Pasta Rustica With Chicken Sausage and Three Cheeses image

I made this very nice recipe for my aunt and myself from the Williams-Sonoma "Chicken" cookbook and we enjoyed it very much. I cheated and used stewed tomatoes because I was in a hurry and this seemed to work fine.

2 tablespoons olive oil
1 yellow onion, chopped
2 cloves garlic, minced
1 lb chicken sausage, casings removed (can also use turkey sausage)
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon hot red pepper flakes
1 (28 ounce) can tomatoes in puree, tomatoes coarsely chopped and puree reserved
1 cup water
salt, to taste
1 lb penne (or other tube shaped pasta)
2 cups ricotta cheese
2 cups Fontina cheese, shredded (can also use mozzarella)
1/2 cup grated parmesan cheese

Steps:

  • In a large Dutch oven, heat the oil over medium heat. Add the onion and cook until golden, about 5 minutes.
  • Add the garlic and cook, stirring, for 1 minute.
  • Add the sausage and cook, breaking it up into bite-sized pieces with the side of a spoon, until the sausage loses its pink color, about 6 minutes.
  • Stir in the basil, oregano, and red pepper flakes.
  • Add the tomatoes with their puree and the water and bring to a boil.
  • Reduce the heat to medium-low and simmer uncovered, stirring occasionally, until slightly thickened, about 30 minutes. Taste and adjust the seasoning.
  • Preheat the oven to 350°F Lightly oil a shallow 3-quart (3-l) baking dish.
  • Bring a large pot three-fourths full of water to a boil. Salt the water, add the pasta, stir well, and cook until barely al dente, about 10-12 minutes. Do not overcook. Drain well.
  • In a large bowl, toss the pasta with the sauce, ricotta, and fontina cheese. Spread in the prepared baking dish and sprinkle with the Parmesan.
  • Bake until the cheeses are melted and the tips of the pasta are crusty, about 30 minutes. Remove from the oven and let stand for 5 minutes.
  • Serve hot.

2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 lb Italian sausage, crumbled
2 teaspoons dried basil
1 teaspoon dried oregano
1 teaspoon dried marjoram
1/4 teaspoon crushed red pepper flakes
1 (28 ounce) can diced tomato puree (Puree reserved)
1 cup water
salt
1 lb ziti pasta
2 cups low fat cottage cheese
2 cups shredded mozzarella cheese or 2 cups Fontina cheese
1/2 cup grated parmesan cheese

Steps:

  • Cook and drain the pasta.
  • Brown the onions in the oil for about 5 minutes.
  • Add the garlic and cook 1 minute more.
  • Break the sausage into small pieces and crumble over the onion.
  • Brown thoroughly, so no pink remains.
  • Add the herbs, pepper flakes, tomatoes, puree, and water.
  • Bring to a boil.
  • Reduce heat to med-low and simmer for 30 minutes, until thickened.
  • Do no not cover.
  • Taste and add salt as necessary.
  • Mix together the pasta, cottage cheese, mozzarella, and the sauce.
  • Spread into a greased casserole dish and top with Parmesan Bake in a 350 oven for 30 minutes.

1 (12 ounce) package rotini pasta
1 pound bulk Italian sausage
1 small onion, chopped
2 cloves garlic, minced
1 red bell peppers, chopped
1 small zucchini, chopped
1 small yellow squash, chopped
1 cup mushrooms, sliced
salt and pepper to taste
1 (14.4 ounce) can diced tomatoes
1 cup tomato sauce
¼ teaspoon dried thyme
¼ teaspoon dried basil
¼ teaspoon dried oregano
1 cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook until al dente, 8 to 10 minutes; drain.
  • Brown the sausage, stirring to crumble, in a skillet over medium heat. Remove sausage using a slotted spoon, leaving drippings in the pan. Cook and stir the onion and garlic in the sausage drippings until the onions are softened. Return the sausage to the pan. Stir in the red bell pepper, zucchini, yellow squash, and mushrooms. Season with salt and pepper. Cook another 5 minutes. Add the tomatoes, tomato sauce, thyme, basil, and oregano; cook until heated through, about 5 minutes.
  • Combine the drained pasta with the sausage mixture in a large bowl. Top with Parmesan cheese to serve.

½ cup extra virgin olive oil
2 medium onions, chopped

Steps:

This was a dish that was served at an Italian restaurant that is no longer in business. I am not sure how I got this recipe, but it is great.

8 ounces penne pasta
6 slices bacon, cut into 1/2 inch pieces
1 lb boneless chicken breast, cut into bite size pieces
1/4 cup flour (enough to coat chicken)
1 medium Spanish onion, peeled and thinly sliced
2 garlic cloves, peeled and minced
1/3 cup virgin olive oil
salt and pepper
3/4 cup parmesan cheese
2 tablespoons fresh parsley, chopped

Steps:

  • Cook pasta in a large pot of boiling salted water according to package instructions.
  • Heat a large saute pan on high heat. when hot, add bacon, stirring often. When bacon is browned, remove from pan and save some of the fat in the pan.
  • Coat the chicken lightly with flour and saute on medium heat in remaining bacon fat until cooked through, add onions and garlic, and cook stirring often for 2 to 3 minutes.
  • Add olive oil, salt and pepper to taste and bacon.
  • Drain pasta, but do not rinse. The starch clinging to the pasta will help bind the sauce. Add to the above ingredients. Stir in parmesan and parsley.

While surfing Pinterest one day, I stumbled upon this recipe that sounded so good and comforting. The Gouda cheese puts this one over the top creamy and rich. Don't forget the nutmeg!!! I served this with homemade Bruschetta but a side salad would be perfect too.

4 ounces sharp cheddar cheese
4 ounces mozzarella cheese
1 1/2 ounces gouda cheese
1/2 onion, small dice
2 garlic cloves, minced
1 tablespoon butter
1 tablespoon flour
1 cup skim milk
14 1/2 ounces low sodium chicken broth
2 Italian sausages
1 pinch nutmeg
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 lb gemelli pasta

Steps:

  • Bring a large pot of slightly salted water to boil. Add the pasta once it is boiling and cook until the pasta is just under al dente (slightly resistant still). Preheat the over to 350 degrees.
  • Shred all the cheeses and set aside. Begin to cook the sausage by heating a small skillet to medium heat & removing the meat from the casing. Use a wooden spoon to break apart the sausage for even cooking.
  • In a medium saucepan, melt the butter over medium heat then add the onion. Saute until translucent and very fragrant about 5 minutes. Add the garlic and cook an additional minute.
  • Mix in the flour, let it cook for about 30 seconds.
  • Add the chicken stock & milk, continuously whisking. SLOWLY add the 3 cheeses to the mixture about a small handful at a time. Add the next bit once the previous is completely melted and creamy within the liquid. When all the cheese is added reduce the heat to low and stir in the nutmeg, salt and pepper.
  • In a baking dish, combine the cooked pasta, sausage, and cheese sauce.
  • Bake in the oven for about 10 minutes. Remove and garnish with chopped parsley.
