2 tablespoons olive oil
2 cloves garlic, peeled and crushed (more if you want!)
350 g cherry tomatoes, halved
200 ml vegetable stock
15 g butter
1 tablespoon chopped fresh basil
200 g monkfish fillets, cubed
12 raw tiger shrimp
fresh ground black pepper
250 g pappardelle pasta or 250 g linguine
1 red chile (optional)

Steps:

  • Heat oil in a pan, add the garlic (and chilli) and fry for 1 min.
  • Stil in the tomatoes and stock and simmer for 10 minutes.
  • Stir in the butter and basil and add the monkfish and the prawns to the mixture.
  • season with pepper and cook for 5 minutes until the monkfish is opaque abd the prawns turn pink.
  • meanwhile cook the pappadelle in a large pan of boiling salted water Drain the past and add to the tomato and seafood sauce and serve at once.

Steps:

  • Preheat the oven to 180 degrees.
  • Prepare vegetables; cut tomatoes into medium sized chunks, slice red onion finely. Put vegetables in roasting tray; sprinkle with sugar and half the olive oil, then season with salt & pepper. Put the tray on the middle shelf of the oven for approx. 30 minutes (Ensure that the juices don't evaporate!).
  • Bring a pan of water to the boil; add a pinch of salt then cook pasta as per instructions.
  • Crush garlic. Fry in pan with remaining oil on low heat until fragrant. Add prawns, and lemon juice. Cook for 2 minutes, flipping prawns until they are just pink on both sides, then add the tomato mixture to frying pan. Stir frequently and add just a dash of pasta water to the mixture - this will help thicken it up.
  • Season the prawn & tomatoes with salt and pepper to your taste and cook for a further 4-5 minutes.
  • Drain pasta & add with basil leaves to the tomato mixture. Stir to coat the pasta and serve.

20 large shrimp, deveined with shell and head left on
4 tomatoes, or more to taste
1 bunch flat-leaf parsley, divided
¼ cup extra-virgin olive oil
1 large onion, chopped
1 red bell pepper, chopped
1 fresh red chile pepper, finely chopped
4 large cloves garlic, sliced, or more to taste
½ cup water
2 tablespoons tomato paste
1 tablespoon dried oregano
salt and ground black pepper to taste
1 teaspoon paprika
1 ⅝ pounds spaghetti

Steps:

  • Peel shrimp and place skin, heads, and tails into a large saucepan. Fill pan with water and bring to a boil. Reduce heat to low and let simmer, about 45 minutes.
  • Combine tomatoes and 1/2 the parsley in a blender; puree until smooth.
  • Heat olive oil in a separate pan over medium heat. Add onion, bell pepper, and chile pepper; cook and stir until softened, about 5 minutes. Add garlic; cook until fragrant but not browned, 1 to 2 minutes.
  • Pour pureed tomato mixture into the pan with the peppers. Add water, tomato paste, oregano, salt, and black pepper. Stir well; add paprika. Let sauce simmer on low to medium heat until juices have reduced.
  • Strain shrimp shells from the water. Bring water back to a boil and add spaghetti. Cook spaghetti, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Reserve 1 cup of the cooking water and drain the rest.

It's often called "poor man's lobster" because its firm flesh and delicate, slightly sweet flavor are similar to lobster. Served with a balsamic, garlic, and sun-dried tomato topping, this recipe comes together in a snap.

⅓ cup sun-dried tomatoes with Italian herbs, drained and chopped
3 tablespoons olive oil, divided
2 tablespoons balsamic vinegar
1 tablespoon sun-dried tomato oil
2 cloves garlic, minced

2 (12 ounce) monkfish tail fillets
1 pinch salt and ground black pepper to taste
1 tablespoon butter
2 tablespoons minced fresh parsley

Steps:

  • Combine sun-dried tomatoes, 2 tablespoons olive oil, balsamic vinegar, tomato oil, garlic, and sugar in a small bowl. Toss to coat and set aside.
  • Use a sharp knife to cut the purple translucent membrane away from each fillet. Cut each fillet crosswise into 3 to 4 pieces. Season with salt and pepper.
  • Heat 1 tablespoon olive oil and butter in a large skillet over medium-high heat. Sear monkfish until golden brown, about 3 minutes. Flip and continue cooking until opaque throughout, 2 to 3 minutes more. Reduce heat to low, remove fish to a plate, and cover with aluminum foil to keep warm.

2 teaspoons oil
2 garlic cloves, minced
1 large red chile, de-seeded and finely chopped
300 g peeled headless king prawns
5 shallots, finely chopped
8 cherry tomatoes, sliced in half
1/2 teaspoon black pepper
150 ml chicken stock
125 ml white wine
150 ml double cream
shaved parmesan cheese
fresh basil, chopped

Steps:

  • In a 12 inch frying pan over medium high heat the oil.
  • Add the chilli and garlic and cook for 3 minutes.
  • Add king prawns and cook, turning so they cook evenly on each side, until they are only just pinked through.
  • Lift out the king prawns and put to one side.
  • Add to pan the shallots, tomatoes, black pepper, stock, wine and cream.
  • Simmer on a medium to high heat (do not cover) until reduced, around 10 minutes.
  • Add the king prawns back in, then the basil and stir until heated through.
  • Serve spooned over your favourite type of pasta (fresh pasta is a must), sprinkled with freshly grated parmesan cheese and garlic bread for mopping up the sauce.

1 lb spaghetti
3 tablespoons olive oil
1 lb shrimp, peeled and deveined
2 teaspoons salt
1 ½ teaspoons red pepper flakes
1 small yellow onion
8 cloves garlic, finely chopped, about 3 tablespoons
42 oz canned diced tomato, drained of excess water
1 teaspoon sugar
1 teaspoon dried oregano
1 cup dry white wine
⅓ cup fresh parsley, chopped
4 qt water, salted

Steps:

  • In a 6-quart Dutch oven, bring 4 quarts of salted water to a boil over medium-high heat.
  • Add spaghetti, cooking about 6-7 minutes until al dente. Drain and set aside.
  • Return the Dutch oven to the stovetop and heat 2 tablespoons of olive oil over medium heat.
  • Add the shrimp, salt, and ½ teaspoon of the red pepper flakes. Spread evenly across the bottom of the pot and cook until the bottoms pink and slightly brown, about 45-60 seconds. Flip and repeat until shrimp are just cooked through.
  • Remove the shrimp and place in a small bowl to the side.
  • Reduce heat to medium-low, and add additional 1 tablespoon of oil to the pot, as needed.
  • Add onion and garlic to the oil and cook until onions have softened, about 3-5 minutes. Stir frequently to ensure the garlic does not burn.
  • Add the diced tomatoes, remaining 1 teaspoon of salt, sugar, remaining 1 teaspoon red pepper flakes, oregano, and white wine.
  • Stir and bring the sauce up to a simmer. Simmer for 5-10 minutes until the sauce has thickened.
  • Return the shrimp (and any accumulated juices) to the sauce. Add the parsley, stirring to incorporate.
  • Add the cooked spaghetti back into the pot, toss until evenly coated and heated, then remove from heat. Serve immediately.

Stir then add a pinch of fine salt to taste, cover with the lid and cook over low heat for about 10 minutes.
  • Now remove the garlic and add the monkfish previously cut into pieces. Keep cooking for another 5 minutes so as to cook the fish as well.
  • Meanwhile, boil plenty of water (about 2 liters) in a pot, for the pasta. When it boils, add a tablespoon of coarse salt. Add the pasta (we opted for spaghetti) and cook following the cooking times indicated on the package. Usually it goes from 8 to 12 minutes.
