- In a Dutch oven, cook beef and onions over medium heat until meat is no longer pink, breaking it into crumbles; drain. Add the tomatoes, carrots, celery, potatoes, water, rice, salt and pepper; bring to a boil. Reduce heat; cover and simmer 30 minutes or until vegetables and rice are tender. , Uncover; simmer 20-30 minutes longer or until thickened to desired consistency. Freeze option: Freeze cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little water if necessary.

- In large pot or Dutch oven, heat the olive oil over medium heat. Once the oil begins to shimmer, add the mushrooms and cook for about 5 minutes, or until most of their juices have been released.
- Add the onions, carrots, and celery, and cook for 4-5 minutes, or until onions are semi-translucent.
- Add the garlic, rosemary, thyme, pepper, tomato paste, and soy sauce, and cook for 2-3 more minutes, until the herbs are fragrant.
- Add the flour and stir until fully incorporated. Add the wine and stir until mostly absorbed.
- Add the potatoes, vegetable broth, and bay leaves, and bring to a boil. Reduce the heat to medium-low and simmer for 45 minutes, stirring occasionally, until the potatoes are tender and the stew has thickened.
- Remove the bay leaves.
- Enjoy!

HAMBURGER STEW
Steps:
- Preheat oven to 325 degrees F.
- In a large Dutch oven that has a lid, heat oil over medium high heat and once shimmering, add the ground beef and cook to brown.
- Pour mixture into a strainer over a large bowl and set strainer of beef aside for a minute.
- Skim off the fat that rises to the top of the bowl and discard but retain the liquid. Set the liquid aside.
- Heat pan to medium high with the butter and melt, then add the celery and onions and saute for about five minutes.
- Add the browned beef, thyme, black pepper, garlic and tomato paste and cook for three minutes.
- Add Balsamic vinegar and Worcestershire sauce and deglaze.
- Lower heat to medium and add the flour. Stir often for two minutes.
- Add the wine and scrape up brown bits from bottom and sides and cook to reduce by half.
- Add the reserved beef liquid, beef stock and gravy color and stir.
- Cover and place in the oven for one hour.
- After one hour, add the carrots, potatoes and green beans, cover and place back in the oven for another hour.
- After the second hour, test vegetables for doneness and cook for an additional 30-45 minutes as needed to get them tender. Ours went for an additional 20 minutes after the second hour.
- Taste and only add salt if needed. (Our beef stock was not that salty, so I added a teaspoon of kosher salt).

I love this stew because it is so easy to throw together,and it goes great with a hot pan of cornbread. I suggest Sweet Cornbread (recipe #83625). This recipe was my Great Grandma's and my Grandma taught it to me. It was hard for me to put this in recipe format because it is all in my head. - In a medium bowl toss beef stew meat with the flour and set aside.
- Heat a dutch oven or heavy bottom pot on medium-high heat. Add half of the vegetable oil and add half the meat, half of the salt, and pepper. Brown for 3-4 minutes turning the meat halfway through. Remove meat and repeat with the rest of the meat.
- Add the rest of the oil and add carrots and onions, cook for 3-4 minutes then add garlic and tomato paste.

- Add onions, celery, and carrots. You can add other vegetables to this dish, but these are the main ones that I remember from the original recipe.

- In large stock pot, brown ground beef with pepper, breaking up. Pour into a colander to drain. Add butter, and carrots, celery and onion to pot. Sauté for about 15 - 20 minutes over medium-low heat until crisp-tender.
- Add rest of ingredients except green beans, ( and last salt and pepper to taste). Turn up heat to medium-high, cover and bring to a simmer. Lower heat, (to medium/medium-low), and simmer/low boil, covered, until cabbage, veggies, and macaroni are tender. (*Stir occasionally so nothing sticks to the bottom of the pot.) This takes about 15 -20 minutes depending on how well it's simmering and boiling. So check the cabbage and noodles towards the end to get it the way you like it done. *If more tender veggies are desired, give them a 5 minute head start, then add the macaroni and cook until all are more tender. *These times are for lightly crisp-tender veggies.
- Stir in hamburger and green beans, taste, and add salt and pepper as desired. Set aside, covered, to heat through letting rest about 10 - 15 minutes. Stir before serving.
