My Favorite Lemon Pudding image

3/4 cup sugar
1/4 cup cornstarch
2 1/2 cups milk
3 large egg yolks, lightly beaten
2 tablespoons finely grated lemon zest
Pinch salt
1/2 cup fresh lemon juice
2 tablespoons unsalted butter, at room temperature

Steps:

  • Whisk the sugar and the cornstarch together in a medium saucepan. Add the milk and whisk until smooth. Add the egg yolks, zest, and salt and cook, stirring frequently at first and constantly towards the end, over medium heat until thickened enough to thickly coat the back of a spoon.
  • Remove the pan from the heat and stir in the lemon juice and butter. Pour through a strainer into a large serving bowl or 4 individual serving dishes.
  • Let cool to room temperature. Chill, loosely covered, for at least 2 hours and up to 3 days, or until set and thoroughly chilled. Serve chilled.

3/4 cup raisins
2 cups milk
1/2 cup sugar
2 tablespoons butter

LEMON SAUCE:
3/4 cup sugar
2 tablespoons cornstarch
1 cup water
3 tablespoons lemon juice
2 teaspoons grated lemon zest
1 tablespoon butter

Steps:

  • Toss bread and raisins in an ungreased 1-1/2-qt. baking dish. In a small saucepan, combine milk, sugar, butter and salt; cook and stir until butter melts. Remove from the heat. Whisk eggs and vanilla in a small bowl. Stir a small amount of the hot milk mixture into the egg mixture; return all to the pan, stirring constantly. Pour over bread and raisins. , Place dish in a larger baking pan. Fill larger pan with hot water to a depth of 1-in. Bake, uncovered, at 350° for 50-60 minutes or until a knife inserted in the center comes out clean. , For sauce, combine the sugar and cornstarch in a saucepan. Stir in water until smooth. Bring to a boil over medium heat; cook and stir for 1-2 minutes, or until thickened. Remove from the heat. Stir in lemon juice, zest and butter until butter melts. Serve over warm or cold pudding. Been looking for the lemon delicious recipe I cooked many years ago but somewhere along lost the clipping (before ZAAR time) and this seems to come close to it though called a pudding (maybe searching in the wrong area) but it was good though sweeter than I remember (would need to work on the sugar content), certainly don't remember having the sprinkle sugar on top as per this recipe but I believe that what gives it its crispy top in this recipe. Serving suggestion was 4 but I think could be easily stretched to 6 served with cream and or icecream. i found that 1 lemon gave me the rind and juiced that but needed to juice a second lemon to get the full 1/2 cup (got a little more than that and added the lot).

  • Preheat oven to 180°C.
  • Grease a 4 to 6 cup casserole dish (deep sides).
  • Batter Base - sift flour and a pinch of salt together and then add sugar and grated lemon rind, mixing well together.
  • Stir in melted butter , vanilla and milk mix and stir until all flour mix is incorporated.
  • Pour into prepared casserole dish.
  • Sauce - Sprinkle the mixture with the sugar and lemon rind.
  • Combine the boiling water and lemon juice and carefully spoon some of over the batter and sugar topping, until fully covered and then pour the rest of the mix over the back of the spoon.
  • Bake for 30 to 40 minutes and let stand for 5 to 10 minutes before serving (very important to allow the sauce to thicken or otherwise will have runny liquid).

2 teaspoons lemon zest, from 2 lemons

Steps:

  • Preheat the oven to 350°F and set a rack in the middle position. Spray six (6-oz) ramekins with nonstick cooking spray.
  • In a large bowl, whisk together the egg yolks, milk, lemon zest, lemon juice, butter, and salt. Add the flour and sugar and whisk until smooth.
  • In the bowl of an electric mixer, beat the egg whites until soft peaks form. (The peaks should curl when you lift the beaters out of the bowl.) Spoon about ¼ of the egg whites into the lemon mixture and whisk until smooth. Add the remaining egg whites and, using a rubber spatula, gently fold into the lemon mixture until smooth. 4 eggs (separated, room temperature)

310 g (1 ¼ cups) full cream milk

Steps:

  • Preheat oven to 170 degrees celsius (fan-forced). Grease an ovenproof casserole/baking dish and set aside (minimum of 2 litre/8cup capacity).
  • Beat the caster sugar, butter and grated lemon zest together until pale and creamy.
  • Beat in the egg yolks one by one.
  • Beat in the lemon juice, plain flour and full cream milk. Set aside.

  • Preheat the oven to 350℉ (175°C) .

1/2 cup powdered sugar

Steps:

  • Preheat oven to 350°F. Line a 9x9 or an 8x8 pan with foil and spray with nonstick cooking spray.
  • Make the crust by creaming the butter with a hand or a stand mixer (fitted with the paddle attachment) until smooth. And I honestly believe it's because so often, the bread pudding we've experienced in restaurants or even at potlucks more closely resembles a sweetened bread cinder block than a rich, custardy pudding. This recipe is here to give you a new lease on the classic dessert. It's almost too easy, but yields utterly decadent results. The key is in the ratio of bread to custard base; this recipe calls for quite a bit of bread, but also has an adequate amount of liquid components to balance it out.

4 cups whole milk
1 cup white sugar
1 cup light brown sugar
¾ cup heavy cream
4 tablespoons unsalted butter, melted and cooled

1 (16 ounce) loaf sourdough bread
14 ounces brioche
2 tablespoons white sugar
2 tablespoons light brown sugar
¾ teaspoon ground cinnamon
1 large egg
½ cup heavy cream
1 cup white sugar
½ cup unsalted butter
2 tablespoons bourbon
¼ teaspoon salt

Steps:

  • Prepare the pudding. Whisk eggs in a large mixing bowl to beat lightly. Whisk in milk, 1 cup white sugar, 1 cup brown sugar, heavy cream, butter, vanilla extract, and salt until evenly combined.
  • Tear sourdough and brioche breads into bite-sized pieces. Add both breads to the custard mixture and stir with a rubber spatula until well coated. Allow to stand at room temperature and soak for 20 to 30 minutes, stirring occasionally.
  • Meanwhile, preheat the oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish with butter.

  • Combine sugar and butter in a medium saucepan over medium heat. Cook, stirring frequently, until butter melts and sugar dissolves. Remove saucepan from heat. This delicious self saucing lemon pudding is just 4 SmartPoints per portion on Weight Watchers Freestyle Blue & Purple plans. It is 5 SmartPoints on the Green plan.

3.5 tbsp low fat margarine ((50g))
3 tbsp sweetener (I used Natvia)
2 lemons (juice from both, zest from one)
3 eggs (separated)
6 tbsp all purpose flour
1 cup skimmed milk ((250ml))
1 tsp vanilla paste (or extract)
1 tsp icing sugar / powdered sugar (to dust)

Steps:

  • Preheat the oven to 180°C / 160°C Fan /Gas 4 / 350°F.
  • Place the low fat spread / margarine, the sweetener and the zest of 1 lemon into a bowl and using a hand held mixer, whisk until just combined.
  • Add the lemon juice of both lemons, vanilla paste, egg yolks, flour and milk one by one, whilst continuing to mix until you have a smooth batter.
  • Clean your whisk attachment thoroughly.
  • In a separate clean bowl whisk the egg whites until they produce soft peaks - when you remove the whisk the peaks will just hold their shape for a second or so before collapsing.
  • Gently fold the two mixtures together using a metal spoon.
  • Don't over mix as you want to keep the mixture light and fluffy with as much air left in as possible to get some rise.
  • Spoon the mixture into an ovenproof dish ( I used one that measured 7 1/2 inches square).
  • Fill a baking tray half full of hot water and place the ovenproof dish in the centre.
  • Place in the middle of the oven and bake for 45 - 50 minutes until the top turns golden brown and has set.
  • There will be a creamy lemony sauce below.
  • Top with a light dusting of icing / powdered sugar.
