1-1/2 cups fresh or frozen cranberries
1 medium navel orange, peeled, chopped and seeded
1 medium tangerine, peeled, chopped and seeded
1/2 cup raisins
1/2 cup reduced-calorie pancake syrup
1/2 cup orange marmalade
1/2 cup orange juice
2 teaspoons ground allspice

Steps:

  • In a saucepan, combine all of the ingredients. Bring to a boil over medium heat. Reduce heat; cook, uncovered, for 15 minutes, stirring occasionally. Cover and refrigerate for 4 hours or overnight. Store in the refrigerator.

1 1/2 navel orange
3 lemons
3 tablespoons sugar
1 tablespoon olive oil
1 teaspoon kosher salt
1/4 cup parsley leaves
Flaky sea salt (such as Maldon)

Steps:

  • Slice 1/2 pink grapefruit, 1/2 navel orange, and 1 lemon crosswise into paper-thin rounds; remove seeds. Toss in a medium bowl with 3 tablespoons sugar, 1 tablespoon olive oil, and 1 teaspoon kosher salt. Roast on a parchment-lined baking sheet in a 350° oven until golden in spots and crisp, 20-30 minutes; let cool.
  • Meanwhile, cut all peel and white pith from 1 pink grapefruit, 1 navel orange, and 2 lemons. 3/4 cup orange marmalade
1 tablespoon lemon juice
3/4 cup pecans or 3/4 cup walnuts (I toast them in the oven)

Steps:

  • Heat oven to 350 degrees Put cranberries in baking dish and sprinkle with the sugar, cover with aluminum foil and bake for 35 minutes.
  • Take out of the oven and mix in the pecans or walnuts and put back into the oven for 10 more minutes.
  • Take out and mix in the orange marmalade and the lemon juice and it is ready to serve!

I've been making this for years, and is such a refreshing change from the standard canned cranberry sauce served on holiday tables. It comes together quickly with a food processor. Goes great with turkey or ham, and is especially good on turkey sandwiches! I'm guessing on the quantity this recipe serves, It's enough to make a large serving bowl, and fill 3 jars to give away too! Cooking time is just for boiling water. Hope you enjoy this beautiful addition to your Thanksgiving and Christmas buffet! (don't worry, the orange rind will not be tart, as there is substantial sugar!)

1 (12 ounce) package fresh cranberries, rinsed
1 cup red seedless grapes
20 ounces crushed pineapple (with juice)
1 1/2 cups sugar
1 whole orange (WITH rind)
1 (6 ounce) box cherry gelatin or 1 (6 ounce) box raspberry Jell-O gelatin
1 1/2 cups boiling water

Steps:

  • Cut the orange into 8 sections, then place in a food processor, grind to small chunks.
  • Add cranberries, and continue grinding to small pieces.
  • Add grapes and grind all to very fine bits.
  • Remove mixture from processor, and reserve in large bowl, stirring in sugar to blend.
  • In a separate bowl, dissolve cherry gelatine in boiling water.
  • Add to ground cranberry mixture.
  • Add pineapple (including juice) and stir well to combine.
  • Pour into serving bowl (or jars, if giving away as gifts) and cover and store in refrigerator overnight to set (can also be frozen).

I was intrigued by the idea of a cranberry dish where you didn't cook the cranberries so I decided to try this for our Thanksgiving dinner - I loved it - couldn't stop eating it and neither could the others. Try it - the fresh flavors are wonderful! Although it's not cooked the dish must sit for awhile so I put that under the cook time.
