Gulab jamun is a beloved Indian dessert consisting of fried balls of a dough made from milk solids and semolina, soaked with an aromatic syrup spiced with green cardamom, rose water, saffron, and more. Paying close attention to the ingredients and temperatures involved yields sweet, light gulab jamuns with moist interiors.

For the Syrup:
2 cups (480ml) water
14 ounces (2 cups; 400g) sugar
1 tablespoon (15ml) lemon juice
1 pinch (15 strands) saffron
4 green cardamom pods, crushed
2 whole cloves
1 teaspoon (5ml) rose water
For the Jamuns:
1.4 ounces (1/4 cup; 40g) fine semolina flour (see note)
1/4 cup (60ml) milk
5.3 ounces (2 cups; 150g) non-fat dried milk powder (see note)
1 teaspoon baking powder
1/2 teaspoon ground green cardamom
1/8 teaspoon Diamond Crystal kosher salt; if using table salt, use half as much by volume
6 tablespoons (90ml) heavy cream, divided plus more as needed
3 cups (720ml) grapeseed oil, for frying (see note)
3 tablespoons (25g) chopped pistachios or cashews, for garnish (optional)

Steps:

  • For the Jamuns: In a small bowl, stir together semolina and milk, and set aside for 30 minutes to allow semolina to soak. Line a rimmed baking sheet with parchment paper. In a large bowl, whisk together milk powder, baking powder, cardamom, and salt. Sift mixture twice through a fine-mesh strainer onto prepared baking sheet, using clean hands or a bowl scraper to break up any lumps or bits that might be left behind in the strainer basket.

500 gram(s) semolina
250 gram(s) powdered sugar
50 gram(s) cashews
50 gram(s) raisins (optional)
2 cup(s) ghee (clarified butter)
5 - 6 - crushed cardamoms
1 - 2 - dried ginger
1 pinch(es) salt

Steps:

  • Over a medium fire, heat a wok or a large pan. Toast semolina (without adding oil),until it is lightly brown and set a side.
  • Heat a pan over a medium fire, fry cashews (and raisins - optional) until golden brown and set aside. P.S. Use ghee to fry them (enhances taste)
  • Heat a pan over a slow fire, warm the ghee until it melts and set aside.
  • Pound together crushed cardamoms and dry ginger.
  • Add powdered sugar, pounded cardamoms and dry ginger, cashews (and raisins) into semolina and mix well.
  • Now pour warm melted ghee over the mixture and start to mold the mixture into small / medium sized balls (according to your preference). P.S. when the ghee starts to cool off, re-heat it.
