ASPARAGUS SOUP WITH LEMON AND PARMESAN



Asparagus Soup with Lemon and Parmesan image

This asparagus soup tastes rich, yet it's made without heavy cream - just veggies, broth, and a bit of Parmesan cheese puréed to silky perfection.

2 bunches asparagus (about 2¼ pounds), bottom ends trimmed
3 tablespoons unsalted butter
2 medium yellow onions, chopped
3 cloves garlic, peeled and smashed
6 cups low-sodium chicken broth
Salt
Freshly ground black pepper
2 tablespoons freshly squeezed lemon juice, from one lemon
½ cup shredded Parmigiano-Reggiano
Handful fresh herbs, such as thyme, dill or basil (optional, for garnish)

Steps:

  • Melt the butter in a large pot over medium heat. Add the onions and garlic and cook, stirring frequently, until soft and translucent, about 8 minutes. Do not brown; reduce the heat if necessary.
  • In the meantime, cut the tips off of one bunch of the asparagus and set aside (you'll use those for a garnish). Cut the remaining spears and the other bunch of asparagus into ½-inch pieces.
  • Add the chopped asparagus to the pot (minus the reserved tips), along with the chicken broth, 1 teaspoon salt and ¼ teaspoon pepper. Bring to a boil, then cover and turn the heat down to low. Simmer for about 30 minutes, or until the vegetables are very tender.
  • Meanwhile, bring a small pot of salted water to a boil. Cook the reserved asparagus tips for a few minutes, or until tender-crisp. Drain the tips and then place them in a bowl of ice water to "shock" them -- this stops the cooking process and preserves their bright green color. Once the tips are cool, drain them and set aside.
  • Purée the soup with an immersion blender until completely smooth. (Alternatively, use a standard blender to purée the soup in batches, then return the soup to the pot.) Bring the soup back to a simmer and stir in the lemon juice and Parmigiano-Reggiano. Taste and adjust seasoning, if necessary. To thicken the soup, allow it to simmer, uncovered, until the desired consistency is reached.
  • Ladle the soup into bowls, then top each bowl with asparagus tips, Parmigiano-Reggiano, herbs (if using), and freshly ground black pepper.
  • Freezer-Friendly Instructions: You can freeze the soup for up to 3 months. Defrost the soup in the refrigerator for 12 hours and then reheat it on the stovetop over medium heat until hot. (The soup will freeze best if you add the cheese when reheating.)

1/2 cup chopped celery
1/4 cup butter
2 tablespoons cornstarch
1 cup water
2 chicken bouillon cubes

1/4 to 1/2 teaspoon grated lemon zest
1/8 teaspoon ground nutmeg
Dash seasoned salt

Steps:

  • In a 2-qt. saucepan, saute the onion and celery in butter until tender. Combine cornstarch and water; stir into the saucepan with bouillon. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. , Add asparagus. Reduce heat; cover and simmer until asparagus is crisp-tender, about 3-4 minutes. , Stir in the milk, lemon zest, nutmeg and seasoned salt. Cover and simmer for 25 minutes, stirring occasionally.

  • Bring to boil over med heat; cook and stir 2 minute.
  • Add asparagus and reduce heat.
  • Simmer, covered, until asparagus is crisp-tender, approx 3-4 minute.
  • Add milk and spices.
  • Cover and simmer 25 min, stirring occasionally.

1/2 onion, chopped, (about 1/2 cup)
1 clove garlic, crushed
Salt and freshly ground black pepper
2 pounds asparagus, ends trimmed and cut into 1-inch pieces
6 cups chicken stock
1 pint sour cream, room temperature
2 teaspoons Hungarian hot paprika, for garnish

Steps:

  • Melt butter in a large saucepan over medium-high heat. Add onion and garlic, and saute 5 minutes. Season with salt and pepper. Add asparagus and saute another 4 minutes. Add the chicken stock and bring to a boil. Reduce to simmer and cook for 30 minutes, until asparagus is very tender. *Carefully transfer to a blender and puree until smooth. Return to saucepan, stir in sour cream and season with salt and pepper, to taste. Transfer to serving bowls. Dust with paprika and serve.
  • *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

3 shallots, peeled and sliced
2 bunches asparagus
1 tablespoon tarragon leaf, chopped
kosher salt
fresh black pepper, cracked
4 ounces white wine
3 cups vegetable stock
1/2 cup heavy whipping cream
1 lemon (half of it zested to use in cream)

Steps:

  • Heat a heavy-based saucepan over medium-high heat, add olive oil and sauté shallots until transparent.
  • Add asparagus (be sure to cut off bottom portion that is hard and stalky) and tarragon leaves (reserve stems for later use) and cook briefly. Season with salt and pepper.
  • Deglaze pan with white wine and simmer until reduced by half. Add vegetable stock and continue to cook until asparagus is completely soft. Puree tarragon stems in a blender until completely smooth. Pour through a fine strainer and recheck seasoning.
  • Whip cream until firm. Gently fold in lemon zest, 1 teaspoon lemon juice and chopped tarragon stems.
  • Pour soup into 4 warm bowls and top with a dollop of cream.

½ (16 ounce) package spaghetti
2 tablespoons olive oil, divided
4 (5 ounce) skinless, boneless chicken breast halves
¼ cup basil pesto, or to taste
1 bunch asparagus, cut into 2-inch pieces
4 cloves garlic, chopped
1 teaspoon red pepper flakes
½ medium lemon, juiced
1 cup shredded Parmesan cheese
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain, reserving some pasta water.
  • While spaghetti is cooking, heat 1 tablespoon oil in a nonstick skillet over medium-high heat. Add chicken and cook until browned, about 5 minutes. 1/4 cup olive oil
4 teaspoons grated lemon zest
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 425°. Place asparagus in a greased 15x10x1-in. baking pan. Mix remaining ingredients; drizzle over asparagus. Toss to coat. Roast until crisp-tender, 8-12 minutes.

1 cup sliced shallot
2 lbs asparagus, trimmed, cut into 2 inch lengths
2 teaspoons ground coriander
28 ounces vegetable broth
1/4 cup creme fraiche or 1/4 cup sour cream
1/2 teaspoon fresh lemon juice
1/4 teaspoon finley grated lemon peel

Steps:

  • Melt butter in heavy large saucepan over medium heat.
  • Add shallots; saute until soft, about 5 minutes.
  • Add asparagus and corander; stir 1 minute.
  • Add broth; simmer until asparagus is tender, about 5 minutes.
  • Cool slightly.
  • Either work in batches and puree soup in blender or use and immersion blender in same pot.
  • Season to taste with salt and pepper.
  • Stir creme fraiche, lemon juice and lemon peel in small bowl.
  • Ladle soup into bowls, top with dollop of lemon creme fraiche.

2 tablespoons olive oil
1 onion, peeled and roughly chopped
3 boneless chicken breasts, cup into pieces
7 1/2 cups chicken stock
1 lemon, juice and zest of
1 teaspoon thyme
1 1/2 lbs fresh asparagus, trimmed
1/4 cup fresh basil leaf, torn in pieces
1 egg yolk
1 1/4 cups light cream

Steps:

  • Heat the oil in a large saucepan. Add the onion and fry very gently until transparent, about 5 minutes.
  • Add the chicken pieces to the pan and cook over a fairly high heat for 2-3 minutes, stirring all the time.
  • Add the chicken stock, lemon zest ONLY (juice will be added later) and thyme to the pan and simmer for 10 minutes.
  • Meanwhile, blanch the asparagus in boiling water for 1-2 minutes. Remove and plunge into ice water. (Save some of the small tips for garnish if you wish).
  • Add the asparagus and the basil leaves to the pan, cover and simmer 30 minutes until the asparagus is well cooked.
  • Allow the mixture to cool about 15 minutes, then process in a blender or food processor until very smooth. Poor back into the pan.
  • Beat the egg yolk with a little of the cream, strain into a small bowl, add a little of the soup and mix thoroughly. Add to the soup with the lemon juice and the rest of the cream. Allow to warm through gently, being careful not to let it boil.
  • Serve the soup garnished with a few of the reserved asparagus tips and a sprig of fresh basil.

I have always been a fan of the ubiquitous potato and leek soup. I thought I would try expanding on that idea a little, and adding in some greens. This soup is just delicious. When I think about grilling asparagus, I always serve it with a generous squeeze of lemon juice. Why should this soup be any different? I started making this soup without all the lemon, and found that it just didn't have that extra pop. The lemon juice turned this soup from "so-so" to sublime. Don't be afraid to make this soup really, really lemony. "She is a friendly tart". You won't be sorry. YUMMO!

3 tablespoons of cold pressed extra virgin olive oil
2 large organic leeks (washed thoroughly and thinly sliced)
5 large organic red skinned potatoes (scrubbed and not peeled and rustically chopped.)
750 g organic asparagus (trimmed and chopped.)
8 cups vegetable broth
1 -2 teaspoon celtic sea salt
2 lemons, juice of (to taste)
nutmeg, to serve

Steps:

  • Sautee the leeks in oil until soft and translucent.
  • Add the potatoes and the stock, and simmer until the potato is tender, and cooked through.
  • Add in the asparagus, and just blanch for only a couple of minutes until just tender. Be careful not to over cook them.
  • We want to preserve the vibrant green colour, and nutritional value. Allow the soup to cool slightly.
  • Then blend thoroughly, until smooth and creamy, Return to the stove, and reheat.
  • Season with Celtic sea salt, and then pour in the fresh lemon juice gradually - tasting periodically until you achieve your perfect blend.
  • The soup is best if it is really lemony. It has a tangy zing and tastes alive and really heightens the natural flavour of the asparagus.
  • Season with nutmeg and serve with an extra lemon wedge. YUM!
