Pineapple Cake Truffles image

These adorable cake truffles are flavored with coconut and pineapple -- just a bite will transport you to the tropics. Starting with store-bought pound cake and frosting lets you get right to the best part: decorating!

One 11.5-ounce all-butter pound cake
1/2 cup unsweetened finely shredded coconut flakes
1/3 cup vanilla frosting
2 tablespoons pineapple juice
1/2 teaspoon coconut extract
16 ounces yellow candy melting wafers
6 teaspoons coconut oil
5 mini green pull-and-peel licorice twists, such as Twizzlers

Steps:

  • Line 2 baking sheets with parchment and position a rack on top of one. Set aside.
  • Crumble the cake in a large bowl. Add the coconut flakes, frosting, pineapple juice and coconut extract and mix with your hands until fully combined and smooth.
  • Using damp hands or gloves, scoop out 3 tablespoons of the mixture and form into a compact egg shape (about 2 inches tall by 1 1/2 inches wide). Transfer to the rack on the baking sheet, standing it upright. Repeat until you have 10 eggs total.
  • Add 10 ounces of the candy melting wafers and 5 teaspoons of the coconut oil to a medium microwave-safe liquid measuring cup. Microwave in 30-second intervals, stirring in between each, until the melting wafers and coconut oil are melted and the mixture is smooth, about 3 minutes.
  • Pour the mixture over the cake truffles to coat completely. As soon as the coating has just set, dip a small offset spatula in hot water, wipe clean and slide under each truffle to release. Transfer to the lined baking sheet. Set aside in the freezer while you proceed.
  • Add 4 ounces candy melting wafers and 3/4 teaspoon coconut oil to a small microwave-safe bowl. Microwave in 30-second intervals, stirring in between each, until the melting wafers and coconut oil are melted and the mixture is smooth, about 2 minutes. Transfer to a small piping bag fitted with a small round tip.
  • Lay the truffles on their sides with the bottoms facing you. Pipe the candy mixture in a diagonal crosshatch pattern on the top of each truffle. By the time you finish piping the last one, the first one should be dry. Flip over and pipe a crosshatch on the other side. Stand each truffle upright and put in the freezer.
  • Cut the green licorice twists into batons about 1 3/4 inches long. Peel each string, leaving the base intact, so they look like fronds.
  • Add the remaining 2 ounces candy melting wafers and 1/4 teaspoon coconut oil to a small microwave-safe bowl. Microwave in 30-second intervals, stirring in between each, until the melting wafers and coconut oil are melted and the mixture is smooth, about 1 minute. Dip the fronds into the melted candy and place on top of the pineapple truffles. Freeze until set, about 2 minutes.

FANTASTIC STRAWBERRY-BANANA TRIFLE

This is one of the best trifles, angel food cake, fruit, and then a delicious light whipped fluff in between the layers, this is SO DELICIOUS!!!! This can be completely prepared well in advance and refrigerated until serving which makes this the perfect dessert to serve to guests. You can change the fruit to whatever you like and use whatever flavor pudding mix you like, you could use a chocolate angel food cake instead of the white. Make certain to soak the banana slices in the pineapple juice for about 5-8 minutes so they will not turn brown. This can really be layered anyway you desire, you will get rave reviews when you serve this to family or friends!

1 (12 ounce) container cool whip frozen whipped topping, thawed (or use whipped cream)
1 (8 ounce) container sour cream
1 (9 inch) angel food cake
1 (3 1/2 ounce) package cream cheese flavor instant pudding mix (or use vanilla pudding mix)
3 large kiwi fruits, peeled and sliced
1 pint fresh strawberries, sliced
3 -4 bananas, sliced
2 (15 ounce) cans crushed pineapple (drained, can use one can, I use two!)

Steps:

  • Prepare a large clear glass trifle bowl or a large glass serving bowl.
  • Drain the pineapple then soak the banana slices in the juice for 5-8 minutes before using for the trifle.
  • In a bowl fold the sour cream with the unprepared cream cheese pudding mix and Cool Whip topping until well combined.
  • Using a serrated knife slice the cake into thirds horizontally.
  • Line the large trifle dish with strawberry and kiwi slices (save some strawberry slices to decorate the top of the trifle).
  • Place one layer of the cake into the bottom if the trifle dish, then top with 1/3 of the banana slices and then spoon and spread 1/3 of the crushed pineapple, then 1/3 of the Cool Whip topping mixture.
  • Repeat with the second cake slice, bananas, pineapple then Cool Whip topping.
  • Repeat one more time ending with the Cool Whip mixture on top.
  • Top with the reserved strawberry slices in decorative fashion.
  • Refrigerate until serving.

1 can (14 ounces) pineapple tidbits
2 cups cold 2% milk
2 packages (3.4 ounces each) instant vanilla pudding mix
1 cup sour cream
1 can (11 ounces) mandarin oranges, drained
1 prepared angel food cake (8 to 10 ounces), cut into 1-inch cubes
1 carton (8 ounces) frozen whipped topping, thawed
1/2 teaspoon orange extract
1/3 cup sweetened shredded coconut, toasted

Steps:

  • Drain pineapple, reserving 2/3 cup juice; set pineapple aside. In a large bowl, whisk the milk, pineapple juice and pudding mixes for 2 minutes. Let stand for 2 minutes or until soft-set. Whisk in sour cream; fold in oranges and pineapple., Place a third of the cake cubes in a 3-qt. trifle bowl; top with a third of the pudding mixture. Repeat layers twice. Cover and refrigerate for 3 hours. Combine whipped topping and extract; spread over the top. Sprinkle with coconut.

4 tablespoons vanilla custard powder
4 cups milk
2 tablespoons white sugar
1 fresh pineapple, cut into 1/2-inch pieces
water to cover
1 tablespoon brown sugar
½ teaspoon ground cinnamon
2 (12 ounce) loaves prepared pound cake, crusts trimmed and cut into 1/2-inch squares
1 cup heavy whipping cream, whipped

Steps:

  • Mix custard powder with a few tablespoons cold milk in a bowl.
  • Pour remaining milk into a saucepan, stir in sugar, and bring to a boil over medium heat, about 5 minutes. Remove from heat.
  • Add custard mixture to hot milk, stirring continuously until liquid has thickened. Set aside to cool completely.
  • Place pineapple in a large heavy pan, cover with water, and bring to a boil over medium heat. Remove from heat and allow to cool, about 30 minutes. Strain the juice and set aside. Place pineapple pieces in a bowl.
  • Mix brown sugar and cinnamon together in a small bowl. Sprinkle over pineapple pieces and toss to coat.
  • Layer 1/2 the pound cake in a trifle bowl. Sprinkle with 1 to 2 tablespoons of the reserved pineapple juice. Spread 1/2 the pineapple pieces over the cake. Spoon 1/2 the cooled custard over pineapple. Repeat layers. Spread whipped cream on top and smooth out evenly. Cover and chill in the refrigerator at least 1 hour.

3 packages (3 ounces each) ladyfingers, split

Steps:

  • In a small bowl, beat the ricotta, cream cheese, sugar and 1 teaspoon vanilla until fluffy. In a large bowl, whip heavy cream until stiff peaks form; fold into ricotta mixture., In another bowl, combine the pineapple, pie filling and remaining vanilla. In a 3-qt. trifle bowl or glass serving bowl, arrange two packages of ladyfingers over the bottom and up the sides., Layer a third of the ricotta mixture, a third of the pineapple mixture and half of the remaining ladyfingers. Repeat layers once. Layer remaining ricotta and pineapple mixtures. Cover and refrigerate several hours or overnight.

  • Cut the pineapple out of the shell. Discard core and cut the flesh into chunks. Purée pineapple in blender or food processor. Transfer the puréed pineapple to a medium pot. Mix in 1 cup coconut, 1⁄2 cup sugar, and the confectioner’s sugar. Bring to a boil over medium heat. Cook until all of the liquid evaporates, about 30-35 minutes, stirring often to make sure the mixture is not browning on the bottom. If the mixture is starting to brown lower heat slightly and stir more often. The mixture will turn a dark golden color. Turn off the heat.
  • Remove 1⁄2 cup of the pineapple mixture and mix it into the egg yolks to temper them. Add the tempered yolks into the pot and mix back on heat until dry and pulling away from the sides of the pot, about 5 minutes.
  • Place the pot in the freezer and chill completely. remove the pineapple mixture from the freezer. Using a tiny melon baller or 1⁄4 teaspoon measure, make balls. roll in the coconut/sugar that was blended in the first step. If the truffles get too sticky to roll, place the mixture back into the freezer for a few minutes.
