GRANOLA WITH PECANS AND DRIED FRUIT

The recipe for this irresistible granola, from Laura Gidley-Feltz of Columbia, Illinois, was inspired by pecans from her family farm.

Nonstick cooking spray
1/3 cup vegetable oil
1/2 cup packed light-brown sugar
1/2 cup honey
1 tablespoon pure vanilla extract
3/4 teaspoon ground cinnamon
1/2 teaspoon fine salt
3 cups rolled oats
2 cups coarsely chopped pecans
1 cup sweetened shredded coconut
1 cup mixed dried fruit, such as cranberries or raisins
1 cup chocolate chips (optional)

Steps:

  • Preheat oven to 300 degrees, with racks in upper and lower thirds. Lightly coat two rimmed baking sheets with cooking spray. In a large bowl, combine oil, sugar, honey, vanilla extract, cinnamon, and salt. Add oats and pecans; stir to combine. Divide mixture between sheets. Bake 15 minutes, stirring occasionally. Add 1/2 cup coconut to each sheet; bake until mixture is golden brown, 15 minutes. Let cool completely on sheets. Stir in dried fruit and chocolate chips, if desired.

Number Of Ingredients 10

2 cups raw nuts (such as almonds, walnuts, pistachios, pecans, and/or blanched hazelnuts)
½ cup raw pumpkin seeds
3 Tbsp. extra-virgin olive oil, plus more for pan
2 cups old-fashioned oats, divided
1¼ cups dried fruit (such as tart cherries, raisins, currants, dates, apricots, and/or blueberries)
¾ cup unsalted or low-salt natural peanut butter
½ cup plus 2 Tbsp. honey
2 tsp. kosher salt
2 tsp. vanilla extract
1 large egg white

Steps:

  • Preheat oven to 350°F. Toast nuts pumpkin seeds on a rimmed baking sheet until golden brown or slightly darkened in color, 10-12 minutes. Transfer to a food processor and let sit until cool enough to handle.
  • Reduce oven temperature to 300°F. Lightly oil 13x9" pan and line with parchment paper, leaving overhang on both long sides. Lightly oil parchment.
  • Add 1 cup oats to nut mixture in food processor and pulse until nuts are a sandy consistency and no whole oats remain. Transfer to a large bowl.
  • Pulse any dried fruit larger than a raisin in food processor (no need to wipe out) until about the size of chocolate chips. Transfer to bowl with nut mixture. Add remaining 1 cup oats and stir to combine, breaking up any fruit that is stuck together. Add remaining 3 Tbsp. oil and stir to coat. Add peanut butter, but don't stir it in; set aside.
  • Bring honey, salt, and vanilla to a boil in a medium saucepan over medium heat (it will bubble up). Reduce heat to medium-low and simmer, stirring occasionally, until it is foaming vigorously and smells like caramel, about 3 minutes.
  • Immediately pour honey mixture over peanut butter in reserved bowl (it will melt the peanut butter). Stir to combine, making sure to aggressively break up any clumps.
  • Using a fork or small whisk, lightly beat egg white in a small bowl to thin out. Add to oat mixture and mix until egg white is no longer visible.
  • Scrape oat mixture into prepared pan and press firmly into an even layer. (Be sure to really compact the mixture into the pan-it helps to use the bottom of a heavy glass or metal measuring cup.)
  • Bake granola bars until deep golden brown and no longer sticky or wet, 30-35 minutes. Let cool 5 minutes, then lightly score into 16 long rectangles (1 cut lengthwise and 7 cuts crosswise will make bars that are about 6½x1"). Let cool completely in pan, then use parchment to hoist bars out onto a cutting board. Using a sharp chef's knife, cut along marks to separate bars.
  • Do Ahead: Bars can be made 1 week ahead. Store airtight at room temperature.

1-2/3 cups quick-cooking oats
3/4 cup sugar plus 2 tablespoons sugar
1/3 cup oat flour
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 cup chopped dried apricots
1/2 cup each dried cherries and cranberries
1/2 cup flaked coconut
1/2 cup chopped pecans or walnuts
1/2 cup unsalted sunflower kernels
1/4 cup honey or maple syrup
2 tablespoons butter, melted
2 tablespoons light corn syrup
1 teaspoon vanilla extract
1 tablespoon water

Steps:

  • In a large bowl, combine oats, sugar, oat flour, salt and cinnamon; mix well. Stir in apricots, cherries, coconut, pecans and sunflower kernels; set aside., In another bowl, whisk together honey, butter, corn syrup, vanilla and water. Add the honey mixture to the fruit mixture; mix until crumbly. Pat into a lightly greased 13-in. x 9-in. baking pan. Bake at 350° for 25-30 minutes or until golden brown on the edges. Cool in pan for 5 minutes., While still warm, cut into bars. Remove bars to a wire rack to cook completely. Wrap bars individually in plastic wrap or store in an airtight container with parchment paper separating layers.

½ cup finely chopped almonds
½ cup vegetable oil
½ cup pure maple syrup
⅓ cup boiling water
2 teaspoons ground cinnamon
1 teaspoon ground cardamom
¾ cup minced dates
¾ cup minced raisins
⅔ cup minced dried cranberries

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Mix oats, pecans, and almonds together in a bowl. Whisk oil, maple syrup, and water together in a measuring cup and pour over oat mixture; stir until evenly coated. Spread oat mixture onto 2 baking sheets.
  • Bake in the preheated oven for 12 minutes; stir and continue baking for 12 minutes more. Stir and bake until granola is golden brown, about 12 minutes more. Cool to room temperature.
  • Mix cinnamon and cardamom together in a container with a lid; add dates, raisins, and cranberries. Cover container and shake until fruit is coated. Stir dried fruit into cooled granola.

1 cup coconut flakes
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon allspice
1/4 cup sesame seeds
1/2 cup pecan nuts, chopped
1 cup dried fruit
3 ripe bananas, mashed
1/4 cup canola oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 175°C Line baking sheet with parchment paper.
  • In a large bowl, combine rolled oats, pecan nuts, sesame seeds and coconut flakes. Stir in allspice and cinnamon. Add dried fruit and stir until well and evenly mixed. Make sure the dried fruit do not stick together in big batches.
  • In another bowl, combine canola oil, mashed banana and vanilla extract. Pour wet ingredients over dry ingredients and stir until well combined.
  • Spread the batter evenly onto the baking sheet, about 1/2 inch to 3/4 inch high.
  • Alternatively, use a large cookie cutter and press spoonfuls of the batter into it. Remove cookie cutter. Bake for about 20 minutes or until edges are golden brown. The granola bars tend to get brown at the bottom first. Make sure not to burn them. Let cool completely, store in airtight container and keep in the fridge.

2 1/2 cups rolled oats
1 cup chopped nuts (I use walnuts, almonds and a small handful of sunflower seeds)
1 cup chopped dried fruit (I use dried apricots and dried cherries)
1/2 cup honey
3 tablespoons brown sugar
2 tablespoons butter (optional)
2 teaspoons vanilla
2 teaspoons cinnamon
1 teaspoon salt

Steps:

  • Preheat the oven to 350 degrees.
  • Grease an 8x8 glass pan.
  • Place nuts and oats on a baking sheet, and bake for about 12 minutes or until lightly toasted.
  • While oats and nuts are toasting, place in a saucepan over medium heat the honey, brown sugar, butter, vanilla, cinnamon and salt.
  • Stir until the mixture bubbles, and keep it boiling and stirring for about 2 minutes.
  • When oats and nuts come out of the oven, turn it down to 325.
  • Take the pan off the heat, and when the oats are finished, pour them right into the saucepan and mix to combine honey mixture evenly.
  • Stir in the chopped dried fruit.
  • Press mixture into the glass pan with the back of a spoon - it will be pretty sticky.
  • Bake at 325 for 20 minutes, and let cool completely before cutting.
  • Wrapped in saran wrap, these will keep for at least a couple of weeks!
