COCA COLA CHICKEN WINGS

You don't hear many murmurs about Coca Cola Chicken Wings in the States these days, but it was all the rage among Asians in the early 1990s! They're a once-in-a-while delicious treat.

2 pounds chicken wings ((900g))
2 tablespoons oil
3 slices ginger
1 can cola ((regular, not diet))
1 tablespoon Shaoxing wine
1 tablespoon dark soy sauce
2 tablespoons light soy sauce
1 piece of dried orange peel ((optional))
1 small cinnamon stick ((optional))
Salt ((to taste))

Steps:

  • Wash and clean the chicken wings. Cut the wings at the joint, and pat the chicken dry with a paper towel.
  • Pre-heat the wok until it starts to smoke. Add the oil, and spread it around to coat the bottom of the wok. Now add the ginger and the chicken wings. Spread out the wing pieces in a single layer, and lightly brown them for a few minutes on each side. The wok should be over high heat.
  • Now add the cola, Shaoxing wine, dark soy sauce, light soy sauce, and (if using), the orange peel and cinnamon stick. Bring it to a boil, cover the lid, and turn down the heat to medium. Let simmer for 12-15 minutes--until the sauce is almost dry (though there should still be a small pool of sauce at the bottom of the wok). Stir the wings, and add salt to taste.
  • Now turn up the heat, and quickly stir the wings until the sauce coats each piece. Serve!

They say that Coca Cola is now sold in every country in the world but North Korean and Cuba. In China, it's being put to use in ways that appeal to local tastes. To cure a cold, Chinese people enjoy Coke boiled with ginger slices, and garnished with lemon slices. Today, I was served Cola Chicken Wings. I see other Chinese Cola Chicken Wing recipes on the web, but none with the combination of whole spices I encountered today. Simple and tasty. Enjoy!

1 kg chicken wings
1/4 cup light soy sauce
2 tablespoons oil
4 smashed garlic cloves
4 smashed slices ginger
1 tablespoon whole szechuan peppercorns (or use 4-5 dried red chilies, or black peppercorns)
1 cup Coca-Cola (or use 1/2 c water, 1/2 c Coke)
1 -2 tablespoon rice wine
1 -2 star anise
1 cinnamon stick

Steps:

  • Wash chicken wings, marinade 15 min in soy sauce, and drain, reserving marinade.
  • Heat wok over high heat, add oil to heat, and and toss ginger, garlic, and peppercorns or chilies until fragrant, then add chicken wings and stir-fry until skin is seared.
  • Add remaining ingredients and reserved marinade and simmer 15-25 min until sauce is reduced to a caramelized glaze. Add some water if needed.
  • Garnish with scallions if desired.

Taken from Ji Pin Su Shi (Best Vegetable Dishes), a 30-cent, 5-in-square, paperback cookbook from Wal-Mart in China. Simple, home-style Chinese fare. Chinese cooks are expected to determine the proportions of condiments and seasonings. Everything is "ge shi liang"--to taste. I've suggested amounts, but if they don't seem right, just trust your own tastebuds.

150 g onions
250 g cabbage
2 tablespoons salad oil (to taste)
1/4 teaspoon salt (to taste)
1 teaspoon soy sauce (to taste)
1 teaspoon sugar (to taste)

Steps:

  • Peel, rinse, and thinly slice onion.
  • Peel and rinse cabbage. Chop into 1-inch squares. Steam about 8 minutes and remove to serving bowl.
  • Heat wok. Add oil and swirl to heat. Add onion and toss briefly until fragrant. Turn off heat. Add salt, soy sauce, and sugar, and toss.
  • Pour onion mixture over cabbage, and serve as part of a Chinese meal. (For a Chinese meal, serve rice, a soup, and one dish per person. Choose a balanced variety of dishes.).

500 g lean hamburger
1/2 cup dried breadcrumbs
1 egg
1/2 medium onion, finely chopped
1/4 small green capsicum, finely chopped
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 teaspoons minced garlic
1/2 small onion, finely chopped
1/4 small green capsicum, finely chopped
1 cup tomato soup
1 cup Coca-Cola
2 tablespoons Worcestershire sauce

Steps:

  • preheat oven to 180 Celsius spray a baking dish with cooking spray.
  • in a large bowl, mix all the meatball ingredients together then roll into golf ball sized balls.
  • place balls in a single layer into the baking dish.
  • in a small bowl, mix together all the sauce ingredients then pour over the meatballs.
  • cook for 50 - 60 minutes until sauce is bubbly and meatballs are cooked. turn the balls once during cooking.
  • when the meatballs are almost ready to serve, remove from oven and mix 2 tablespoons of cornflour with enough water to make a thin paste and stir through the meatballs to thicken the sauce. return to oven for 5 minutes then serve.
  • serve with mashed potato and vegetables of choice.

1 cup brown sugar
1 (12 ounce) can Coca-Cola
1/4 cup dry sherry or 1/4 cup chinese rice wine
2 medium onions, chopped
2 garlic cloves, minced
2 scallions, chopped finely
2 tablespoons soy sauce
salt & freshly ground black pepper, to taste
2 1/2 lbs chicken wings (if previously frozen, allow to thaw overnight in refrigerator) or 2 1/2 lbs ribs (if previously frozen, allow to thaw overnight in refrigerator)

Steps:

  • Combine all ingredients except chicken or ribs in a large bowl.
  • Mix in the chicken or ribs and coat with marinade. Refrigerate for 6-8 hours or overnight.
  • When ready to bake, preheat oven to 350 degrees F.
  • Lay out the chicken or ribs on a baking sheet coated with cooking spray.
  • Bake for 2 hours. Serve immediately.

  • Heat oil in a nonstick skillet over medium high heat. When oil is warm, add chicken wings, skin side down. Grill until the bottom side turns golden brown, 3 to 4 minutes. Flip wings and fry the other side until golden. Stop heat and transfer chicken wings to a plate. Set aside. Save the oil.
  • Heat a wok over medium high heat. When wok is hot, add the remaining oil from the skillet (about 2 tablespoons, add more if needed). Carefully lift the wok and swirl, to coat the lower third of the wok with oil. Turn to medium heat. Add chili pepper and let it cook for a few seconds, until dark. Add scallions and ginger and stir several times until fragrant. Add light soy sauce, Shaoxing wine and Coca-Cola and gently stir a few times. Carefully add chicken wings. Stir a few times to coat with sauce.
  • When the sauce starts to boil, turn to low heat and simmer for 20 minutes. During the first 15 minutes, use a spatula to stir 2 to 3 times, to avoid burning on the bottom, taking care to keep the wings evenly coated with sauce. When the sauce starts to thicken, add salt. Stay near the wok and stir frequently once the sauce has reduced to a third original amount. When the sauce has become very thick and coats the wings well, stop heat. If sauce is still thin after 20 minutes, turn to medium high heat to thicken the sauce. Be careful, as you can easily burn the chicken toward the end of braising. Transfer wings to a plate and garnish with cilantro or green onion.
