You can replace the apple in this cake with rhubarb, pear or firm peaches. Or leave the fruit out altogether and just sprinkle the cinnamon sugar mix onto the cake before baking, then you will have a very moist tea cake.

- Preheat oven to 180 degrees. Grease a 22-centimetre round cake tin. Beat butter and sugar with an electric mixer until the mixture is light and fluffy. Beat in eggs, one at a time. Sieve flour into mixture and fold in thoroughly. The mixture will be quite stiff. Peel, core and quarter apples, then slice them thinly. Spread half the mixture in the bottom of the cake tin and cover with half the sliced apple. Cover with the rest of the mixture and arrange the remaining apple in a wheel pattern over the top. Mix cinnamon and white sugar then sprinkle over the apple. Place in the centre of the oven and bake for 35 minutes. To check if it's ready, insert a skewer in the centre; it should come out clean.
DANISH APPLE CAKE
A former neighbor of mine & I were trying out recipes from some newly acquired military community cookbooks we had "won" together on Ebay. My neighbor found this recipe in one called "Recipes on Parade:Desserts" and since we both had a copy of the cookbook, we both tried it out - and loved the recipe. You would serve this scooped into a bowl, garnished with a little shredded cheddar and whipped cream, or as my neighbor preferred, some vanilla ice cream. This tastes best warm. This is called a "cake" but is not a typical slicing cake.

- Grease a 9" square glass baking dish well.
- Mix together dry ingredients (flour, baking powder, salt, sugar).
- Stir in slightly melted butter.
- Add beaten egg,apples,nuts, and vanilla and stir to combine.
- Bake 30 minutes in prepared pan or until toothpick tests done.
- Serve warm with a bit of shredded Cheddar cheese sprinkled over the top and a dollop of whipped cream.
- I know the cheese part sounds strange, but it is the secret ingredient!

This is my adapted version of a recipe I found on Recipe Source. It's really easy to prepare, and includes ingredients that most cooks tend to have on hand in their pantry.

- Preheat oven to 350°. Grease a 9x9-inch baking pan.
- Cream butter and sugar together. Add egg and vanilla, beating well. Add flour, baking soda, and cinnamon, and blend well. Add grated apples and beat well by hand. Pour cake batter into prepared baking pan.
- Combine all topping ingredients and sprinkle evely on top of cake batter. Bake at 350° for 40 minutes.
- Remove cake from oven, and let cool. Cut 3 rows horizontal and 3 rows vertical (yielding 9 servings).
DANISH APPLE CAKE
This is the recipe for my mum's apple cake, the best apple cake and maybe the best cake I've ever eaten. It's great to eat as a dessert with vanilla ice cream or whipped cream with chopped hazelnuts, or sprinkled with sherry or dessert wine. Can be frozen baked and reheated in a microwave. My mum translated this for me from her mother's Danish cookbook, Bo Bedre's Bagebog, by Lilian Kaufman 1966. The original recipe is called Reinette-Kage (Reinette Cakes).

Steps:
- Whisk the eggs, slowly adding sugar until the mix becomes a light and airy.
- Melt the butter slowly without burning it (for example in the microwave) and let it cool down, and add it to the mixture, along with the grated lemon peel.
- Mix the flour, vanilla essence and baking powder and add it to the mixture.
- Line a large baking tin (lasagna dish) with greaseproof paper: cut the paper to 2" (5cm) larger on each side than the base of the tin, cut into each corner and press down into the tin.
- Pour the mixture into the tin.
- Peel and core the apples, cut into wedges (about 4mm thick at outside) and push them down vertically into the cake mix, so that the curved outsides face upwards towards you, and the sharp insides point downwards into the cake, like teeth. The slices should be completely buried in the cake mix, or they will burn.
- Sprinkle a little sugar on top of the apple slices.
- Bake at 175'C for 45 minutes. Allow to cool partly in the tin before removing to cool down on a wire rack.

- Turn on the oven and heat it up to 180 degrees Celcius normal heat.
- Put eggs and sugar in a bowl and beat until light, white and fluffy. Here it is an advantage with an electric whisk or a mixer.
- Split the vanilla bean, scrape out the grains, mix it with a little sugar and beat it together with the egg mixture and the vanilla essence.
- Put flour and baking powder in a sieve and sift it into the egg mixture, mix it again until it is a smooth dough.
- Melt the butter in a saucepan and allow it to cool slightly. Then slowly whisk it into the dough.
- Peel the apples and cut them into pieces approx. 1 × 1 cm. Put the apple pieces and raisins in the dough and mix it all together.
- Pour the dough into a greased springform pan of approx. 22 cm in diameter.
- Then the cake must be topped. Peel the last apples and cut them into thin slices. Put them on top, and press them a little into the dough.
- Finish by sprinkling cinnamon and sugar as well as almond flakes over the cake.
- Bake the cake for approx. 40 min in the preheated oven. Here it is important to check the cake along the way, otherwise, there is a risk that it will become dry. If there is still dough on the knife when you stick it in the cake, it should have a little more time in the oven. Take it out when it is done.
- Let the cake cool a bit and serve it with sour cream or vanilla ice cream or just as it is.

DANISH APPLE AND PRUNE CAKE
Steps:
- Preheat the oven to 375 degrees F and butter a 10-inch round cake pan.
- Cream together the butter, sugar, eggs, flour, almonds, milk, vanilla, boiling water and baking powder in a food processor, running it for 10 seconds. Run a spatula round the bowl and process for 5 seconds more. Pour into the prepared pan.
- Scatter the prunes evenly on the batter. Spoon over walnut and sugar mixture. Arrange the apple slices on top of the walnuts. Bake for 45 minutes.
- Sprinkle the surface with sugar and cinnamon. Dot with butter and bake for 20 to 25 minutes more, or until a skewer comes out clean. Cool in the tin.

- Peel, core and thinly slice the apples. Put into a stainless steel or enamel pan with a little water. Cover and cook gently until soft, then purée. - In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Beat egg yolk in measuring cup and add enough milk to make 2/3 cup total liquid. - Combine 1 cup flour, 2 tablespoons brown sugar, 1 teaspoon salt, and instant yeast in a mixing bowl. Add the water and room temperature butter and beat for 1 minute. Stir in the remaining cup of flour and mix well. Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 10 minutes. Shape the dough into a ball and transfer to an oiled bowl, turning to coat the surface of the dough. Cover the bowl with plastic wrap and let the dough rise until doubled in bulk, about 1 hour.
- Meanwhile, make the filling. Place the chopped apples and 3 tablespoons butter in a medium saucepan. Combine 1/2 cup brown sugar, 1 1/2 tablespoons flour, 1/4 teaspoon salt, cinnamon, and nutmeg and mix well; add the mixture to the saucepan. Bring the mixture to a boil over medium-high heat and then reduce the heat to a simmer. Cook until the apples are tender, about 5 minutes. Remove from heat and allow the filling to cool.
- Transfer the Danish dough to a floured surface and punch the dough down. Let the dough rest, covered, for 15 minutes. Roll the dough out into a 13 x 8-inch rectangle. Place the dough on a greased or parchment-lined baking sheet.
- Turn the baking sheet so that you face the short side of the dough. Spread the apple filling down the center third of the dough. With a sharp paring knife, make cuts in the dough along the right side, starting each cut about 1/4 inch from the apple filling. Cut to the edge of the dough strip, with each cut angled to about 4 o'clock. Each strip of dough should be about 1-inch thick. Repeat on the left side of the dough, angling the cuts to 8 o'clock.
- Starting at the top, fold the dough strips across the apple filling, alternating left and right. The pastry will look like a long braid. Pinch the top and bottom ends of the braid to seal in the filling. Cover the pastry and let it rise at room temperature until the dough is puffy, 30 to 40 minutes.
- Preheat an oven to 375 degrees F (190 degrees C). Bake the braid for 20 minutes, covering it with aluminum foil during the last 10 minutes of baking to prevent over-browning. Remove the pastry from the oven and allow it to cool.
- To make the glaze, heat the 2 tablespoons of butter in a saucepan over medium heat. Swirl the pan occasionally and cook until the milk solids turn brown and give off a nutty fragrance, about 5 minutes. Remove from heat and transfer to a bowl to cool slightly. Stir in the confectioners' sugar and vanilla. Mix in the milk a teaspoon at a time until the glaze is thin enough to drizzle. Decorate the Danish braid with the glaze.

JUDY'S DANISH APPLE TART
A simple apple and pastry desert, delicous warm or cold

- Blend flour, baking powder and rub in the margarine, then mix in the sugar and the egg. (this can be done in a food processor, just adding the egg at the end)
- Take 2/3 of the mixture and press into a 8-9" cake tin. Slice and peel the apples and arrange on top in whatever pattern you like.
- Roll out the remainder of the pastry and cut into strips about 2-3cm. wide and arrange in a lattice pattern over the apples. You don't have to be too fussy because as it cooks the strips tend to spread into each other.
- Bake in the oven for 40mins @ 160-170C/Fan
- Dust with icing sugar and enjoy with creme fraiche

My grandmother Anina always made this cake for holidays - it was probably created to make use of what was on hand in hard times. I'm posting it here for safe-keeping.

- Dry the bread in a low oven, when sufficiently dry crush into crumbs.
- Melt 1/4 pound of the butter in a skillet, and add the bread crumbs. Stir to brown over medium heat. Add 1/4 cup sugar and 1/2 tablespoon cinnamon, stir to keep from sticking.
- Pat 1/3 of the crumb mixture into a greased pie pan, smoothing down.
- Spread over this one can of the applesauce, dot with 1/3 of the remaining butter and sprinkle half the remaining sugar and cinnamon.
- Repeat, then finish with the last third of the crumbs. Dot with last of the butter.
- Bake at 325 degrees for 45 minutes.
- Cool, then turn out onto a plate and refrigerate overnight.
- Before serving coat with whipped topping and garnish with cherries and nuts.
