115 ml crème fraîche
1 teaspoon Dijon mustard
1 handful of parsley leaves, chopped
8 tablespoons best-quality extra virgin olive oil

Steps:

  • Put all your ingredients into a jam jar with some sea salt and black pepper. Shake, taste and season again if needed until your dressing is perfect. You may need to add a little more vinegar or oil to balance it.

1/2 cup vegetable oil
1 cup ketchup
1/2-3/4 cup sugar (start with 1/2 cup)
1/2 cup white vinegar
1/3 cup minced yellow onion
2 teaspoons lemon juice
1 teaspoon paprika
1/2-1 teaspoon garlic salt (or to taste or use 1-2 teaspoons fresh minced garlic and 1/2 teaspoon white salt)
1/2 teaspoon fresh ground black pepper (optional or to taste)
2 -3 tablespoons mayonnaise (optional, add in only for a creamy-style French dressing)

Steps:

  • In a large food processor blend all ingredients together until smooth (starting with 1/2 teaspoon garlic salt and 1/2 cup sugar and add in more to taste after mixing.
  • Do not attempt to make this in a small 4-cup blender or you will have the dressing all over your counter!
  • Mix in the mayonnaise (if using) for a creamy-style French dressing.
  • Place in the fridge for a couple of hours before serving.

I like to make my dressings in jam jars, because it's so easy to see what's going on and you can shake them up easily. With the exception of the yoghurt dressing, they're all based on a ratio of 3 parts oil to 1 part acid (vinegar or lemon). Generally, this ratio is a really good benchmark for making any dressing, but it's always sensible to have a little taste once you've shaken it up. If the seasoning is there but you're finding it a little too acidic, you've cracked it, because once the dressing is on the salad leaves it will be perfect.

  • LEMON DRESSING
  • Put 6 tablespoons of extra virgin olive oil into a jam jar with a pinch of sea salt and black pepper. Squeeze in the juice of 1 lemon. Put the lid on the jar and shake well.
  • BALSAMIC DRESSING

2 tbsp White Wine Vinegar (Or Red Wine Vinegar or Champagne Vinegar)
6 tbsp Olive Oil (Extra Virgin)
1 teaspoon Dijon Mustard ((you can add more to your liking))
1 teaspoon Maple Syrup (Optional, added here to balance acidity)
1/4 teaspoon Kosher Salt
1/4 teaspoon Freshly Ground Black Pepper

Steps:

  • Peel and finely chop 1 small shallot (2 tablespoons of chopped shallot) and add it to the mason-type jar;
  • Add 2 tablespoons of vinegar (White Wine Vinegar, but you can also use red or champagne vinegar);
  • Add 6 tablespoons of extra virgin olive oil (Tip: to create the best vinaigrette you'll need to keep this proportion of vinegar to oil 1:3);
  • Add a teaspoon of Dijon mustard;
  • Add about a 1/4 teaspoon of salt.
  • Season with freshly ground black pepper;
  • OPTIONAL: add a teaspoon of Maple syrup to balance out acidity;
