The license to call this nourishing one-dish meal a bouillabaisse comes with the generous pinch of saffron that is added to the broth. It is one of many humble, filling and comforting vegetable soups from Provence that are given that lofty title.

2 pounds spinach, stemmed and washed in 2 changes of water, or 1 pound baby spinach, rinsed
2 tablespoons extra virgin olive oil
1 onion, finely chopped
2 leeks, white and light green parts only, cut in half lengthwise and rinsed of all grit, then sliced thin
Salt to taste
6 garlic cloves, minced
1 pound Yukon gold potatoes, peeled if desired and cut in thin slices
A bouquet garni made with a bay leaf and a couple of sprigs each thyme and parsley (and if you have it, a fennel sprig)
Generous pinch of saffron
Freshly ground pepper
6 eggs
1 1/2 ounces Gruyere cheese, grated (6 tablespoons)
12 thin slices baguette, toasted (optional)

Steps:

  • Bring a large pot of water to a boil while you prepare the spinach. When the water comes to a boil, salt generously and add the spinach. Blanch for 30 seconds and transfer to a bowl of cold water without draining the water from the pot. Measure out 2 quarts of the boiling water and set aside. Drain the spinach, squeeze out excess water and chop coarsely. Set aside.
  • Heat the olive oil in a large, heavy soup pot or Dutch oven and add the onion and leek. Cook, stirring often, until tender, about 5 minutes. Add a generous pinch of salt and the garlic, stir over medium heat until the garlic smells fragrant, no more than a minute, and stir in the broth from the spinach, the potatoes, bouquet garni and salt to taste. Bring to a boil, add the saffron, and turn the heat to low. Cover and simmer 20 to 30 minutes, until the potatoes are tender but still intact and the broth is fragrant.
  • Stir in the spinach, cover and continue to simmer for another 10 minutes. Add pepper, remove the bouquet garni, taste and adjust seasonings.
  • Keep the soup at a bare simmer. Break each egg into the soup (I prefer to first break the egg into a teacup and then tip it into the soup). Cover and continue to simmer until the eggs are set, about 5 minutes.
  • Serve the soup in wide bowls with an egg in each one. Sprinkle gruyere over each egg, and garnish if desired with toasted rounds of baguette or whole-wheat bread rubbed with garlic.

40 cloves garlic, peeled (from 6 to 8 whole bulbs)
1 cup extra-virgin olive oil
1 large yellow onion, diced
1 head fennel, diced
5 cloves garlic, minced
2 red bell peppers, diced
2 yellow bell peppers, diced
6 bay leaves
Pinch saffron threads
One 50-ounce can diced tomatoes
50 ounces fish or vegetable stock, optional
Sea salt
2 pounds assorted seafood, such as clams, mussels, cod, halibut and wild salmon (see Cook's Note), shellfish alive and in their shells and fin fish skinned and cut into large cubes
1 small bunch fresh Italian parsley, chopped
Crusty bread, for serving, optional

Steps:

  • For the garlic oil and confit puree: Place the garlic and oil in a small heavy-bottomed saucepot. Place over medium-high heat and bring it up to a simmer, stirring occasionally. Reduce the heat to low and poach slowly until garlic cloves are very soft, about 1 hour.
  • Strain the garlic out of the oil, reserving the garlic and oil separately.
  • Place the strained garlic into a food processor and puree until silky smooth, about 1 minute. For a richer, smoother puree, add some garlic oil back in and process to emulsify. Adjust seasoning to taste.
  • For the soup base: Preheat a large soup pot over medium-high heat. Add the onions and 1/2 cup of the reserved garlic oil and sweat, stirring frequently, until translucent, about 2 minutes. Add the fennel and cook, 1 minute more. Add the garlic, red and yellow peppers, bay leaves and saffron, stirring. Cover and cook for 2 minutes. Remove the cover and add the diced tomatoes and additional stock if using (if you desire a lighter soup). Bring back to a boil, turn the heat down to medium-low and simmer, stirring occasionally, 10 to 15 minutes, then season to taste.
  • For the bouillabaisse: Bring the soup base to a boil, then stir in 3 tablespoons of the reserved garlic confit puree and add the clams. Cover and cook until the first clamshell opens, 20 to 30 seconds. Add mussels, then stir the pot, cover and cook 20 more seconds.
  • When the soup is boiling again and more shellfish are beginning to open, add the remaining cubed fin fish. Stir, cover and cook for 30 seconds, then turn off the heat and let sit for about a minute with out opening the lid.
  • Adjust the seasoning and warm some soup bowls. Divide the fish evenly among the bowls, then pour over the remaining liquid. Finish with a 1 tablespoon of the garlic confit puree and sprinkle with the freshly chopped parsley. This is great with crusty bread.

18 mussels, scrubbed
Three 8-ounce lobster tails, boiled in salted water for 5 minutes, drained and halved lengthwise

2 tablespoons chopped fresh tarragon, plus more for garnish
1 teaspoon finely grated lemon zest
Six 1/2-inch-thick slices baguette, lightly toasted

Steps:

  • For the shrimp stock: In a large saucepan over high heat, heat the oil until almost smoking. Add the shrimp shells and tails, onion, carrot and celery and saute, stirring occasionally, for 5 minutes. Add the wine and cook until reduced by half, then add 10 cups of cold water, the tomatoes, parsley, bay leaf and peppercorns. Bring to a boil, reduce the heat to medium low and simmer, skimming the surface occasionally, for 40 minutes.
  • Strain the stock through a strainer lined with cheesecloth into a large bowl, pressing on the solids to extract as much liquid as possible; discard the solids. The stock can be made 2 days in advance and stored tightly covered in the refrigerator, or frozen up to 3 months.
  • For the tomato aioli: Combine the mayonnaise, anchovies, tomato powder, tomato paste, green onion, lemon juice, lemon zest, salt and pepper in a small bowl. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  • For the broth: Heat the oil in a large, high-sided saute pan over high heat and cook the fennel and onion until they begin to soften. Add the pastis and cook until reduced by half, about 5 minutes. Add the tomatoes, saffron, chile flakes and 2 cups of the shrimp stock. Bring to a boil, add the garlic and cook until reduced by half, about 10 minutes. Add 4 more cups of shrimp stock, reduce the heat and cook until the flavors meld and the broth reduces slightly, about 20 minutes. Strain the shrimp-tomato broth into a large bowl, discard the solids, pour the liquid back into the high-sided saute pan and set aside.
  • For the anchovy butter: Put the anchovies and butter in a bowl and mix until combined. Season with salt and pepper, cover and refrigerate until cold, at least 20 minutes.
  • For the seafood: Heat 2 tablespoons of the oil in a large saute pan over high heat. Season the scallops on both sides with salt and pepper. Sear the scallops on one side until golden brown, about 2 minutes, then turn over and cook for 30 seconds. Remove to a baking sheet.
  • Add another tablespoon of the oil to the pan and season both sides of the halibut fillets with salt and pepper. Sear on one side until golden brown, then turn over and cook for 30 seconds. Remove to the baking sheet with the scallops.
  • Heat the remaining tablespoon of oil in the large saute pan, season the shrimp with salt and pepper and sear until the shells become lightly golden brown, about 1 1/2 minutes per side. Deglaze the pan with 1 cup of the reserved shrimp-tomato broth. Transfer the liquid to the remaining shrimp-tomato broth in the high-sided saute pan.
  • Heat the shrimp-tomato broth over high heat. Add the mussels, cover and cook until they open, about 2 minutes. Remove the mussels to the baking sheet with a slotted spoon and discard any that did not open.
  • Add the seared seafood and lobster tails to the shrimp-tomato broth, cover and let cook for 2 minutes.
  • To serve: Add the anchovy butter to the broth and cook until thickened; stir in the parsley, tarragon and lemon zest. Top each baguette slice with a large dollop of tomato aioli and garnish with chives. Divide the seafood and broth among 6 large, slightly shallow soup bowls. Top each with a tomato aioli crouton and garnish with more parsley or tarragon or chives, if desired.

1/2 cup mayonnaise
1/4 cup chopped jarred roasted red peppers, drained and patted dry
2 tablespoons extra-virgin olive oil
1 tablespoon fresh lemon juice
1 clove garlic, roughly chopped

4 plum tomatoes, halved lengthwise
1 pound large shell-on shrimp
1 pound mussels
6 tablespoons extra-virgin olive oil
2 tablespoons tomato paste
2 8-ounce bottles clam juice
1 wide strip orange zest
1 bulb fennel, quartered, cored and thinly sliced
1 large shallot, thinly sliced
2 cloves garlic, finely chopped
Kosher salt
Small pinch of saffron threads
1/2 cup dry white wine
1 1/2 pounds firm white fish (such as cod, monkfish or black sea bass), cut into 3-inch pieces
Freshly ground pepper
1 baguette, sliced and toasted
2 tablespoons finely chopped fresh parsley

Steps:

  • Make the rouille: Puree the mayonnaise, roasted red peppers, olive oil, lemon juice, garlic and a pinch of salt in a blender until smooth. Transfer to a small bowl; refrigerate until ready to serve.
  • Prepare the bouillabaisse: Grate the tomato flesh on the large holes of a box grater down to the skins; reserve the skins separately. Peel and devein the shrimp, reserving the shells and tails for the broth; clean and debeard the mussels. Refrigerate the seafood until ready to use.
  • Make the broth: Heat 3 tablespoons olive oil in a large pot over medium-high heat. Add the shrimp shells and tails and cook, stirring, until bright red, about 3 minutes. Stir in the tomato paste until incorporated, about 30 seconds. Add the clam juice, 4 cups water, the reserved tomato skins, the orange zest and 1/4 cup of the sliced fennel. Bring to a boil, then reduce the heat to medium; simmer until the liquid is reduced to about 4 cups, 12 to 15 minutes. Strain the broth through a fine-mesh sieve set over a bowl, pressing on the solids to extract the liquid; reserve the broth.
  • Wipe out the pot and heat the remaining 3 tablespoons olive oil over medium heat. Add the remaining fennel, the shallot, garlic and a pinch of salt; partially cover and cook, stirring occasionally, until the fennel begins to soften, about 5 minutes. Add the reserved grated tomato flesh and cook, stirring, until slightly thickened, about 2 minutes. Stir in the saffron, then add the wine and simmer until the liquid is reduced by about two-thirds, about 4 minutes. Add the reserved broth and return to a simmer.
  • Add the mussels to the pot; cover and cook 4 minutes. Add any thick pieces of fish and cook, covered, 2 minutes. Add the remaining fish and the shrimp and cook, covered, until the mussels open and the fish and shrimp are just cooked through, 3 to 4 more minutes. (Discard any mussels that do not open.) Season with salt and pepper.
  • Spread the baguette with the rouille and serve with the bouillabaisse. Sprinkle with parsley.

¾ cup olive oil
2 onions, thinly sliced
2 leeks, sliced
3 tomatoes - peeled, seeded and chopped

1 sprig fennel leaf
1 sprig fresh thyme

¾ pound mussels, cleaned and debearded
9 cups boiling water
salt and pepper to taste
5 pounds sea bass
1 pinch saffron threads
¾ pound fresh shrimp, peeled and deveined

Steps:

  • Heat the olive oil in a large saucepan, and add the onions, leeks, chopped tomatoes, and garlic. Cook and stir over a low heat for a few minutes until all vegetables are soft.
  • Stir in the fennel, thyme, bay leaf, and orange zest. Add shellfish and boiling water; stir to combine. Season to taste with salt and black pepper. Turn up the heat to high, and boil for about 3 minutes to allow the oil and water to combine.
  • Add fish, and reduce the heat to medium. Continue cooking for 12 to 15 minutes, or until fish is cooked. The fish should be opaque and tender, but still firm. Fish should not be falling apart.
  • Taste the bouillabaisse and adjust the seasoning. Stir in saffron, and then pour soup into a warmed tureen or soup dishes. Serve immediately.

Make this classic French fish soup at a dinner party for friends and family. It's a challenge, but will make an impressive starter or main course

1 leek, green top left whole, white finely sliced
small bunch fresh thyme
3 bay leaves
bunch parsley, stalks whole, leaves roughly chopped
2 strips of orange peel
1 mild red chilli
4 tbsp olive oil
2 onions, chopped
1 leek
1 fennel, fronds picked and reserved, fennel chopped
4 garlic cloves, minced
1 tbsp tomato purée
1 star anise
2 tbsp Pernod, optional, if you have it
4 large, ripe tomatoes, chopped
large pinch (⅓ tsp) saffron strands
1 ½l fish stock
100g potato, one peeled piece
1kg of filleted mixed Mediterranean fish, each fillet cut into large chunks. (We used a mix of red and grey mullet, monkfish, John Dory and gurnard)
300g mussels, optional
2 garlic cloves
1 small chunk of red chilli (optional)
small pinch saffron
1 piece of potato, cooked in the broth, (see above)
1 egg yolk
100ml olive oil
1 tbsp lemon juice
½ baguette, thinly sliced
1 tbsp olive oil

Steps:

  • To make the croutons heat oven to 200C/180C fan/gas 6. Lay the slices of bread on a flat baking tray in a single layer, drizzle with olive oil and bake for 15 mins until golden and crisp. Set aside - can be made a day ahead and kept in an airtight container.
  • Use a layer of the green part of the leek to wrap around and make a herb bundle with the thyme, bay, parsley stalks, orange peel and chilli. Tie everything together with kitchen string and set aside.
  • Heat the oil in a very large casserole dish or stock pot and throw in the onion, sliced leek and fennel and cook for about 10 mins until softened. Stir through the garlic and cook for 2 mins more, then add the herb bundle, tomato purée, star anise, Pernod if using, chopped tomatoes and saffron. Simmer and stir for a minute or two then pour over the fish stock. Season with salt and pepper, bring to a simmer, then add the piece of potato. Bubble everything gently for 30 mins until you have a thin tomatoey soup. When that piece of potato is on the brink of collapse, fish it out and set aside to make the rouille.
  • While the broth is simmering make the rouille by crushing the garlic, chilli and saffron with a pinch of salt in a mortar with a pestle. Mash in the cooked potato to make a sticky paste then whisk in the egg yolk and, very gradually, the olive oil until you make a mayonnaise-like sauce. Stir in the lemon juice and set aside.
  • Once the chunky tomato broth has cooked you have two options: for a rustic bouillabaisse, simply poach your fish in it along with the mussels, if you're using (just until they open) and serve. For a refined version, remove the herb bundle and star anise. Using a handheld or table-top blender, blitz the soup until smooth. Pass the soup through a sieve into a large, clean pan and bring to a gentle simmer. Starting with the densest fish, add the chunks to the broth and cook for 1 min before adding the next type. With the fish we used, the order was: monkfish, John Dory, grey mullet, snapper. When all the fish is in, scatter over the mussels, if using, and simmer everything for about 5 mins until just cooked and the mussels have opened.
  • Use a slotted spoon to carefully scoop the fish and mussels out onto a warmed serving platter, moisten with just a little broth and scatter over the chopped parsley. Bring everything to the table. Some people eat it as two courses, serving the broth with croutons and rouille first, then the fish spooned into the same bowl. Others simply serve it as a fish stew. Whichever way you choose the rouille is there to be stirred into the broth to thicken and give it a kick.

You can leave the shrimp and lobster in the shell for more flavor to be added to the stew. If you do make recipe #147961 do add the shells from the lobster and crab. I do favor the Alternative method in that recipe. This can be made the day before. All the fish is optional and interchangeable.

Steps:

  • Add saffron to sherry set aside.
  • Cut fish into bite size pieces.
  • Scrub clams and mussels.
  • In a large stock pot heat oil. Saute onions, shallots, carrot, fennel, and garlic in oil on low heat until lightly golden.
  • Add all liquids and seasonings including the saffron infused sherry.
  • Bring to just a boil. Lower heat and simmer 15 minutes. Add all seafood adding squid last, mix and simmer 10 minutes.
  • Serve hot in large bowls.
  • Top with garnishes.
  • Serve with crusty bread, and a tossed salad.

THE LADY'S BOUILLABAISSE

This dish is a specialty of the South of France, but living or visiting on the coast of Georgia you are quite likely to see it offered on menus. I hope you enjoy The Lady & Sons' version of this wonderful French dish. Feel free to add any of your favorite shellfish to the pot.

2 pounds mussels
2 cups water
2 pounds firm fresh fish fillets such as grouper or striped bass (ask your local fishmonger for additional suggestions)
3/4 cup olive oil
1 1/2 tablespoons finely chopped garlic
1 1/2 cups chopped onions
5 Roma tomatoes, peeled and sliced, or 2 cups canned Italian tomatoes
2 teaspoons fennel seed
1/4 teaspoon saffron
1 tablespoon, plus 1/2 teaspoon kosher salt
1 1/2 teaspoons freshly ground pepper
5 cups boiling water
One 8-ounce bottle clam juice
4 whole crabs, cut in half
1 pound unpeeled shrimp
1 loaf French bread

Steps:

  • Wash and scrub the mussels in cold water. Bring 2 cups of water to a boil in a large, heavy pot. Add the mussels and cover the pot. Steam for 6 to 8 minutes, or until the mussels open. Discard any mussels that didn't open. Remove from the heat and set aside. Cut the fish into 1-inch thick slices. Heat the oil in a large pot. Add the garlic, onions, tomatoes, fennel, saffron, salt, and pepper. Add the boiling water and clam juice. Bring to a rolling boil, add the crabs and fish, and continue to boil for 6 to 8 minutes. Add the mussels and their broth to the pot along with the shrimp, and boil for an additional 5 minutes.
  • Slice the French bread, butter it, and toast lightly. Serve the bouillabaisse in large individual bowls lined with toasted French bread; pile in the seafood and ladle the broth over it. Top each bowl with 1 tablespoon of butter. Pass the remaining bread at the table. If you like a spicier soup you may add a couple of whole hot peppers to the pot at the start of cooking.

2 tablespoons butter
2 onions, peeled and chopped
2 garlic cloves, peeled and minced
2 tablespoons flour
2 cups tomato puree (canned is fine)
2 cups water
8 cloves
3 bay leaves
1 1/2 teaspoons curry powder
1/2 cup sherry wine
1 dash Tabasco sauce
1 teaspoon salt
4 lbs fish fillets (red snapper or redfish recommended)
1 1/2 quarts water, boiling
hot buttered toast

Steps:

  • Cut mushrooms into thin slices and allow to stand until needed.
  • Melt butter; saute onions, garlic and flour until golden brown.
  • Add tomato pulp and 2 cups of water, 4 cloves, bay leaves, curry, 1/4 cup of sherry and Tabasco sauce.
  • Simmer for 30 minutes.
  • Season with salt.
  • While sauce is simmering, cook fish fillets in simmering water with 4 cloves and remainder of sherry for 15 minutes.
  • Combine mushrooms and sauce with fish and cook for five minutes.
  • Remove pieces of fish from sauce, place on buttered toast on a large platter; pour sauce over fish and serve.

This soup is from Provence, where many hearty soups that feature potatoes, saffron, and a poached egg are referred to as bouillabaisse. This recipe is from the vegetarian cookbook Mediterranean Harvest.

16 cups water
kosher salt
2 1/2 lbs spinach, stemmed
1 tablespoon extra virgin olive oil, plus extra for drizzling
2 leeks, white and light green parts only sliced
4 -6 garlic cloves, minced
1 lb red potatoes, sliced
1 bouquet garni, made with bay leaf and thyme and parsley
1 pinch saffron
fresh ground black pepper
4 large eggs
4 slices bread, thick slices, toasted and rubbed with garlic
1/2 cup gruyere cheese, grated

Steps:

  • Bring the water to a boil in a large pot. Add 1 T salt and the spinach. Blanch just until wilted, less than a minute. Using a slotted spoon, transfer the spinach to a bowl of cold water. Let sit for a couple of minutes, drain, and squeeze out the water. Chop coarsely and set aside. Measure out 6 c of the cooking water and set aside.
  • Heat 1 T olive oil in a large, heavy soup pot over medium heat and add the leeks. Cook, stirring often, until tender and translucent, about 5 minutes, and add the garlic. Cook, stirring, for another minute or so, until fragrant.
  • Add the spinach and stir together for a few seconds, then add the potatoes, the 6 c reserved blanching water, and the bouquet garni. Bring to a boil and crumble in the saffron.
  • Reduce the heat to a simmer, cover, and simmer for 15 minutes, or until the potatoes are tender. Taste and adjust salt. Add pepper. Discard the bouquet garni.
  • Have the soup at a bare simmer. One by one, break each egg into a teacup, then tip into the soup. Poach the eggs for 4-5 minutes, until just set.
  • Place a crouton in each bowl and, using a slotted spoon, scoop out a poached egg and place it on top. Ladle the soup into the bowls. Sprinkle on the cheese and drizzle on a little olive oil. Serve.

1/4 cup olive oil
3 stalks celery, chopped 1/2-inch dice
2 medium onions, chopped 1/2-inch dice
1 green bell pepper, chopped 1/2-inch dice
4 garlic cloves, minced
1 teaspoon dried thyme
2 bay leaves
4 cups crushed tomatoes (fresh or canned)
1 cup bottled clam juice
1/2 teaspoon fennel seed
saffron, 1 large pinch
salt and pepper
2 tablespoons chopped parsley
1 1/2 lbs mussels or 1 1/2 lbs clams
1 lb shrimp
1 lb scallops
1 lb red snapper or 1 lb cod
1 cup dry white wine

Steps:

  • Heat oil in a Dutch oven. Add chopped vegetables with.
  • garlic, thyme and bay leaves. Cook 5 minutes.
  • Add tomatoes, clam juice,wine, fennel seed, saffron, salt, pepper and parsley. Simmer15 minutes.
  • Add the scrubbed mussels (make sure beard is removed), shelled shrimp, scallops (cut in half) and the fish (cut in chunks). Cook 15 minutes longer and be careful when you stir it that you don't break up fish. Serve up Bouillabaisse in soup plates with hot French bread.

1 cup chopped yellow onion
3 cloves garlic, minced
3 tablespoons all-purpose flour
1/2 teaspoon curry powder
1/2 teaspoon ground cloves
2 tablespoons brown sugar
1/8 teaspoon saffron thread, crumbled
1 teaspoon salt
pepper, to taste
1 (46 ounce) can tomato juice
1/2 teaspoon Tabasco sauce, to taste
1 (6 1/2 ounce) can minced clams, with juice
1/4 cup dry white wine
1/4 cup chopped fresh parsley
1/2 lb large shrimp, peeled and deveined
1/2 lb crabmeat
1/2 lb scallops (if they are large, cut them in half)
1 1/2 lbs flounder or 1 1/2 lbs cod, cut into bite size pieces

Steps:

  • In a large oven-proof dutch oven, melt the butter over medium heat.
  • Add in the onion and garlic, stir/saute for 5 minutes or until tender.
  • Add in flour, stir to blend.
  • Add in curry, cloves, sugar, saffron, salt, and pepper; stir to combine.
  • Add in tomato juice and Tabasco; stir constantly and bring to a boil.
  • Lower the heat and add clams with their juice, wine, and parsley.
  • Simmer for 10 minutes.
  • Add in the remaining seafood and bake in a 375° oven, uncovered, for about 20 minutes or until the fish flakes.
