Yield Makes 24 hors d'oeuvres

Number Of Ingredients 13

3 tablespoons minced shallot
2 (3-inch) fresh thyme sprigs plus 1/2 teaspoon minced fresh thyme
1/2 Turkish or 1/4 California bay leaf
1 1/2 tablespoons unsalted butter
1/4 lb dried Black Mission figs, finely chopped (3/4 cup)
3/4 cup Port
1/4 teaspoon salt
1/8 teaspoon black pepper
12 (1/2-inch-thick) diagonally cut baguette slices
1 tablespoon olive oil
6 oz soft mild goat cheese at room temperature
2 fresh ripe figs, cut into 1/2-inch pieces
Garnish: fresh thyme leaves

Steps:

  • Make savory fig jam:
  • Cook shallot, thyme sprigs, and bay leaf in butter in a 1- to 1 1/2-quart heavy saucepan over moderately low heat, stirring, until shallot is softened, about 2 minutes. Add dried figs, Port, salt, and pepper and bring to a boil. Simmer, covered, until figs are soft, about 10 minutes. If there is still liquid in saucepan, remove lid and simmer, stirring, until most of liquid is evaporated, 3 to 4 minutes more. Discard bay leaf and thyme sprigs and transfer jam to a bowl. Cool, then stir in minced thyme and salt and pepper to taste.
  • Make toasts while jam cools:
  • Put oven rack in middle position and preheat to 350°F.
  • Halve each baguette slice diagonally, then arrange on a baking sheet and brush tops lightly with oil. Bake until lightly toasted, about 7 minutes. Cool on baking sheet on a rack.
  • Assemble crostini:
  • Spread each toast with 1 teaspoon fig jam and top with about 1 1/2 teaspoons goat cheese and 2 pieces fresh fig.

FIG JAM AND GOAT CHEESE CROSTINI

Fig Jam and Goat Cheese Crostini image

Flavors of fall 'sage and figs' pair up with tangy goat cheese for an elegant appetizer that's a perfect pairing for a glass of bubbly. The toasts can be made up to a day ahead and stored at room temperature in an airtight container. The sage can also be prepared a day ahead, loosely wrapped in a paper towel, and stored in an airtight container. Fig jam can be purchased at high-end grocery stores. Quince jam, a.k.a. membrillo, would also be delicious here. Taken from CHOW.com

Categories     Cheese

Time 45m

Yield 20 crostini, 10 serving(s)

Number Of Ingredients 6

1 baguette
1/3 cup olive oil
salt, to taste
20 sage leaves
4 ounces goat cheese
1/3 cup fig jam

Steps:

  • Heat the oven to 400°F
  • Cut the baguette on the bias into about 20 (1/2-inch-thick) slices and place on a baking sheet.
  • Using 1 tablespoon of the olive oil, lightly brush each slice. Sprinkle with salt and bake until lightly toasted and crisp, about 8 minutes; let cool.
  • Line a plate with paper towels and set aside.

  • Immediately remove the leaves with tongs or a slotted spoon and transfer to the paper-towel-lined plate.
  • Repeat with remaining sage leaves; set aside.
  • Gently spread 1 teaspoon of the goat cheese on each crostini, top with a heaping 1/2 teaspoon of the fig jam, and garnish with a fried sage leaf.

GOAT CHEESE CROSTINI WITH GRAPE SALSA

Goat Cheese Crostini With Grape Salsa image

A Bobby Flay recipe that is awesome!!! I have also switched this recipe up for a party the other day and made topped the crostini with goat cheese/mayo mixture with some fresh bruschetta from Trader Joe's and WOW was it good. Love that the mayo mellows the goat cheese just a tad. As far as bread goes, I have used whole grain as well as asiago cheese (I think whole grain is truly best). I have also made these with the pre-made crispy crostini from the grocer (in the specialty food aisle) with great results. For the party, we simply put these out on tables and at the bar as appetizers and everyone gobbled them up!

Provided by januarybride

Categories     Grapes

Time 28m

Yield 6 serving(s)

Number Of Ingredients 10

1 cup red grapes, diced
1 cup black grapes, diced (seedless)
1/2 small red onion, finely chopped (I used much less)
1 jalapeno pepper, finely chopped (I used about a half a pepper)
3 tablespoons chopped fresh cilantro (may sub flat-leaf parsley)
cilantro leaf (to garnish)
2 tablespoons red wine vinegar
4 slices whole grain bread, quartered (may sub 1 baguette, thinly sliced into 16 pieces)
6 ounces herbed goat cheese, slightly softened
1/3 cup mayonnaise (I use light mayo with great results)

Steps:

  • Combine grapes, onion, jalapeno pepper, cilantro and vinegar in medium bowl. Season, if desired, with salt and pepper. Let stand at least 30 minutes.
  • Preheat oven to 375°. Arrange bread on large baking sheet in a single layer and bake, turning once, 8 minutes or until lightly golden brown and crisp on both sides. Remove and let cool.
  • Combine goat cheese with Mayonnaise in small bowl until smooth. Season, if desired, with salt and pepper.
  • Evenly spread cheese mixture onto crostinis, then top with grape salsa.

GOAT CHEESE & FIG CROSTINI W/ CARAMELIZED ONIONS

Goat Cheese & Fig Crostini w/ Caramelized Onions image

This Goat Cheese & Fig Jam Crostini is one of my FAVORITE crostini recipes ever. The fact that it's just 4 INGREDIENTS blows my mind. The tangy and creamy goat cheese pairs incredibly well with the sweet fig jam and onions. It's the perfect crunchy, creamy, sweet, savory flavor-packed bite! They make a tasty appetizer for your next get-together or cocktail party.

Provided by Aleka Shunk

Categories     Appetizer

Time 30m

Number Of Ingredients 6

1 crusty long French baguette (*fresh is best)
3 ounces goat cheese
3 ounces fig jam
1 medium yellow onion
olive oil ((or butter))
thyme leaves for garnish (*optional)

Steps:

  • Peel and slice onion as thinly as you can. Use a mandolin slicer if you have.
  • Add about 3 tablespoons of olive oil to a pan set over medium-low heat and toss in your sliced onion. Toss to coat. If the pan looks dry, add another tablespoon of oil. Stir your onions every 10 minutes or so for 20-30 minutes. The longest part of this recipe revolves around our onions. We need to slowly simmer them in order to caramelize them properly. This will help to release the sugars in the onion making them much sweeter! Don't rush this by turning up the heat or your onion will burn.
  • While your onions are caramelizing, we can prepare our crostini. Slice the baguette into ¼" slices. Brush olive oil lightly over each slice and bake in the oven at 450°F for about 8 minutes or unti golden brown and crispy.
  • Once your onions are cooled and crostini is ready, it's time to assemble!
  • Spread goat cheese evenly over each crostini followed by some of the caramelized onions and finally, a dollop of fig jam. Garnish with thyme leaves if desired. *Serve within 2 hours to optimal crunchiness.

  • Preheat oven to 350°. Slice your baguette into 1/2" diagonal slices. Cutting on a diagonal will give you more space for toppings and looks better. Place baguette slices on a baking sheet and either drizzle or brush olive oil on top of each one, just one side.
  • Bake the baguette slices for 5-8 minutes, until the edges are slightly crisp and the center is still soft. They will get a light brown color.
  • Whipping your goat cheese will make it creamy and easy to spread, rather than crumbly. Place your cheese into the bowl of a stand mixer or use a hand mixer to whip until creamy. About 1 minute. If you can't find goat cheese with honey already added, add 2 Tbsp of honey and then mix.
