Whenever I go to a party, everyone requests that I bring this Mediterranean dip. If you enjoy hummus and veggies, you will like this dip! Serve with homemade pita chips or tortilla chips.

1 (8 ounce) package cream cheese, softened
3 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon Italian seasoning
1 ¼ cups hummus
1 cup chopped, seeded Roma tomatoes
1 cup chopped cucumbers
½ cup kalamata olives, sliced
⅓ cup chopped red onion
½ cup crumbled feta cheese

Steps:

  • Mix cream cheese, garlic, lemon juice, and Italian seasoning together. Spread mixture onto the bottom of a round 10-inch dish. Spread hummus on top.
  • Mix tomatoes, cucumbers, olives, and red onion together in a bowl; spread over the hummus. Sprinkle feta cheese on top. Refrigerate for at least 1 hour.

This is such a wonderfully healthy eggplant dip recipe. It combines the flavors of the Mediterranean, including eggplant, garlic, tomato, lemon juice and olive oil. It's a very healthy appetizer or snack recipe.

1 eggplant (large )
1 clove garlic (large, minced)
1 tomato (large, peeled & chopped)
1 stalk celery (finely chopped)
1/4 cup green pepper (or red, finely chopped)
3 green onions (finely chopped)
1 tablespoon lemon juice
2 teaspoons vegetable oil ( or olive oil)
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper

Steps:

  • Preheat the oven to 400ºF (200ºC).
  • Poke the eggplant in several places with fork. Place it on a baking sheet and bake in the preheated oven for 45 minutes or until soft, turning once or twice during baking. Let the eggplant cool, then peel it and chop finely.
  • Meanwhile, saute the garlic, celery, green pepper and tomatoes in a bit of oil for 4 or 5 minutes or until they soften. Add the chopped green onions in the last minute of cooking.
  • In a mixing bowl, combine the eggplant, onions, garlic, tomato, celery and green pepper and toss to mix them all together. Add the lemon juice, oil, salt and pepper. Stir to mix well. Cover and refrigerate the dip for at least 1 hour before serving for the flavors to meld.

Kosher salt
2 cups Greek yogurt
3/4 cup walnuts (finely chopped)
1 garlic cloves (minced (more to your liking))
1 tablespoon freshly squeezed lemon juice (more to taste)
½ cup chopped parsley
1 teaspoon dry mint
Black pepper
extra virgin olive oil

Homemade pita chips

Steps:

  • Blanch the Spinach. Bring a pot of salted water to a boil. Prepare a bowl of iced water and keep it near. Add the spinach to the boiling water and cook for 10 seconds. Using a pair of tongs, transfer the spinach to the iced water and allow it to cool for a couple of minutes. Drain well and wring out any excess water.
  • In a mixing bowl, combine the blanched spinach, yogurt, walnuts, garlic, lemon juice, parsley, and mint. Add a good dash of kosher salt and black pepper. Add a generous drizzle of extra virgin olive oil (about 2 tablespoons). Mix to combine. Taste and adjust seasoning.
  • Serve with your favorite veggies and homemade pita chips.

This is a Trader Joe recipe. It is such a delicious dip! I took it to a party and everyone wanted a copy of the recipe. The recipe suggests layering the ingredients into a pie plate or something sized similar. I made the mistake of thinking that was too big for the dip and used a smaller serving dish. By the time I was finished layering the ingredients, it was too full! I served this dip with pita crackers from Trader Joes, but you could use your own favorite dippers. This recipe looks unusual but it is knock out.

1/2 cup sour cream
8 ounces garlic hummus
1/2 cup kalamata olive, sliced
1 cup feta, crumbled
6 ounces marinated artichoke hearts, drained and chopped (but RESERVE the liquid)
1/2 cup green onion, sliced
3/4 cup carrot, shredded
pita chips, 1-2 boxes

Steps:

  • In a medium bowl, combine sour cream and hummus; mix well.
  • Spread into a pie plate or servewear of similar size.
  • Sprinkle olives, feta, artichoke hearts, green onions and carrot - adding each as a layer.
  • Drizzle with reserved artichoke marinade.

2 medium eggplants, cut into thick rounds
Kosher salt
1/2 - 3/4 cup olive oil
1 red bell pepper, finely chopped
1 medium yellow onion, finely chopped
1 tablespoon ground coriander
1 teaspoon sweet paprika
1/4 cup red wine vinegar
1/2 cup chopped parsley
Half of lemon, juiced

Steps:

  • Sprinkle eggplant slices generously with Kosher salt. Let stand for 30 minutes and then blot with paper towel to remove moisture on surface.
  • Heat a large nonstick skillet over medium-high heat and pour in about 2-3 tablespoons of oil. Working in batches as necessary, cook eggplant slices in a single layer until almost black on each side, about 3-5 minutes per side. Add more oil as needed. Remove cooked eggplant to a plate.
  • Once eggplant is all cooked, lower heat to medium and add 2 tablespoons olive oil. Add red pepper, onion, coriander, and paprika to skillet. Cook, stirring occasionally, until vegetables are soft, about 8-10 minutes. Add eggplant and vinegar to skillet, breaking eggplant and mashing it coarsely with a wooden spoon until well combined. Cook until vinegar has evaporated, about 8-10 minutes.
  • Remove from heat and stir in parsley and lemon juice. Serve warm or at room temperature over hummus with pita*. Can be made ahead of time, refrigerated, and reheated as needed.
