Use this marinade when grilling steaks -- bone-in rib eye, skirt, flank, and hanger are four of our favorites.

Yield Makes 3/4 cup

Number Of Ingredients 4

1/4 cup soy sauce
1/4 cup extra-virgin olive oil
4 garlic cloves, minced
1/4 cup fresh lemon juice

Steps:

  • Whisk together soy sauce, olive oil, garlic cloves, and lemon juice.
  • Place steak in a nonreactive dish, and pour marinade over top. Cover, and refrigerate for at least 4 hours (or overnight). Before grilling, remove from marinade, and pat off excess with a paper towel.

Tender albacore sashimi brushed with a delicious sauce, this Garlic Soy Marinated Albacore is sure to make an impressive appetizer for a dinner party. Top it off with thinly sliced scallion and grated ginger.

7 oz sashimi-grade albacore tuna
2 cloves garlic
1 scallion
1 knob ginger ((1 inch, 2.5 cm))
1 Tbsp roasted sesame oil
4 Tbsp soy sauce
1 Tbsp yuzu-flavored tobiko (flying fish roe)

Steps:

  • Gather all the ingredients.
  • Slice the garlic and scallion.
  • Grate the ginger.
  • In a small saucepan, heat the sesame oil over medium heat and add the garlic slices when the oil is hot.
  • Cook the garlic until fragrant and add soy sauce.
  • Bring the sauce to boil and lower the heat to simmer for 15-20 seconds. Remove from the heat.
  • Cut the albacore tuna into about ¼ inch (6 mm) slices.
  • Plate the tuna on a serving plate and brush the garlic sauce. Top with scallion and ginger and garnish with tobiko. Serve immediately.

3 tablespoons soy sauce
5 cloves garlic, minced
1 tablespoon ketchup
1 tablespoon vegetable oil
2 teaspoons honey
2 teaspoons white wine vinegar
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried oregano
2 to 3 green onions, finely chopped

Steps:

  • Gather the ingredients.
  • Combine vegetable oil with soy sauce, ketchup, and honey using a wire whisk.
  • Add the garlic, white wine vinegar, salt, black pepper, oregano, and chopped green onions, and mix thoroughly.
  • Let marinade stand for 10 minutes to give the flavors in the mixture some time to bloom.
  • Store marinade in an airtight container in the refrigerator for up to five days.
  • To use: Marinate red meats for 4 to 12 hours, poultry for 2 to 6 hours, seafood and vegetables for up to 1 hour.

Grilled or Pan-Cooked Albacore With Soy/Mirin Marinade image

If you're concerned about which fish are environmentally safe to eat, you can't do better than consulting the Web sites of the Monterey Bay Aquarium or the Environmental Defense Fund for their handy pocket guides for buying seafood (or choosing it in a restaurant). You won't break the bank buying fresh fish, but there can be a better selection of moderately priced varieties in the freezer department. Among my findings were albacore steaks, one of the few types of tuna that we can still enjoy with a clear conscience, and a great fish if you're trying to eat more omega-3s. This is a sweet/savory marinade that I also use for tofu. If you are concerned about the quantity of soy sauce, know that most of it stays behind in the bowl when you cook the fish. If you are using frozen albacore steaks, wait until they are partly thawed before marinating.

1/4 cup low-sodium soy sauce
2 tablespoons mirin (sweet Japanese rice wine)
1 tablespoon seasoned rice vinegar
1 tablespoon minced or grated fresh ginger
1 teaspoon sugar
1 tablespoon plus 1 teaspoon dark sesame oil
1 1/2 pounds albacore steaks

Steps:

  • Combine the soy sauce, mirin, vinegar, ginger and sugar in a bowl and whisk together well. Whisk in the sesame oil.
  • Place the albacore steaks in a large bowl or baking dish and toss with the marinade. Cover the bowl, or transfer the fish and marinade to a large zip-top bag and refrigerate for 1 to 2 hours, or longer.
  • Prepare a hot grill, or heat a heavy cast-iron or nonstick skillet over medium-high heat. Remove the fish from the marinade. Cook the steaks for 2 to 4 minutes on each side, depending on how well done you like the fish to be. Serve hot.

¼ cup orange juice
¼ cup soy sauce
2 tablespoons olive oil
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
1 clove garlic, minced
½ teaspoon chopped fresh oregano
½ teaspoon ground black pepper
4 (4 ounce) tuna steaks

Steps:

  • In a large non-reactive dish, mix together the orange juice, soy sauce, olive oil, lemon juice, parsley, garlic, oregano, and pepper. Place the tuna steaks in the marinade and turn to coat. Cover, and refrigerate for at least 30 minutes.
  • Preheat grill for high heat.
  • Lightly oil grill grate. Cook the tuna steaks for 5 to 6 minutes, then turn and baste with the marinade. Cook for an additional 5 minutes, or to desired doneness. Discard any remaining marinade.

Seared Ahi Marinade image

I wanted a recipe that was similar to the ones I have had a restaurant in the past. I searched the site and found some good sauces for seared ahi- but just not what I was looking for. I found one a lot like I was looking for at Simple Recipes- I tweeked it a bit and I'm posting it here for safe keeping because it was so yummy!! Mind you- it was fresh, wild caught ahi- which can make a difference. I'll let you know how it goes with frozen fish, should I break down and try it (but with two avid ocean fisherman in the neighborhood hood, it will be a desperate move!)

2 (6 -8 ounce) ahi tuna steaks (3/4 of an inch thick)
2 tablespoons dark sesame oil
2 tablespoons soy sauce
1 tablespoon grated fresh ginger
1 garlic clove, minced
1 green onion, thinly sliced (a few slices reserved for garnish)
1/2-1 teaspoon lime juice (optional)
2 tablespoons sesame seeds, toasted
fresh cracked pepper

Steps:

  • Mix the sesame oil, soy sauce, ginger, garlic, green onion and lime juice in a non metal bowl. Add ahi and coat , cover tightly, and refrigerate for about an hour.
  • Toast the sesame seeds in a pan until light brown (I prefer a blend of white and black sesame seeds- the black ones are hard to find, try an asian market). Remove seeds and allow to cool on a flat plate (you will use this plate to dredge the tuna in)- add cracked pepper.
  • Add olive oil to a skillet and allow it to get HOT.
  • Dredge the ahi in the sesame seeds and pepper to coat and add to the hot pan.
  • Cook only two or three minutes on each side so that the ahi is seared on the outside and rare on the inside.
  • Serve with white rice and green beans that have been either roasted or cooked and drizzled with sesame oil. Sprinkle any extra sesame seeds over the top.
  • garnish with remaining green onion and ENJOY!
