A delicious fish dish with a pungent tomato sauce with green olives and marinated vegetables. Throw some jumbo shrimp in with the fish for an even more delicious and impressive meal.

1 tablespoon butter
1 tablespoon olive oil
¼ cup finely chopped onion
2 tablespoons chopped fresh garlic
1 cup tomato sauce
15 cherry tomatoes, halved
½ cup chopped green olives
¼ cup deli marinated Italian vegetable salad, drained and coarsely chopped
1 dash black pepper
1 dash cayenne pepper
1 dash paprika
6 (4 ounce) fillets cod fillets

Steps:

  • Heat butter and olive oil in a large skillet over medium heat. Cook and stir onions and garlic until onions are slightly tender, being careful not to burn the garlic. Add tomato sauce and cherry tomatoes, and bring to a simmer. Stir in green olives and marinated vegetables, and season with black pepper, cayenne pepper, and paprika. Cook fillets in sauce over medium heat for 5 to 8 minutes, or until easily flaked with a fork. Serve immediately.

From "A Taste of Old Cuba." this recipe originally came from a 1950's Cuban TV cooking show--Cocina al Minuto--and can be made in 30 minutes and it couldn't be easier. You can use any white fleshed fish (snapper, flounder, grouper, etc.) and it's a great meal with rice, salad, and good bread to sop up the sauce. I like to add one little hot red pepper, chopped, but that's up to you--as is the amount of garlic.

2 lbs red snapper fillets (about 6 - 8 fillets)
2/3 cup olive oil
3/4 cup white wine
2 tablespoons white wine vinegar
1 cup parsley, fresh, roughly chopped
1 small onion, finely chopped
4 garlic cloves, coarsely chopped
1 teaspoon salt (sea or kosher)
1/2 teaspoon pepper, freshly ground

Steps:

  • Blot the fillets dry--really dry--to avoid a watery sauce.
  • In a blender, combine olive oil, wine, vinegar, parsley, onion, garlic, salt and pepper and blend on high until smooth.
  • In a large skillet, arrange the fish snugly in a single layer and pour the sauce over the fish.
  • If the fish won't fit in one layer, arrange the fish in two layers, pouring half the sauce over the first layer and the rest over the top.
  • Bring the sauce to a boil over high heat.
  • Immediately reduce the heat to low, partially cover the pan and gently simmer the fish for 15 to 20 minutes or until the fish flakes when pierced with a fork.
  • Cooking time depends on the thickness of your fillets; if they are thin, they will be done in less time.

1small pack tarragon
2 small packs flat-leaf parsley
30g wild garlic (or 2 garlic cloves)
3 tsp Dijon mustard
40g small capers , drained, rinsed and roughly chopped
200ml extra virgin olive oil
2 tbsp sherry vinegar

Steps:

  • Chop the herbs and garlic, mixing with 1 tsp sea salt, until very fine.
  • Add the mustard and capers, and combine. Transfer the mixture to a bowl and stir in the olive oil.
  • Add the vinegar, little by little, stirring and tasting as you go - trust your palate!

1 small peeled onion, coarsely chopped
2 medium cloves garlic, peeled and coarsely chopped
1 good-sized bunch Italian parsley, large stems removed (about 2 to 2 1/2 cups)
2 tablespoons drained, brined capers
1/3 cup olive oil and more for consistency
Small pinch of dried red pepper flakes
Few drops of lemon juice
Sea salt
Bread soaked in milk (optional and to taste)

Steps:

  • Scrape onion and garlic into a food processor. Add parsley, capers, olive oil, pepper flakes and lemon juice.
  • Process in bursts, stirring occasionally and adding more oil if necessary. Do not overblend. Add salt to taste. If garlic is too powerful, you can add a little bread soaked in milk to tame sauce. Serve on side.

  • Finely mince 2 cloves of garlic, finely chop a generous handful of fresh parsley, reserve a 1/4 cup of white wine and a 1/4 cup of a good quality fish broth, for the final ingredient grab a 15 ounce (400g) fillet of hake, cut it into 2 or 3 evenly sized portions and season them with sea salt & freshly cracked black pepper
  • Heat a nonstick fry pan with a medium heat and add 2 tbsp of CP Farms Arbequina extra virgin olive oil, after 2 minutes add the hake fillets season side down into the pan, after 3 minutes flip the fillets (the thickness of mine where 1/2 inch), after a total cooking time of 6 minutes remove the hake fillets from the pan and transfer to a dish
  • Using the same pan with the same heat add the minced garlic, mix around with the oil, making sure to scrape up anything left over from the hake, 30 seconds later add about a 1/4 cup of freshly chopped parsley and 1 tsp of cornstarch, mix it all together until well combined and then add a 1/4 cup of white wine, again continue to mix until it thickens, then add a 1/4 cup of fish broth and continue to mix, after 2 minutes add the hake fillets back into the pan, making sure to flip them so they are covered in the green sauce, after 1 minute remove the pan from the heat, serve directly from the pan or in a dish, garnish with lemon slices and fresh parsley, enjoy!
