GARLICKY STEAMED BROCCOLI
Delicious and healthy side dish of steamed broccoli rolled in buttery panko crumbs, garlic and lemon.

Steps:
- Add water in a pot and bring to a boil.
- Add broccoli to boiling water and cover.
- Cook for 7 to 8 minutes, or until fork-tender.
- Drain, pat dry with a paper towel and season with salt and pepper; set aside.
- Melt butter in a large skillet over medium heat.
- When butter is melted, add garlic and cook for 1 minute or until soft and fragrant, stirring occasionally. Don't burn the garlic.
- Stir in the panko crumbs, lemon zest and lemon juice.
- Season with salt and pepper and mix and stir until everything is well blended and moist.
- Stir in prepared broccoli and cook until all is combined and heated through; about 2 minutes.
- Remove from heat and transfer to a serving plate.
- Garnish with fresh parsley.
- Serve.

- Using a paring knife, cut off and discard tough bottoms of broccoli stalks. Cut broccoli into florets.
- Place broccoli in a steamer for 3 to 4 minutes. Do not overcook.
- Heat oil in a skillet, add garlic, broccoli and salt and pepper to taste. Saute briefly, being careful not to burn garlic. Serve immediately.

- Cut the broccoli into florets, discarding stems or reserving for another use.
- Combine the florets with butter, soy sauce and 1/4 inch water in a skillet large enough to hold the florets in a single layer.
- Bring to a boil.

- Remove cover and simmer until most of the liquid has evaporated, 1 -3 minutes longer.

- Discard tough lower third of broccoli stem. Peel remaining stem and cut crosswise into 1/2-inch-thick slices. Cut broccoli into 2-inch florets. In a steamer set over boiling water steam broccoli, covered, until crisp-tender, 4 to 5 minutes.
- While broccoli is steaming, finely chop garlic and in a small skillet combine with oil, lemon juice, and salt and pepper to taste. Heat garlic mixture over moderate heat until garlic is fragrant. In a bowl toss broccoli with garlic mixture.
BROCCOLI WITH GARLIC-HERB BUTTER
This is a recipe from my 2008 Weight Watchers cookbook that we really enjoyed. I altered it slightly for our taste. It's a nice way to enjoy broccoli without all the cheese sauce. It's got a nice bite to it too. Feel free to leave out the crushed red pepper flakes. The frozen steam bags of broccoli work well with this recipe.

- Place butter in a small microwave safe dish.
- Microwave on high for 30 seconds or until melted.
- Stir in parsley, garlic, pepper and red pepper flakes.
- Place broccoli florets in a large microwave safe bowl.
- Add 2 tablespoons water, and cover with wax paper.
- Microwave on High 5 minutes or until crisp-tender.
- Drain well.
- Add butter mixture and salt to taste.
- Toss gently to coat.
