Categories     < 4 Hours

Time 1h15m

Yield 1 pot, 8 serving(s)

Number Of Ingredients 11

1 tablespoon canola oil
1 lb ground meat (I know, the title says hamburger, but I actually use Turkey)
1 onion, chopped
4 celery ribs, sliced
1 cup carrot, sliced
2 cups frozen corn
2 cups frozen green beans
1 (46 ounce) can V8 vegetable juice
1/2 teaspoon celery seed
3 garlic cloves, minced
salt & pepper

Steps:

  • Add oil to large Dutch Oven type dish.
  • Brown the ground meat until cooked through.
  • Add onions, celery, and carrots. You can add other vegetables to this dish, but these are the main ones that I remember from the original recipe.
  • Cook until the vegetables get nicely carmelized. Add remaining ingredients.
  • Simmer for about an hour. We've rushed this and it's still good, but the longer it simmers the richer the flavor.
  • This tastes good with nice, fresh cornbread. I've even made Cheddar-Dill Bisquick Drop muffins as well. Crusty bread would work great too!

HAMBURGER STEW

Hamburger Stew image

This hamburger stew recipe is thick, hearty, and easy to make! It's a delicious family meal that uses inexpensive everyday ingredients.

Provided by Natasha Bull

Categories     Main Course

Time 1h

Number Of Ingredients 14

1 tablespoon olive oil
1 medium onion (chopped)
3 sticks celery (chopped)
4 cloves garlic (minced)
1 pound lean ground beef
3 tablespoons flour
1 (6 ounce) can tomato paste
4 cups beef broth (+ more if needed)
1 tablespoon Worcestershire sauce
1/2 teaspoon Italian seasoning
2 Russet potatoes (peeled & diced)
4 medium carrots (peeled & sliced)
1 cup frozen peas (optional)
Salt & pepper (to taste)

Steps:

  • Add the oil, onion, and celery to a soup pot and sauté over medium-high heat for 5-7 minutes.
  • Stir in the garlic and cook for 30 seconds.
  • Add the beef to the pot and cook, breaking it up with your spoon as you go along, until it's browned (about 8 minutes).
  • Sprinkle in the flour and cook for 1-2 minutes (stirring often).
  • Stir in the tomato paste.
  • Add in the broth, Worcestershire sauce, Italian seasoning, potatoes, and carrots. Increase the heat to high and bring it to a boil. Reduce the heat to a rapid simmer and cook, covered (with the lid slightly open), stirring occasionally, for at least 30 minutes or until the potatoes and carrots are tender and the flavors have had some time to build. Add more broth if the stew starts to get too thick, and if you want it thicker, cook it for longer with the lid off.
  • Stir in the frozen peas and season with salt & pepper as needed.

Provided by Stephanie Keeping

Categories     Soup

Time 25m

Number Of Ingredients 10

1 pound ground beef
10 ounces Mirepoix blend vegetables (onions, celery, carrots)
14.5 ounces tomatoes (diced)
15 ounces tomato sauce
1 teaspoon basil (or Italian seasoning)
salt and pepper (to taste)
1 bay leaf
16 ounces mixed vegetables
2 to 4 cups beef stock
¾ pounds potatoes (cut into bite-size pieces)

Steps:

  • In a large stockpot over medium heat, sauté ground beef and the onion, celery, carrot vegetable mixture until the beef is browned and the vegetables are soft.
  • Add the rest of the ingredients and stir to combine.
  • Bring to a simmer over medium heat and cook for 20 minutes until the potatoes are soft when pierced with a fork.
  • Adjust the amount of beef stock for the desired stew/soup consistency. For a stew-like consistency, use less stock and simmer uncovered. To maintain a thinner soup, use more stock and simmer with the lid on.
  • Garnish with a bit of fresh parsley and serve.

  • In large stock pot, brown ground beef with pepper, breaking up. Pour into a colander to drain. Add butter, and carrots, celery and onion to pot. Sauté for about 15 - 20 minutes over medium-low heat until crisp-tender.
  • Add rest of ingredients except green beans, ( and last salt and pepper to taste). Turn up heat to medium-high, cover and bring to a simmer. Lower heat, (to medium/medium-low), and simmer/low boil, covered, until cabbage, veggies, and macaroni are tender. (*Stir occasionally so nothing sticks to the bottom of the pot.) This takes about 15 -20 minutes depending on how well it's simmering and boiling. So check the cabbage and noodles towards the end to get it the way you like it done. *If more tender veggies are desired, give them a 5 minute head start, then add the macaroni and cook until all are more tender. *These times are for lightly crisp-tender veggies.
  • Stir in hamburger and green beans, taste, and add salt and pepper as desired. Set aside, covered, to heat through letting rest about 10 - 15 minutes. Stir before serving.
