SWEET ONION TARTLETS
Steps:
- Preheat oven to 325 degrees F.
- Melt butter in a large frying pan over medium heat. Add onions and cook until golden brown. Set aside to cool. Unroll pie dough 1 at a time. Use a 2 1/2-inch round cutter and cut as many rounds as possible (about 14 to 16), reserving scraps repeat with second pie dough. Gather together scrap dough and cut out as many rounds as needed to make 24 in total. Fit dough rounds into cups of mini muffin pan. Place in the oven and bake for 10 to 12 minutes. Remove and set aside. In a small bowl, whisk together the egg, half-and-half, golden onion soup mix, and fines herbs. Set aside. Divide onions among tartlet shells, about 1/2 teaspoon each. Stir the egg mixture and fill tartlets to cover the onions. Top each with 1/2 teaspoon of cheese. Bake for 45 to 50 minutes.
ONION AND GOAT CHEESE TARTLETS
Steps:
- Preheat oven to 375 degrees F.
- Take a 2 1/2-inch round cookie cutter and cut out 12 rounds from 2 sheets of puff pastry. Take a 12 hole mini muffin pan and place rounds of dough into each hole, pressing gently to form a cup and giving room for the filling. Cover with plastic wrap and keep the prepared pan in the refrigerator or freezer (depends how long until you need it).
- In a skillet add butter and oil. Throw in the onions and cook gently until softened and caramelized, stirring frequently for about 15 to 20 minutes. Once cooked add the scallions and chives. Set aside to cool slightly.
- In a bowl whisk together the egg, cream, and salt. Add the cooked onions to the custard, stirring thoroughly. Pour into the prepared pastry cups with a spoon. Break up the goat cheese and place on top of tarts. Bake for 20 to 25 minutes. Serve.

- Put oven rack in middle position and preheat oven to 375°F.
- Cook onion, butter, water, salt, and pepper, covered, in a 10-inch heavy skillet over moderately low heat, 10 minutes. Remove lid and cook, stirring frequently, until onion is deep golden brown and very tender, about 25 minutes.

- Stir together crème fraîche and chives and divide among shells, then top with caramelized onions.

- Preheat the oven to 375 degrees F (190 degrees C).
- Heat butter in a skillet over medium heat and stir in onion. Pour in red wine to cover the bottom of the pan and sprinkle with sugar. Cook and stir until onions are tender and translucent, 10 to 15 minutes.
- Combine heavy cream, mozzarella cheese, cayenne pepper, salt, and black pepper in a bowl. Stir into onion mixture.

MINI FRENCH ONION TARTS
This is a French appetizer called Petits Pissaladieres, it is easy to make and has extreme flavor, if you or your guests are not an anchovy lovers, then I advise you not to make this. The onion mixture can made a day in advance, cover and chill. Reheat over medium heat, stirring about 10 minutes until heated through...or also the puff pastry squares can be baked a day in advance, cooled completely and kept in an airtight container at room temperature, just reheat in a 350°F oven for 6 minutes before topping. These squares are absolutely wonderful, I have served them many times in the past, trust me, they are worth the time to make! This recipe will make about 35-36 mini tartlets, if you are serving a large group of people then I strongly suggest to double the recipe, as people will be eating three, four or more at a time, they are THAT good! Cooking time is for both pastry and onion topping.

- Set oven to 400°F.
- Roll out puff pastry on a lightly floured surface into an about 12-1/2-inch square.
- Trim edges to form an exact 12-inch square.
- Prick sheet all over with a fork.
- Cut into 36 (2-inch) squares, and transfer to two buttered large baking sheets (arranging about 2-inches apart).
- Bake two at a time if you have a convection oven, if not bake one at a time for 12-15 minutes, or until puffed and golden brown.
- Transfer the baked squares to a rack and cool until just warm .
- Heat oil in a skillet over medium heat until hot but not smoking.
- Cook onion with salt and pepper, stirring occasionally until golden brown (about 15-20 minutes).
- Stir in anchovies (you can add in more anchovies if you desired) and pinch dried thyme; stir to combine; remove from heat, cover with foil to keep warm (if you are making this a day in advance, cover and refrigerate).
- Lightly brush tops of pastry with olive oil.
- Make a small indentation in the center of each square with you larger finger.
- Top each hole with about 1 teaspoon onion mixture and then a few olive slivers.
- Serve on a platter.

Steps:
- Place cream cheese and 2 tablespoons butter in mixer bowl.
- Attach bowl and flat beater to mixer.
- Turn to Speed 4 and beat about 1 minute.
- Stop and scrape bowl.
- Add 3/4 cup flour.
- Turn to Speed 2 and mix about 1 minute, or until well blended.
- Form mixture into ball.
- Wrap in waxed paper and chill 1 hour.
- Divide chilled dough into 24 pieces.
- Press each piece into greased miniature muffin cup.
- Meanwhile, melt remaining 1 tablespoon butter in 10" skillet over medium heat.
- Add mushrooms and onions.
- Cook and stir til tender.
- Remove from heat and cool slightly.
- Place egg, remaining 1 tablespoon flour and thyme in clean mixer bowl.
- Using the flat beater, turn to Speed 6 and beat about 30 seconds.
- Stir in cheese and cooled mushroom mixture.
- Spoon into pastry-lined muffin cups.
- Bake at 375* for 15-20 minutes, or until egg mixture is puffed and golden brown.
- Serve warm.

- Preheat oven to 375°.
- On a lightly floured surface, roll out pastry into a 10 x 10-inch square. Cut into squares by cutting five strips across and four strips down (should yield 20 squares).
- Press each puff pastry square into miniature muffin cups.
- Evenly spoon the goat's cheese into the tart dough cups.
- Melt butter in a medium skillet over medium-high heat. Add mushrooms and cook for 7 minutes.
- Add the onions, and cook an additional 2 minutes.
- Remove from heat and cool slightly.
- In a medium bowl, whip together the egg, thyme and salt.
- Stir in the cooled mushroom mixture.
- Evenly place the mushroom mixture over the goat's cheese.
- Top with the Parmesan cheese.

BALSAMIC ONION TARTLETS
I recently acquired a copy of Martha Stewart's Hor D'Oeuvres Handbook and became taken with her flair for small bites with beautiful presentation. The onion relish here was inspired by Dancer's Chicken with Balsamic Onions. You can prepare the onions a day or so ahead of time and finish the tarts just before serving. I tend to offer a lot of variety so I keep the batches of each hors d'oeuvre small, but this can be easily doubled. Don't let the preparation time scare you, its mostly simmering time that frees you to attend to other things. These tarts are just wonderful served along with a zesty red wine.

- Under medium to low heat, place olive oil and onions in a skillet and cook for 3 or 4 minutes so that onions begin to soften but not brown.
- Add 1/3 cup of chicken broth to the onions and continue to cook until the liquid evaporates. This should take about 8 to 10 minutes.
- Add thyme and another 1/3 cup of broth, and cook until the liquid evaporates.
- Add the balsamic vinegar and the remaining broth, cooking until liquid evaporates. The final simmer takes about 12-15 minutes.
- The results will be soft and tender onions with a tart sauce that is slightly syrupy but not at all loose.
- To fill the Phyllo cups you can either use a pastry bag with a star tip or a teaspoon. If you are using cream cheese, allow it to soften a bit and mix with a tablesoon of milk.) Place a small amount of the yogurt or cream cheese in the shell filling about 1/3 to 1/2 way to the top. Top each with a spoonful of the onions.
- Bake the tartlets in a pre-heated 350 degree oven for 8 to 10 minutes.
- To garnish, you can pipe little rosettes of yogurt or cream cheese on top and sprinkle with a few fresh thyme leaves.

- In a large skillet, melt 2 tablespoons butter over medium heat. Add onions and sugar. Cook over medium heat for 15-20 minutes or until the onions are golden brown, stirring frequently.
