2 tablespoons vegetable oil
3 medium onions, sliced
1/2 cup water

Steps:

  • Sprinkle pork chops with creole seasoning.
  • Dredge pork chops in flour, shaking off excess.
  • Cook pork chops in hot vegetable oil in a large skillet over med-high heat 1-2 minutes on each side or until golden brown.
  • Remove from skillet and keep warm.
  • Add in onions and water, stirring to loosen particles from the bottom of the skillet; saute 10 minutes or until golden brown.
  • Return pork chops to skillet; lower heat to low; cover and simmer 5 minutes.

I made this up one day because I was wanting something different then the same old pan-fried pork chops (that is how my husband asked me to cook them that day). So I made this up real fast, and boy did he love them. Now he asks for them every time. I do this with boneless and bone-in pork chops. So it doesn't matter what kind you have on hand, just cook them up and enjoy.

1 (1 ounce) envelope dry onion soup mix
2 pork chops
¼ cup all-purpose flour
1 cup olive oil for frying

Steps:

  • Before opening the onion soup mix, use your hands to crush the larger bits of onion in the packet. Open the packet, and pour the mix into a shallow bowl. Stir in the flour.
  • Heat the oil in a heavy skillet over medium heat. The oil is hot enough when a pinch of the flour mixture sizzles when tossed into the oil. Coat pork chops in the onion soup mixture, and shake off the excess. Carefully place in the hot oil. Turn chops over after about 30 seconds to quickly sear both sides. Cook for about 4 minutes per side, or to desired degree of doneness.

I have been searching for years for a foolproof method of cooking pork chops and finally found it. These are wonderfully moist and very tasty. This is a Bon Appetit recipe and I found it on the Epicurious web site.

  • Mix flour, cornstarch and garlic salt.
  • Sprinkle pork chops with salt and pepper.

I thought it was time to revisit on old-fashioned cooking method: Pan Frying. Is it time to bring it back? Go into any of the wonderful family-style restaurants in the South and order a pan-fried pork chop, and you are served a thing of beauty. For some reason, this no-fuss, easy method has fallen out of favor with home cooks (maybe because most recipes are so vague..."Season pork chop, cook in frying oil until done".) Follow my instructions and you will yield a beautifully browned, moist chop...serve with Macaroni & Cheese and some greens, and you will have a fast, old-fashioned weeknight supper.:)

1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper (ground red pepper)
1 cup unbleached all-purpose flour
4 bone-in-rib pork chops (chops between 3/4 and 1 inch are best for this recipe) or 4 center-cut pork chops, about 3/4-inch thick (chops between 3/4 and 1 inch are best for this recipe)
3 slices bacon, chopped
1/2 cup vegetable oil

Steps:

  • Combine the garlic powder, paprika, salt, pepper, and cayenne in a bowl. Place the flour in a shallow dish. Pat the chops dry with paper towels. Cut 2 slits about 2 inches apart through the fat on the edges of each chop (Since pork chops have a tendency to curl when cooked at high heat, cutting the slits will prevent this from happening). Season both sides of the chops with the spice mixture, then dredge the chops lightly in the flour (do NOT discard the flour). Transfer to a plate and let rest for 10 minutes.
  • Meanwhile, cook the chopped bacon in a large nonstick skillet over medium heat until the fat renders and the bacon is crisp, about 8 minutes. using a slotted spoon, transfer the bacon to a paper towel-lined plate and reserve for another use. (if having baked potatoes with the pork chops, serve with sour cream, chopped chives, and sprinkle on the cooked, chopped bacon -- YUM!) Do NOT wipe out the pan!
  • Add the oil to the fat in the pan and heat over medium-high heat until just smoking. Return the chops to the flour dish and turn to coat. Cook the chops until well browned, 3 to 4 minutes per side.
  • Serve and enjoy!

7 pieces or 8 pieces breakfast chops (very thin bone-in pork chops)
1 c. all-purpose flour
1 tsp. seasoned salt
1 tsp. black pepper
Cayenne pepper, to taste
1/2 c. canola oil
1 tbsp. butter
Extra salt and pepper, to taste

Steps:

  • Rinse pork chops. (Yes, I rinse my pork chops. Please don't be hatin'.) Salt and pepper both sides of the pork chops.
  • Combine all dry ingredients. Dredge each side of the pork chops in the flour mixture, then set aside on a plate.
  • Heat canola oil over medium to medium-high heat. Add butter. When butter is melted and butter/oil mixture is hot, cook 3 pork chops at a time, 2 to 3 minutes on the first side; 1 to 2 minutes on the other side. (Make sure no pink juices remain.) Remove to a plate and repeat with remaining pork chops. Delicious and simple! Serve with smashed new potatoes.

9 pork chops
2 cups all-purpose flour
1 cup vegetable oil
1 large onion, chopped
3 to 4 cloves garlic, chopped
1/4 cup of water
2 bunches collards
3 smoked ham hocks
2 tablespoons vegetable shortening
Salt and red pepper, to taste
1 cup cornmeal
1/4 cup vegetable shortening, melted
1 cup all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup evaporated milk
1 egg, beaten

Steps:

  • Wash the pork chops, pat dry and season with salt and pepper to taste. In a large skillet, heat the oil. Flour the pork chops and sear in the oil. Cook for about 1 minute per side to brown. Remove the pork chops from the skillet and place the cooked pork chops on a paper bag to absorb the excess oil. Put the chops back in the skillet and add the chopped onion and 3 to 4 cloves of chopped garlic to pot with 1/4 cup of water. Put a lid on the pot and steam the chops for approximately 20 minutes.
  • For the collard greens: Remove the stems, cut up and wash the collard greens. Then par boil the ham hocks in water for about 5 to 10 minutes. Drain the ham hocks. In a large pot, heat the shortening. Saute ham hocks, then add greens, on low fire with pot covered. Allow greens to cook for about 1 1/2 hours over low heat. Season with salt and pepper, to taste.
  • For the cornbread: Mix all ingredients and put in a greased pan. Bake in a preheated 400 degree oven for 30 to 40 minutes, or until a tester comes out clean.
  • Serve the pork chops with some collard greens and cornbread.

2 sleeves buttery round crackers (such as Ritz®), crushed
6 (5 ounce) boneless pork chops, about 1 inch thick
1 cup vegetable oil for frying, or as needed

Steps:

  • Place eggs in one bowl and crushed crackers in another bowl. Dip pork chops, one at a time, into the eggs, then roll in the crackers until well coated. Place on a plate.
  • Put 1/4 inch of oil in a large frying pan. Turn heat to medium-high and let oil get hot. Toss a few cracker crumbs into the pan; if they start to sizzle the pan temperature is just right.

Italian seasoning

1 tbsp olive oil (for searing)

Steps:

  • Pat chops dry with the paper towel and sprinkle them very generously with Italian seasoning, salt and pepper.
  • Heat your skillet (I recommend cast iron one) to medium high and add the olive oil. When it's shimmering hot and not a moment before, add your chops.
  • Sear on one side, without moving them at all, until they are nice and golden brown on the first side, about 3-5 minutes. Flip and sear the other side until browned.
  • The easiest way to check if the pork chop is done is to use meat thermometer. When they reach an internal temperature of 135 F degrees they are done.
  • Remove them from the skillet and let them rest on a plate for 10 minutes, during which time they will continue cooking with the residual heat and will eventually reach 145 F degrees.
  • Do remember that cooking time can vary based on the thickness of the pork chops.
