HAM SALAD SPREAD
My family has enjoyed this hearty ham salad recipe for years. It came to be an unexpected leftover every time we had ham for a special dinner. Recently, I decided to measure the ingredients, write down the recipe and pass it on to my daughter and daughter-in-law. They encouraged me to share it with Reminisce readers. -Marcella Kulp, Quakertown, Pennsylvania

HAM SALAD RECIPE WITH BOLOGNA OPTION
Make ham salad with leftover ham (or bologna), hard-boiled eggs, pickle relish, and mayo. Basil makes this recipe especially memorable. Serve on rolls, in sandwiches, or my favorite, oven-baked sweet potato chips. This recipe is easily cut in half if you don't have a pound of ham.

Steps:
- Cube ham or bologna(remove the rind if desired), then place in a food processor and pulse approximately 10-15 times until ham is chopped but not too fine. Alternatively, use a meat grinder or chop as finely as you can with a knife.
- Chop hard-boiled eggs and celery, if using. Add to ham. Add remaining ingredients except for vinegar and stir gently to combine.
- Mix in 1 teaspoon of vinegar and taste. If ham salad needs a little more zip, add an additional teaspoon.
- Chop basil and add to spread if serving immediately. Otherwise, leaves should be left whole and added to the sandwich before serving. Cut leaves will turn an unappetizing color.

HAM SALAD SPREAD
I love ham salad spread on a sandwich or with crackers. I also know that it's loaded with calories, so this is a lightened up version of deli variety. The lack of moistness is made up for by the addition of seasoned vinegar. You can use regular or wine vinegar instead. Some versions use sweet relish, I prefer the dill. You could...

- If Using a Food Processor: To use a food processor or blender (which makes this process exceedingly quick and easy), add the ham, eggs, and celery. Season with a sprinkling of salt and pepper if needed. Taste the ham for saltiness before adding additional salt.
- Pulse the ingredients until they're minced. For me, this is about 5 to 7 medium pulses. I look for pea-size chunks of ingredients. Scrape the bowl or blender as needed to combine ingredients evenly. This mixture should result in about 3 cups of minced ham.
- In a small bowl, combine the relish, mustard, creole seasoning, fresh dill, and mayonnaise. Fold it into the minced ham.
- If Mixing by Hand: Be sure to finely mince the ham, eggs, and celery. In a small bowl, combine the relish, mustard, creole seasoning, fresh dill, and mayonnaise before folding it into the minced ham.
