PEACH SAUCE
Make this up in advance for sourdough pancakes. I used Celestial Seasonings® tea. Substitute water for tea if you don't have it on hand. Chopped pecans might taste good in this, as well as brandy instead of vanilla.

FRESH PEACH SUNDAE SAUCE
Found this one on the recipe wall at Wilson Farms in Lexington MA. I haven't tried this yet (I haven't come across good fresh peaches lately), but I definitely intend to. If you prefer, the oj can be subbed with orange liqueur or peach brandy.

Steps:
- In a 2-quart saucepan, stir together the sugar, cornstarch, nutmeg and cinnamon. Mix in the water and juice. Bring this to a boil over medium heat, stirring constantly. Reduce heat and simmer for one minute.
- Stir in the peaches and continue simmering for 4 to 5 minutes, stirring occasionally, until peaches soften slightly. Remove from heat. Because the peaches will continue to cook in the hot syrup, you don't want to overcook them while pan is on the heat.
- Serve warm or cold over ice cream.
HOMEMADE PEACH BARBECUE SAUCE
Homemade barbecue sauce made with fresh peaches is always a hit in our home. This one uses ripe peaches with a hint of cinnamon and just a touch of heat from smoked paprika. It's seriously good barbecue sauce!

Steps:
- Pulse your peaches in a food processor until chunky or smooth, depending how you like your sauce. Set aside.
- In a large saucepan melt the butter over medium heat. As it starts to glisten add the shallots and cook those until the start to go golden brown. This will take 5 to 10 minutes depending on your heat and the size of the pan you use. Once they are almost golden add the garlic. Allow to cook for about 1 to 2 more minutes.
- Now you can add the spices, ketchup, brown sugar, and peaches. Cook until it comes to a boil.
- Add the worcestershire sauce and the lemon juice, stir and bring back to a boil. Let it boil for about a minute or two, stir, then reduce to a simmer. Let it simmer for about 20 to 30 minutes. Give it a stir here and there.
- Swipe it over everything you can get your hands on!
- You can store the surplus in glass jars in the fridge for a couple of weeks.
- Great on chicken, fish and pork.

- Season pork chops liberally with salt and pepper on both sides. Place flour in a shallow dish. Working with one pork chop at a time, dredge lightly in flour, shaking off excess; transfer to a tray.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the butter. When the butter is foamy, add the pork chops to the skillet, working in batches, if necessary, so that you don’t overcrowd the pan. Cook until nicely browned on each side and the meat reaches an internal temperature of 140-145° F, about 6-9 minutes per side for thick-cut chops or about 2-3 minutes per side for thin chops. Remove pork chops to a plate and tent loosely with foil to keep warm.
- Do not clean out the skillet, but add remaining 1 tablespoon of olive oil to the pan. Add onion and cook over medium-high heat until soft, about 3-5 minutes. Stir in garlic, rosemary, thyme, basil and ginger; cook for about 30 more seconds.

Add yolk mixture to cream mixture in saucepan. Cook and stir about 5 minutes more or until mixture is slightly thickened and coats the back of a metal spoon. Remove from heat. Transfer to a large bowl; cover and cool for 30 minutes. Stir in vanilla.
- Cover and chill for 4 to 24 hours. Stir in the 2 cups chilled peach puree. Freeze mixture in a 4- or 5-quart ice cream freezer according to the manufacturer's directions. Ripen at least 4 hours. If desired, serve ice cream with Chocolate-Peach Sauce.
