FOOLPROOF DARK CHOCOLATE FUDGE
I make this at Christmas, but why not try it any time of year. Summer is not the best time for fudge, especially if it is hot, but this one seems to turn out whenever...enjoy!

Steps:
- Over low heat, melt the chips in the sweetened condensed milk.
- Remove from the heat and stir in the nuts and vanilla.
- Spread evenly into an aluminum foil lined 8x8 or 9x9 pan.
- Chill and pop out of pan.
- Peel off foil and cut into 1-inch squares.

DIVINITY FUDGE
My mother was known for her divinty and this recipe always came out perfectly. It melts in your mouth and is a holiday favorite. Also, this makes a great gift.

Steps:
- Stir the first four ingredients together in a saucepan over low heat until the sugar is dissolved.
- Boil without stirring to 265 degrees on a candy thermometer or until a little mixture that is dropped in cold water forms a hard, almost brittle ball.
- Remove syrup from heat and slowly pour over stiffly beaten egg whites, while beating with a mixer until mixture loses its gloss and a small amount that is dropped from a spoon holds its shape.
- Fold in nuts and vanilla.
- Pour into a greased 9"x9"x2" pan or drop by spoonfuls onto waxed paper to cool.
- Store in tins.

- Turn fudge onto cutting board; peel off paper and cut into squares.
- Store covered in refrigerator.
- Notes: Microwave:.
- In 1-quart glass measure, combine chocolate chips with EAGLE BRAND® and salt.
- Cook on HIGH (100% power) 3 minutes or until chips melt, stirring after 1 1/2 minutes.

- Creamy Dark Chocolate Fudge:
- Melt 2 cups miniature marshmallows with chocolate chips and EAGLE BRAND®.
- Proceed as above.
- Milk Chocolate Fudge: Omit 1 cup semi-sweet chocolate chips.
- Add 1 cup milk chocolate chips. Proceed as above.
- Rocky Road Fudge:
- Omit 1 cup semi-sweet chocolate chips, salt, nuts and vanilla.
- In saucepan, melt chocolate chips with EAGLE BRAND® and 2 tablespoons butter or margarine.
- In large bowl, combine 2 cups dry-roasted peanuts and 1 (10 1/2-ounce) package miniature marshmallows.
- Stir in chocolate mixture.
- Spread in wax paper-lined 13x9-inch pan. Proceed as above. (Makes about 2 3/4 pounds).

FOOL YOU FUDGE
A simple never-fail fudge that is easy to make and is so rich and velvety that it'll fool you into thinking it was from a gourmet candy shoppe. I adapted this from a recipe my mom used and passed on to me several years ago. I love this recipe because you can put a variety of nuts and/or dried fruits ( i.e. finely chopped cranberries, cherries and of course, raisins) in it so you can make it for any occasion. It also works well with any kind of chips/morsels you want to use,( i.e. butterscotch, white chocolate, even special dark chocolate chips, yum....) just be sure to buy a quality chocolate to begin with like Ghirardelli chips, which are my personal favorite and found in most grocery stores. You'll also want to make sure you use a good butter and not margarine, although the recipe will work with it the fudge won't taste as rich and creamy.

- In a medium heavy saucepan (glass saucepans work best, but any kind will do) combine the sugar, salt, butter and evaporated milk over medium heat.
- Stir the mixture constantly until it comes to a boil.
- Continue constantly stirring and let the mixture boil for about 5 minutes.
- Remove the mixture from the heat and stir in the marshmallows, chocolate chips and vanilla. Now is also the time to add any of the nuts and/or dried fruits you want.
- Stir the mixture vigorously for a minute or until the marshmallows have all melted and the fudge becomes a nice chocolate color.
- Quickly pour the fudge into a foil-lined bread loaf pan and place it into the refrigerator overnight or until it is firm and fully chilled. Note : You can also pour the fudge into a foil-lined 8-inch square pan.
- To slice, take the fudge out of the refrigerator and tip the pan upside-down to remove the foil. Then, let the fudge slab stand for 15-30 minutes or until it softens slightly but is still cold. (You don't need to let the fudge soften if you use the 8-inch square pan, just slice it into 1 1/2 inch squares.) Slice into 1 inch thick slabs, wrap with wax paper and share with family and friends!
