FLOURLESS CHOCOLATE CAKE WITH DARK CHOCOLATE GLAZE

Flourless Chocolate Cake with Dark Chocolate Glaze image

This luscious, fudgy cake is gluten-free delight - a little goes a long way! Serve with fresh whipped cream and berries, if you like.

Time 1h45m

Yield Serves 12

Number Of Ingredients 8

12 ounces bittersweet chocolate chips or bittersweet chocolate, roughly chopped
1 cup (2 sticks) plus 3 tablespoons butter, roughly chopped
1 1/4 cup sugar
6 eggs
1 cup unsweetened cocoa powder
1 tablespoon milk
1 tablespoon honey
1/4 teaspoon gluten-free pure vanilla extract

Steps:

  • Preheat the oven to 375F.
  • Spray a 9-inch springform pan with nonstick cooking spray, then line the bottom with a circle of parchment paper.
  • Spray the paper with cooking spray, too, then set the pan aside.
  • Place two-thirds (8 ounces) of the chocolate and 1 cup (2 sticks) of the butter in a medium saucepan over medium low heat.
  • Stirring often, melt chocolate with butter until completely blended.
  • Remove from heat and transfer to a large bowl. (Alternatively, you may use your microwave to melt the butter with the chocolate, if desired).
  • Add sugar and mix well.
  • Add eggs one at a time, whisking well after each addition.
  • Sift cocoa into bowl and stir until just blended.
  • Pour batter into prepared pan and bake for 35 to 40 minutes, or until cake has risen and top has formed a thin crust.
  • The cake should be just firm in the center when done.
  • Cool for 10 minutes, then invert onto a plate, removing sides of springform pan.
  • Remove and discard parchment paper and set cake aside to cool completely.
  • Meanwhile, make the chocolate glaze. Melt remaining 4 ounces chocolate and 3 tablespoons butter in a small saucepan over medium low heat, stirring until smooth.
  • Remove from heat, then stir in milk, honey and vanilla.
  • Set aside to cool slightly.
  • When cake has cooled, pour glaze onto the center.
  • Using a spatula or the back of a spoon, very gently smooth glaze along the top and sides of the cake.
  • Chill cake, uncovered, for 30 to 60 minutes before serving to set the glaze and make the cake easier to slice.

1 teaspoon instant coffee
1 teaspoon vanilla
3 eggs (room temperature)
½ cup cocoa powder
½ cup heavy whipping cream

FLOURLESS CHOCOLATE CAKE

Provided by Aaron McCargo Jr.

Categories     dessert

Time 1h

Yield 8 servings

Number Of Ingredients 13

Nonstick butter spray
4 ounces bittersweet chocolate, chopped
1 stick cold butter
1 teaspoon vanilla extract
2 ounces hazelnut liqueur (recommended: Frangelico)
3/4 cup sugar
1/2 cup cocoa powder, sifted
3 eggs, beaten
Chocolate Ganache, recipe follows
Berries, garnish
Powdered sugar, garnish
4 ounces semisweet chocolate, chopped
1/2 cup heavy cream

Steps:

  • Preheat the oven to 375 degrees F. Spray an 8-inch round cake pan with nonstick butter spray and line bottom with parchment.
  • Put the chocolate, butter, vanilla and hazelnut liqueur in a large bowl on top of a double boiler. Stir the mixture frequently until combined and smooth. Remove the chocolate from heat and put the bowl into an "ice bath" to cool the chocolate.
  • Cook's Note: This step is important so the eggs will not cook when added to the chocolate. Mix in the sugar and cocoa powder. Stir in the eggs and pour into the prepared cake pan. Put the cake pan on a sheet tray and bake for 20 to 25 minutes.
  • Remove the cake from the oven and invert onto a rack over a sheet pan lined with parchment paper. Pour the ganache over the cake. Allow the cake to cool and set for 10 minutes before serving. Garnish with fresh berries and powdered sugar.
  • Put the chocolate into a large bowl. Heat the cream in a small pot, over low heat, until hot to the touch. Pour the hot cream over the chocolate. Mix well with a rubber spatula until the chocolate melts.

Yield Makes 12 servings

Number Of Ingredients 18

Brandied cherries:
1 750-ml bottle brandy
1 1/2 cups dried tart cherries
1 cup water
1 cup sugar
Cake:
10 ounces bittersweet or semisweet chocolate, chopped
1 1/4 cups (2 1/2 sticks) unsalted butter, diced
10 large egg yolks
1/2 cup plus 6 tablespoons sugar
2 teaspoons vanilla extract
1/4 teaspoon salt
9 large egg whites
Ganache:
8 ounces bittersweet or semisweet chocolate, chopped
1 cup heavy whipping cream
1 1/2 cups hazelnuts, toasted, coarsely chopped
Whipped cream

Steps:

  • For brandied cherries:
  • Combine brandy and dried cherries in 4-cup glass container with lid. Cover and let soak at room temperature 1 week.
  • Bring 1 cup water and sugar to boil in medium saucepan, stirring until sugar dissolves. Remove from heat and cool syrup. Drain brandy from cherries (reserve brandy for another use). Add sugar syrup to cherries and stir to blend. Let soak at room temperature at least 2 days. DO AHEAD Can be made 2 weeks ahead. Store covered at room temperature.
  • For cake:
  • Position rack in center of oven and preheat to 350°F. Butter 10-inch-diameter springform pan with 2 3/4-inch-high sides. Line bottom of pan with parchment paper round. Place chocolate and 1 1/4 cups butter in medium metal bowl. Set bowl over saucepan of simmering water; stir until mixture is melted and smooth. Remove bowl from over water; cool to lukewarm, about 10 minutes.
  • Using electric mixer, beat egg yolks and 1/2 cup sugar in large bowl until very thick and pale yellow in color, about 5 minutes. Beat in vanilla and salt. Gently fold chocolate mixture into yolk mixture. Using clean dry beaters, beat egg whites and remaining 6 tablespoons sugar in another large bowl until peaks form. Fold 1/3 of beaten whites into chocolate mixture. Fold in remaining whites in 2 additions. Transfer batter to prepared pan.
  • Bake cake until tester inserted into center comes out with moist crumbs attached, about 45 minutes (cake will be puffed and soufflé-like while baking). Cool cake in pan on rack 15 minutes (cake will fall in center). Run knife around cake sides to loosen; press edge of cake down to make level with center. Remove pan sides and cool cake completely. DO AHEAD Can be made 1 day ahead. Cover and store at room temperature.
  • For ganache:
  • Combine chocolate and cream in medium metal bowl. Set bowl over saucepan of simmering water and stir until chocolate is melted and mixture is smooth. Remove bowl from over water; let stand until ganache cools slightly but is still pourable, about 5 minutes.
  • Place cooled cake on rack set over rimmed baking sheet. Pour 1/2 cup ganache over top of cake. Using offset spatula, quickly spread ganache over top and sides of cake. Freeze cake 3 minutes. Pour remaining ganache over top of cake. Working quickly but gently and grasping pan bottom and rack together, slightly tilt rack with cake from side to side, allowing ganache to flow evenly over top and down sides of cake; smooth sides with offset spatula. Press hazelnuts onto sides of cake to adhere. Chill cake until ganache is set, about 1 hour. DO AHEAD Can be made 1 day ahead. Cover with cake dome and keep refrigerated. Let stand at room temperature 45 minutes before serving.
  • Cut cake into wedges. Garnish with whipped cream and spoon brandied cherries alongside.

FLOURLESS CHOCOLATE CAKE WITH CHOCOLATE GANACHE

Flourless Chocolate Cake with Chocolate Ganache image

A rich, flourless cake, perfect for Passover, a gluten-free birthday cake, or just because it's a Tuesday.

Provided by Julie (Bunsen Burner Bakery)

Categories     Sheet Cakes

Time 3h40m

Number Of Ingredients 10

1 cup (175 g) chopped high quality bittersweet or semi-sweet baking chocolate
1/2 cup (113 g) unsalted butter
3/4 cup (150 g) granulated sugar
1/4 teaspoon salt
1 tablespoon vanilla extract
3 large eggs
1/2 cup (43 g) dutch processed cocoa powder
1 cup (175 g) high quality bittersweet chocolate chips
1/2 cup heavy cream
optional: whipped cream, berries, or sliced almonds sprinkled on top

Steps:

  • Preheat oven to 375 °F. Lightly grease a 9" removable bottom tart pan, springform pan, or cake pan. If using a cake pan, cut a piece of parchment paper to fit, place it in the bottom of the pan, and grease the parchment paper.
  • Combine the semisweet chocolate and butter in a large microwave-safe bowl. Heat at 50% power in 1 minute increments until the butter is melted and the chocolate is soft, whisking between each microwave session. Whisk until the chocolate completely melts. Whisk in the sugar, salt, and vanilla. Add in the eggs, whisking until smooth, followed by the cocoa powder. Mix just to combine.
  • Pour the batter into the prepared pan and bake for 20 minutes. The top should be just set, and an instant-read thermometer should register at least 200 °F when inserted into the center of the cake.
  • Remove the cake from the oven and cool in the pan for 5 minutes. Loosen the edges with a knife and remove the sides (tart or springform pan) or invert onto a wire rack (cake pan) to fully cool.
  • Combine the bittersweet chocolate and cream in a microwave-safe bowl and heat until the cream is hot, but not yet simmering. Remove from the microwave and stir with a spoon until the chocolate melts and the mixture is completely smooth. Spoon the ganache over the cake, spreading to almost the edges with an offset spatula. Add berries or sprinkle almonds on the ganache before it sets. Allow the ganache to fully cool before serving.

Provided by Laura

Categories     Dessert

Time 13h

Number Of Ingredients 7

½ cup water
¼ tsp sea salt
¾ cup granulated sugar
18 oz (2 ¼ cups) bittersweet chocolate chips ((or chopped chocolate)*)
1 cup salted butter, (room temperature)
6 eggs, (room temperature)
1 tsp pure vanilla extract

Steps:

  • Preheat oven to 300 degrees F. Grease one 9" round cake pan (or glass pie plate) and set aside. (Note: I always cut a piece of parchment paper into a circle with "handles" and place it on the bottom of the pan. Then I grease the pan with the parchment paper in it).
  • In a small saucepan over medium heat combine the water, salt and sugar. Whisk every 60 seconds until completely dissolved and set aside.
  • Melt the chocolate chips (in the microwave or in a double boiler) and pour into the bowl of a standing mixer.
  • Cut the butter into 1 TBS pieces and beat it into the chocolate, 1 piece at a time.
  • Mix in the warm sugar/water mixture until combined.
  • Slowly beat in the eggs, one at a time until completely smooth.
  • Add vanilla and mix until just combined.
  • Pour the batter into the prepared pan.
  • Put the cake pan in a larger pan and fill the larger pan with boiling water until it reaches halfway up the sides of your cake pan. Be very careful not to get water into the cake! I like to put the pan with the cake in it on the oven rack before pouring the water. That way I just have to slide it in and close the door!
  • Bake cake in the water bath at 300 degrees F for 45 minutes. The center will still look wet, but the edge will look done.
  • Remove the cake from the water bath and let it cool on a wire rack.
  • Chill cake overnight (or for at least 6 hours) in the pan!
  • Carefully lift the parchment paper out of the pan and the cake with it. Put it on a serving plate and sprinkle with powdered sugar! Serve with fresh berries, ice cream, etc!

Yield Serves 10 to 12

Number Of Ingredients 11

For cake
12 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
3/4 cup (1 1/2 sticks) unsalted butter, cut into pieces
6 large eggs, separated
12 tablespoons sugar
2 teaspoons vanilla extract
For glaze
1/2 cup whipping cream
1/2 cup dark corn syrup
9 ounces bittersweet (not unsweetened) or semisweet chocolate, finely chopped
Chocolate shavings or Gold-brushed Chocolate Leaves

Steps:

  • Make cake:
  • Preheat oven to 350°F. Butter 9-inch-diameter springform pan. Line bottom of pan with parchment paper or waxed paper; butter paper. Wrap outside of pan with foil. Stir chocolate and butter in heavy medium saucepan over low heat until melted and smooth. Remove from heat. Cool to lukewarm, stirring often.
  • Using electric mixer, beat egg yolks and 6 tablespoons sugar in large bowl until mixture is very thick and pale, about 3 minutes. Fold lukewarm chocolate mixture into yolk mixture, then fold in vanilla extract. Using clean dry beaters, beat egg whites in another large bowl until soft peaks form. Gradually add remaining 6 tablespoons sugar, beating until medium-firm peaks form. Fold whites into chocolate mixture in 3 additions. Pour batter into prepared pan.
  • Bake cake until top is puffed and cracked and tester inserted into center comes out with some moist crumbs attached, about 50 minutes. Cool cake in pan on rack (cake will fall).
  • Gently press down crusty top to make evenly thick cake. Using small knife, cut around pan sides to loosen cake. Remove pan sides. Place 9-inch-diameter tart pan bottom or cardboard round atop cake. Invert cake onto tart pan bottom. Peel off parchment paper.
  • Make glaze:
  • Bring cream and corn syrup to simmer in medium saucepan. Remove from heat. Add chocolate and whisk until melted and smooth.
  • Place cake on rack set over baking sheet. Spread 1/2 cup glaze smoothly over top and sides of cake. Freeze until almost set, about 3 minutes. Pour remaining glaze over cake; smooth sides and top. Place cake on platter. Chill until glaze is firm, about 1 hour. (Can be made 1 day ahead. Cover with cake dome; store at room temperature.) Garnish with chocolate shavings or leaves. Serve at room temperature.

Categories     dessert

Time 1h50m

Yield 6 to 8 servings

Number Of Ingredients 15

Nonstick cooking spray, for spraying the pan
8 ounces semisweet chocolate
3/4 cup coconut oil
1 1/3 cups almonds
2 cups cooked quinoa
1 cup coconut sugar
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon baking soda
1/2 cup coconut milk
1 teaspoon vanilla extract
4 large eggs
8 ounces semisweet chocolate
1 cup coconut milk
1 cup raspberries, for garnish

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease a 9-inch springform pan with cooking spray.
  • Place a medium saucepot on medium heat and bring 2 1/2 cups of water to a simmer. Place a medium bowl on top of the saucepot and add the semisweet chocolate and coconut oil. Using a heatproof spatula, stir the chocolate until fully melted and combined with the coconut oil, 7 to 10 minutes. Remove the chocolate mixture from the heat and set aside. Leave the saucepot with the water on the stove.
  • Place the almonds in a food processor and grind until a powdery consistency is reached. Transfer the almonds to a large bowl and add the quinoa, coconut sugar, baking powder, cinnamon and baking soda. Stir to combine the dry ingredients, then add the melted chocolate mixture, coconut milk, vanilla and eggs and mix until fully incorporated. Pour the cake batter into the prepared pan and bake until a toothpick or cake tester inserted into the center comes out clean, 50 to 55 minutes. Let cool slightly.
  • For the ganache: Reheat the water in the saucepot over medium heat to bring to a simmer. Place another medium bowl over the water and add the semisweet chocolate and coconut milk. Using a heatproof spatula, stir the chocolate until fully melted and combined with the coconut milk.
  • Drizzle the ganache over the cake, top with raspberries and serve.

  • Place a rack in middle of oven; preheat to 325°. Lightly butter a 9x5" loaf pan; line with parchment paper, leaving a generous overhang on long sides. Butter parchment. Combine chocolate and remaining 7 Tbsp. plus 1½ tsp. unsalted butter in a medium bowl and set over a large saucepan of simmering water (do not let bottom of bowl touch water). Heat chocolate and butter, stirring occasionally, until melted and smooth. Remove bowl from heat and set chocolate mixture aside.
  • Pulse pecans in a food processor until somewhat finely ground (it’s okay if there are some coarser pieces). Pulse in almond meal and salt; set aside.
  • Beat eggs in the bowl of a stand mixer fitted with the whisk attachment on medium-high speed until fluffy, about 2 minutes. With the motor running, gradually stream in sugar and beat until mixture is very pale and nearly doubled in volume, about 1 minute. Stream in reserved chocolate mixture and beat until no streaks remain. Remove bowl from mixer and fold in reserved pecan mixture with a rubber spatula, making sure to scrape bottom of bowl, until well incorporated. Pour batter into prepared pan and tap pan on counter to remove any air bubbles.
  • Bake cake, rotating pan halfway through, until a tester inserted into the center comes out with just a few moist crumbs attached, about 1 hour. Transfer to a wire rack and let cool in pan.

  • Preheat oven to 350°F (177°C). Make sure you have a bottom oven rack and a center oven rack in place for step 5. Grease an 8-inch round cake pan, line with a parchment paper round, then grease the parchment paper. Parchment paper helps the cake seamlessly release from the pan. The cake WILL stick unless it’s lined and generously greased. (Trust me!)
  • Cut the butter into pieces so it melts evenly. Place in a large heat-proof bowl. Add chopped chocolate. Melt in 20 second increments in the microwave, stirring after each increment until completely melted and smooth. Let cool for 2-3 minutes. You can use a double boiler for this step if desired.

  • I used a tart pan, with a removable bottom and placed parchment paper around the sides and bottom. (You can also use a springform pan or aluminum cupcake liners.)Apply non-stick cooking spray to the parchment-covered areas and dust with unsweetened cocoa powder. Place the prepared cake pan in a baking sheet, for stability and ease of placing in the oven. (Both of these steps are not necessary when using cupcake liners.)
  • Prepare a double broiler. Put about 1" of water in a small saucepan and place at medium-low heat. In a glass bowl that will fit at the top, place the two sticks of salted butter, 18oz. of chocolate, and 1/4 cup of water. Stir until the chocolate has completely melted. Remove the bowl from heat. Set a timer to allow this to cool for 10 minutes.
  • Place the chocolate chips or cut chocolate pieces in a large bowl.Heat the whipping cream in a saucepan, at medium heat, until small bubbles form around the edge of the cream.Pour the warm heavy cream over the chocolate. Allow to sit for about 30 seconds. Whisk the ingredients for about 2 minutes, by hand. The end result is gorgeous, glossy ganache. You can save the extra ganache in an sealed container and refrigerate for up to five days.
  • After the ganache is drizzled, I placed fresh berries and dusted the entire cake with powdered sugar. It's easy to serve, and because it's so decadent, a little slice goes a long way.
