1/4 cup rice vinegar
1 green onion, minced
2 tablespoons reduced-sodium soy sauce
1 tablespoon toasted sesame seeds
1 tablespoon sesame oil
1 tablespoon honey
1 teaspoon minced fresh gingerroot
1 package (8.8 ounces) ready-to-serve brown rice
4 cups coleslaw mix (about 9 ounces)
2 cups shredded rotisserie chicken, chilled
2 cups frozen shelled edamame, thawed

Steps:

  • For dressing, whisk together first 7 ingredients. Cook rice according to package directions. Divide among 4 bowls., In a large bowl, toss coleslaw mix and chicken with half of the dressing. Serve edamame and slaw mixture over rice; drizzle with remaining dressing.

3 tablespoons teriyaki sauce
2 tablespoons peanut oil (preferably roasted)
4 cups baby spinach (about 2 ounces)
8 ounces sugar snap peas, trimmed and halved
1 orange bell pepper, cut into strips
1 10-ounce container yellow and/or red cocktail tomatoes, quartered
4 scallions, thinly sliced
1/2 cup fresh basil leaves, thinly sliced
2 cups shredded rotisserie chicken (skin removed)
1/2 cup salted roasted cashews, roughly chopped
Kosher salt and freshly ground pepper
2 cups cooked brown rice (thawed if frozen)

Steps:

  • Whisk the teriyaki sauce, peanut oil and 1/4 cup water in a large bowl until smooth. Add the spinach, snap peas, bell pepper, tomatoes, scallions, basil, chicken and cashews; toss to combine and season with salt and pepper.
  • Warm the rice in the microwave. Serve topped with the chicken-vegetable salad.

1 pound boneless, skinless chicken thighs, each cut into 8 pieces
1/4 cup plus 2 tablespoons sake
2 tablespoons cornstarch
1 cup short-grain rice
1 medium yellow onion
1/4 teaspoon instant dashi (available at Asian markets or from Amazon)
3 tablespoons peanut oil
2 tablespoons mirin
3 tablespoons naturally-brewed soy sauce, such as Kikkoman or Yamasa
2 tablespoons sugar
2 scallions, light and dark green parts only

Steps:

  • Place the chicken thighs in a medium bowl. Add 2 tablespoons of the sake and the cornstarch; stir well with chopsticks or tongs to evenly coat the chicken. Cover and refrigerate while you cook your rice.
  • Rinse the rice in a fine-mesh sieve until the water runs clear. Place the rice in a medium saucepan and add 1 1/2 cups of water (or follow the ratio and cooking instructions on your rice package). Bring to a simmer over medium-high heat. Reduce the heat to low, cover and cook for 20 minutes.
  • Meanwhile, halve the onion and cut into thin slices. Add the instant dashi to 1/2 cup of hot water and stir until it dissolves.
  • Once your rice is cooked, remove from the heat and keep warm.
  • Preheat a large skillet over medium-high heat. Add the peanut oil and swirl to coat. Add the chicken in one layer and cook until browned on both sides, about 4 minutes total. Remove the chicken from the skillet and reserve on a plate.
  • Next, add the onions to the skillet, reduce the heat to medium and cook, stirring, until slightly soft, about 1 minute.
  • Add the mirin, soy sauce, sugar, dashi mixture and remaining 1/4 cup sake to the skillet. Stir and scrape the bottom of the skillet to release any browned bits.
  • Increase the heat to medium-high. Bring to a simmer and add the chicken along with any juices from the plate to the skillet; cook, stirring occasionally, until the liquid reduces to a glaze, about 3 minutes.
  • Meanwhile, thinly slice the scallions, keeping the light and dark green parts separate. Add the light green scallions to the skillet and stir.
  • Place the rice in individual serving bowls. Divide the chicken yakitori over the rice, garnish with the dark green scallions and serve.

175g Thai sticky rice (or 350g pre-cooked)
100ml rice vinegar
1 tbsp caster sugar
½ cucumber , peeled into ribbons
2 tbsp sesame oil
1 tbsp soy sauce
4 tbsp smooth peanut butter (we used a standard home brand supermarket jar)
2 boneless and skinless chicken thighs
1 small red chilli , finely sliced
2 tbsp chopped peanuts

Steps:

  • Cook the rice following pack instructions. Meanwhile, stir the vinegar, sugar and 100ml of water together until the sugar dissolves. Add the cucumber ribbons and set aside.
  • Heat the grill to medium. Mix the oil, soy, peanut butter and 100-150ml of boiling water to loosen. Divide the mixture into two, setting aside half for later. Rub the chicken with the other half, then grill for 15 mins or until cooked, turning halfway through. Thickly slice.
  • Divide the rice between two bowls, top with sliced chicken and some pickled cucumber. Spoon the remaining marinade over the rice and finish with the chilli and chopped peanuts.

Richard and I were famished last night when we finally made it home. I stared into the freezer and cupboards and this is what ended up coming out of them. I thought this was very tasty and thought I would come and share this simple dish with all of you.

2 chicken breasts (I used Sanderson's because they are not injected with nasty stuff and they are HUGE)
1 medium onion (chopped)
2 cups water
2/3 cup balsamic vinegar
salt and pepper (to taste)
2 cups cooked brown rice

Steps:

  • Cook your rice according to the package.
  • Meanwhile chop onion and cut breasts into cubes.
  • Throw everything in the pan.
  • Salt and pepper to your liking.
  • Pour water and vinegar over chicken and onions.
  • Bring to a rolling boil and let continue until the liquid has boiled down into a sauce.
  • If you play your cards right, the chicken will be done when the brown rice is which is about 40 minutes.
  • Serve up in a bowl and ENJOY!

1/2 cup teriyaki marinade
2 tablespoons sugar
1 1/2 lbs boneless skinless chicken breasts, cut crosswise into 1/2-inch thick slices
2 teaspoons cornstarch
2 tablespoons vegetable oil
hot cooked rice
steamed vegetables

Steps:

  • Combine teriyaki sauce and sugar in measuring cup, stirring until sugar dissolves.
  • Remove 3 tablespoons of mixture and set aside.
  • Pour rest of marinade over chicken in large plastic food storage bag. Press air out of bag; close top securely. Turn bag over several times to coat pieces well. Marinate 15 minutes.
  • Add enough water to remaining 3 tablespoons teriyaki sauce mixture to measure 2/3 cup; blend in cornstarch.
  • Heat oil in large skillet over medium-high heat; add chicken and saute 5 minutes or until chicken is thoroughly cooked through. Add teriyaki sauce mixture; cook, stirring, about 1 minute, or until sauce boils and thickens slightly.
  • Spoon chicken and sauce over rice in large individual serving bowls. Serve vegetables on top of rice or on the side, as desired.
