Steps:

  • Preheat oven to 425.
  • Spread the vegetables in a single layer in one or more large shallow roasting pans; do not crowd them or they will not brown.
  • Drizzle with the oil and sprinkle with salt and pepper to taste.
  • Stir well.
  • Roast the vegetables, stirring once or twice, for 45 minutes.
  • Pierce each sausage in two or three places with a fork.
  • Place the sausages on top of the vegetables.
  • Bake for 15 to 30 minutes, or until the sausages and vegetables are cooked through.
  • Serve hot.

2 lbs. yellow or red potatoes, small chopped

1/4 cup olive oil
1 teaspoon Italian seasoning
1 teaspoon kosher salt

1/4 teaspoon crushed red pepper flakes, optional

Steps:

  • Preheat oven to 400 degrees F.
  • Add sausage, veggies, potatoes and garlic to a large lined baking sheet. Drizzle with oil. Sprinkle with Italian seasoning, salt, pepper and red pepper flakes. With your hands, toss mixture together until evenly distributed.
  • Bake until veggies and potatoes are tender, about 30 minutes. Serve hot.

1 pound sweet Italian turkey sausage
2 red bell peppers, sliced
2 yellow onions, sliced
1 teaspoon kosher salt

1/2 cup chopped fresh basil leaves
4 garlic cloves, chopped
2 tablespoons tomato paste
1 cup Marsala wine
1 (15-ounce) can diced tomatoes
1/4 teaspoon red pepper flakes, optional
4 to 6 fresh Italian sandwich rolls, optional

Steps:

  • Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides, about 7 to 10 minutes. Remove from the pan and drain.
  • Keeping the pan over medium heat, add the peppers, onions, salt, and pepper and cook until golden brown, about 5 minutes. Add the oregano, basil, and garlic and cook 2 more minutes.
  • Add the tomato paste and stir. Add the Marsala wine, tomatoes, and chili flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.
  • Cut the sausages into 4 to 6 pieces each, about 1-inch cubes. Add the sausage back to the pan and stir to combine. Cook until the sauce has thickened, about 20 minutes.
  • Serve in bowls. Or, if serving as a sandwich, split the rolls in half lengthwise. Hollow out the bread from the bottom side of each roll, being careful not to puncture the crust. Fill the bottom half of the roll with sausage mixture. Top and serve sandwiches immediately.

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, 12 to 15 minutes. Drain and set aside.
  • Heat oil in a large skillet over medium heat. Crumble sausage into skillet and cook, stirring frequently, until browned and no longer pink, about 7 minutes. Remove sausage with slotted spoon and drain on paper towels.

2 tablespoons olive oil, divided
6 bone-in, skin on chicken thighs
½ pound assorted sweet peppers, seeded
1 small red onion, sliced

2 teaspoons dried Italian herbs
2 teaspoons kosher salt, plus more as needed

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Heat olive oil in a skillet over medium heat. Cook sausage links until browned and oil begins to render, about 3 minutes per side. While sausages are cooking, pierce them lightly here and there with the tip of a sharp knife so some fats and juices are released. Remove from heat and let cool slightly.
  • When sausages are cool enough to handle, cut them into serving pieces, about 2-inch slices. Transfer back to pan along with any accumulated juices from the cutting board.

4 Italian sausages (cut into thirds)
1 red pepper (trimmed and sliced)
1 yellow pepper (trimmed and sliced)
4-5 green onions (sliced)
1-1½ teaspoons paprika

3-4 tablespoons Italian flat-leaf parsley (fresh and finely chopped)

Steps:

  • Preheat oven to 425° F (220° C).
  • Place oven grate on the lower center rack, that is the second from the bottom.
  • Add the potato wedges to a large pot of cold salted water.
  • Bring to a boil, reduce the heat and then simmer until tender or a knife can pierce through. This takes about 8-10 minutes all depending on how thick your wedges are.
  • Add 2 tablespoons of olive oil to a large skillet, over medium-high heat.
  • Lower the heat to medium, add 3-4 chopped garlic cloves and stir for about 30 seconds.
  • Add the 2 sliced onions and cook for about 5-7 minutes.
  • Add salt and pepper to taste. If you like a little heat, go ahead and add a pinch or two of red pepper flakes.
  • Add the Italian sausages to the pan and combine with the onions. Saute for about 10 minutes.
  • Check the potatoes for doneness.
  • If a knife can easily be inserted, they are done. With a slotted spoon, transfer the parboiled potatoes to a large bowl.
  • Add 1 teaspoon of paprika and 1 tablespoon of olive oil. Combine with the parboiled potatoes and set aside.
  • Add the sliced red and yellow peppers and the green onions to the pan. Saute for about 5 minutes or until they just begin to soften
  • Transfer both the sausage and the potato mixture to a large deep baking dish (approximately 9 x 13 inches).
  • Toss gently together.
  • If desired, sprinkle with a little more paprika, about ½ teaspoon or so.
  • Cover with aluminum foil and bake for about 20 minutes.
  • Uncover and bake for another 15-20 minutes or until most of the moisture has evaporated and the top layer appears to be nicely roasted.

1 yellow onion, sliced thin

3 cloves garlic, minced
1 cup amber beer

  • Heat the olive oil in a large skillet over medium heat. Add the potatoes, onions and peppers, then season with a pinch of salt and pepper. Cook until the onions are translucent and the potatoes begin to brown, 5 to 6 minutes.
  • Stir in the kielbasa and garlic. Add the beer and mustard, then stir to combine. Cover and cook until the potatoes have softened and the sausage is heated through, 2 to 3 minutes.

One-pan Sausage, Peppers, Onions and Potatoes image

Comfort food is the name of the game for this fantastic one-pan sausage, pepper, onion and potato extravaganza. A dinner staple for people with busy lives.

3-4 large potatoes
8 sweet Italian sausage
2 green poblano peppers
1 red pepper
1 ½ onions (any kind)
2 tablespoons olive oil
½ teaspoon salt
chili flakes, optional garnish
parmesan shaker cheese, optional garnish

Steps:

  • Before you start the recipe, you should put your sausage in the freezer for about an hour or so. They won't freeze, but they will become more firm and easier to cut. If you try to cut them without doing this, the sausage casings get wonky and everything falls apart. Once that is done, cut the sausage into one-inch pieces and put them in a large baking pan. Mine was 18"x 15" and worked great for this. You can split it between two baking dishes if you need to.
  • Peel your potatoes and cut them into cubes. Keep the pieces uniform so they cook evenly. I used three small potatoes and one large. Put the potatoes in a large bowl.
  • Cut your green and red peppers. Cut around the core and seed part. Then cut your peppers into thick strips and then into chunks from there. (video shows all this well)
  • Add your peppers to the bowl with the potatoes. Add the olive oil and salt. Mix everything together until it is well combined.
  • Combine the potatoes and peppers with the sausage in the baking pan. Toss together and spread everything out evenly.
  • Cover with foil and cook in a preheated oven at 400 degrees for 25 minutes.
  • While it's cooking, chop your onions. I like to add mine half-way through the cooking process. That's my preference. If you want to add everything together at the beginning - go for it.
  • After 25 minutes, remove the foil, add the onions to the pan and gently mix the onions with everything else. Put back in the oven for another 20-30 minutes - UNCOVERED this time. Ovens are different. Mine runs hot, so yours may take longer or shorter to cook things. I can tell it's done when the sausage browns a bit.
  • Remove from the oven and serve immediately. Serve with parmesan shaker cheese and chili flakes if you like! Enjoy!

1 medium onion (peeled and quartered, layers separated)
2 red bell peppers (seeds removed and cut into 1 inch pieces)

1 tsp chopped rosemary (fresh or dry)
1/2 tsp garlic powder
olive oil spray (I use my Misto)
1 lb Italian chicken sausage

Steps:

  • Cut the potatoes into small 1" x 1/2 inch pieces. These take the longest to cook so cutting them small ensures everything cooks evenly.
  • Preheat oven to 375°F.
  • Spray one large non-stick baking sheet, or two small ones with olive oil spray to prevent the potatoes from sticking.
  • In a large bowl, combine potatoes, onions, peppers, olive oil, salt, pepper, rosemary and garlic powder. Mix well to be sure everything is coated with oil and seasoned evenly. Pour onto the prepared baking sheet and place in the center of the oven; bake for 15 minutes.
  • Use a spoon to toss so nothing sticks or burns.
  • Add the sausage to the baking sheet with the potatoes and vegetables and bake, tossing once or twice for 25-35 minutes, or until your potatoes are cooked through.
  • Cooking time will vary depending on the thickness of your potatoes and sausage, keep an eye so they don't burn.

2 potatoes, sliced thin
1 lb sweet Italian sausage
1 cup green pepper, diced
1 cup red pepper, diced
1 cup onion, diced
1 cup shredded cheese
4 eggs
1 cup milk or 1 cup cream
1 pie crust
salt or pepper
1 tablespoon olive oil

Steps:

  • Remove casing from sausage and cook in a pan over medium heat until browned. Use a wooden spoon and crumble the sausage as it cooks. Drain on a paper towel to remove any fat.
  • In same pan, gently saute peppers and onions about 5 min until soft. Salt and pepper to taste. Remove from pan and set aside.
  • Again using same pan, heat olive oil and cook potato slices about 10 min to soften.
  • Preheat oven to 350. Lay pie crust into pie pan and lay potato slices to cover bottom. Next add crumbled sausage, peppers and onions. Whisk together egg and milk and pour over top of mixture. Top with cheese.
  • Bake at 350 for about 40 minutes or until set and golden.
  • Serve warm.
