, cool and peel.
  • While eggs are boiling, make sauce.
  • Combine mayo, sugar and mustard and stir until smooth.
  • Refrigerate, and don't be worried if sauce still has sugar crystals.
  • When ready to assemble, slice eggs in half, scoop out yolks and mash.
  • Take sauce out of fridge and stir again.
  • Now it should be smooth.
  • Mix sauce with mashed egg yolks.
  • But don't use all at once.
  • May have to add a little more until the right consistency.
  • Start with 1/2 of the sauce and add more a little at a time as needed.
  • Spoon into egg whites and sprinkle with paprika for garnish.

DAD'S FAVORITE DEVILED EGGS

I can't remember a summer picnic or party without deviled eggs made with Miracle Whip salad dressing. These are an all-time favorite for everyone, they are sure to enjoy them!!

12 eggs
3/4 cup mriacle whip salad dressing or 3/4 cup mayonnaise
4 teaspoons Dijon mustard
1 tablespoon fresh lemon juice
1/4 teaspoon kosher salt
ground black pepper
fresh parsley leaves

Steps:

  • Place the eggs in enough cold water to cover in a large saucepan with a lid. Bring to a boil over mediun-high heat. Immediately remove from heat, cover, and leave for 10 minutes. Drain off the hot water, and run the eggs under cold water until cool. Tap the eggs gently in several places to crack and then peel. (for easy peeling, place the cool egg in a pan of cold water for 10 minutes before cracking.)
  • Slice the eggs in half lengthwise. Carefully remove the yolks from the whites, and place the yolks in a bowl. Add the salad dressing, mustard, lemon juice, salt and pepper. Using a fork, mix until well blended.
  • Refill the egg white halves with the yolk mixture, using a spoon or small spatula. Garnish with parsley leaves and chill thoroughly before serving.
  • FOR DEVILED EGGS RANCHERO: In a bowl, combine the yolks with 1/2 cup mayonnaise, 1/4 drained chunky hot salsa, 1/4 cup finely shredded Monterey Jack pepper or sharp Cheddar cheese, 2 Tbps. finely chopped fresh cilantro and salt and ground black pepper to taste. Refill the egg whites. Garnish each with a dolop of guacamole and a sprinkling of finely minced fresh chives.
  • FOR DEVILED CAVIAR EGGS: For this adult version, in a bowl, combine the yolks with 1/4 cup mayonnaise, 1 teaspoons Dijon mustard, 2 teaspoons fresh lemon juice, 1 tablespoons finely minced fresh parsley, 2 tsp, minced fresh chives, 1/8 teaspoons hot pepper sauce, and 2 oz. caviar. Mix until blended. Season to taste with salt and ground black pepper. Refill the egg whites. Garnish each with a tiny dollop of sour cream and a dab of caviar, serve with champagne.

6 hard-boiled eggs
1/4 cup mayonnaise
1 1/2 tablespoons sweet pickle relish
1 teaspoon prepared mustard
1/8 teaspoon salt
1 dash pepper
paprika

Steps:

  • Slice eggs in half lengthwise, and carefully remove yolks. Mash yolks with mayo. Add relish, mustard, salt and pepper; stir well. Spoon yolk mixture into egg whites. Sprinkle with Paprika.
  • Tips; for pretty eggs, pipe yolk mixture into egg whites with a decorative pastry tip.
  • If you want your eggs, to stand up on the plate, and not wobble around, slice off a very small bit on the bottom of the white, so they sit flat.

Steps:

  • Chop the shrimp, except for 12, which will be used for garnish.

My Mom & Dad have been making deviled eggs like this for as long as I can remember! I recommend using recipe #385136 to cook the eggs to begin with. If you don't like Miracle Whip use mayonnaise, but then it won't be my Mom & Dad's recipe. This was posted merely for our family to achieve the same deviled egg taste we grew up with, and everyone in our family loves.

3 teaspoons Miracle Whip (optional)
cayenne pepper (optional)

Steps:

  • Cut hard-boiled eggs in half length wise.
  • Gently scoop yolks out into a mixing bowl. Set aside egg whites.
  • Add whatever to yolks and mix thoroughly. (I use a hand mixer).
  • Place mixture in a piping bag and fill the egg whites where the yolk was removed.
  • Sprinkle cayenne pepper on top of egg yolk mixture. Enjoy!
