ALMOND-MOCHA MUFFINS

Steps:
- Heat oven to 400°F. Grease or spray bottoms only of 12 regular-size muffin cups, or place paper baking cup in each muffin cup.
- In medium bowl, mix flour, cocoa, baking powder and salt; set aside. In large bowl, beat brown sugar, milk, oil, coffee and egg with fork or wire whisk. Stir in flour mixture just until flour is moistened. Stir in chocolate chips and almonds. Divide batter evenly among muffin cups.
- Bake 18 to 20 minutes or until toothpick inserted in center comes out clean. Immediately remove muffins from pan to cooling rack. Cool 15 minutes.
- In small microwavable bowl, microwave glaze ingredients uncovered on High about 45 seconds, stirring every 15 seconds, until chips can be stirred smooth. Drizzle over muffins.

Steps:
- Preheat oven to 400F; in a 12-cup muffin pan, place paper liners in 10 cups and set aside.
- In a small bowl, dissolve instant coffee in hot water.
- In a large bowl, crack egg and whisk; stir in oil, milk, vanilla, and coffee mixture; combine well.
- In an another small bowl, combine dry ingredients.
- Gently fold dry ingredients into coffee mixture, just until mixed; do not overbeat.
- Spoon batter into the 10 paper liners and decorate the top of each muffin with a few chopped almonds, if desired.
- In the two unused muffin pans, place some water so they won't burn.
- Place in preheated oven and bake for 25 minutes.
- Remove from pan and cool on rack.
BEST EVER MOCHA CHOCOLATE CHIP MUFFINS

Steps:
- Preheat oven to 350 degrees F.
- Oil 6 large or 12 small muffin cups.
- Mix flours, cornstarch, cocoa, baking powder, salt, baking soda and dark chocolate chips together in a large bowl.
- Place coffee, sugar, applesauce, oil, soy milk, vinegar and vanilla in a blender and blend until smooth or place in a large bowl and blend with immersion blender.
- Add wet ingredients to dry.
- Stir, adding more soy milk to make it a thinner batter, you don't want it to be stiff.
- Divide evenly among muffin cups, bake in oven for 20 minutes or until the toothpick test proves true.
- Place on cooling rack, cover with a towel and remove after 5 minutes.
- Cool completely.
- Place in paper towel lined Tupperware, freeze after 1-2 days wrapped tightly in plastic.
- Mark breaks these up and puts them in ice cream.
MOCHA ALMOND FUDGE
I probably found this recipe in a magazine, and it has to date back to the '60s. I find the dessert to be very easy, with good texture and flavor. Friends with whom I share this treat think so, too.

- Line a 9x5-in. loaf pan with foil and grease the foil with butter; set aside., In a large microwave-safe bowl, combine the chocolate chips, milk, coffee granules and salt. Microwave, uncovered, on high for 1 minute; stir. Microwave at additional 15-second intervals, stirring until smooth. Stir in almonds and extract. Spread into prepared pan. Refrigerate for 1 hour or until firm., Using foil, lift fudge out of pan. Gently peel off foil; cut fudge into 1-in. squares. Store in an airtight container in the refrigerator.

- Preheat oven to 325°F
- Prepare muffin tins with cooking spray or paper liners.
- In a large bowl, combine flour, cocoa, baking powder, baking soda, and salt.
- In a small bowl, mix coffee, syrup, oil, vinegar, and almond extract.
- Add wet ingredients to dry and stir until completely blended.
- Add chocolate chips, if desired.

- Preheat oven to 350°F.
- Line a 12-cup muffin tin with paper liners.
- In a small, microwave-safe bowl, melt together the butter and chopped dark chocolate. Heat in 30 second intervals, stirring frequently until smooth. Set aside to cool slightly.
- Dissolve espresso or coffee in hot water. Set aside.
- In a large mixing bowl, whisk together flour, sugar, baking powder and salt. Make a well in the center and add eggs, buttermilk, dissolved coffee, and vanilla extract or Kahlua .
- Stir till partially mixed, then stir in melted chocolate mixture until the batter is almost smooth then stir in the chocolate chunks and nuts if using, mixing just until everything is incorporated.
- Spoon batter into lined muffin cups 2/3 full. Bake for about 16-20 minutes, or until a tester inserted into the center comes out clean.
- Cool muffins before serving at room temperature or slightly warm.

COCONUT ALMOND MOCHA MACAROONS
Macaroons are a Passover favorite for many who have a sweet tooth. For this new harvest season celebration, I have come up with a new recipe. If you love espresso and also love coconuts and almonds, then you should try this recipe. This is a delicious treat for any and all who love coconut, but we are going to spice them up just a little bit by adding espresso coffee flavor to these little coconut desserts. These mini espresso, coconut, and almond macaroons will melt in your mouth, and are made with just a few ingredients. These will take some time so you may want to make these in advance.

- Combine honey, cocoa powder, and espresso powder in a small saucepan over medium-low heat. Cook and stir until cocoa and espresso are dissolved and mixture is smooth, 3 to 5 minutes. Remove from heat. Let cool, 10 to 15 minutes.
- Preheat oven to 300 degrees F (150 degrees C). Line a baking sheet with parchment paper.
- Beat egg whites in a glass, metal, or ceramic bowl until peaks start to form. Add sugar gradually, continuing to beat until a thick and glossy meringue is formed.
- Place almonds in a food processor; grind in short bursts until a fine meal forms.
- Stir almond meal, coconut, matzo cake meal, and vanilla bean paste into the cooled espresso mixture. Fold in 1/3 of the egg whites at a time until well mixed.
- Spoon out about 1 tablespoon of the dough and roll into a ball. Place on the prepared baking sheet. Repeat with the remaining dough, placing macaroon balls about 1 inch apart. Press an espresso bean onto each macaroon.
- Bake in the preheated oven until firm, 15 to 20 minutes. Remove macaroons using a spatula; transfer to a rack to cool for 20 to 30 minutes. Place macaroons in an airtight container; let rest until set, 4 to 6 hours.
