Calico Beans with Beef and Bacon image

These hearty beans full of ground beef and bacon are great for a picnic or potluck.

½ pound bacon
1 pound lean ground beef
1 onion, chopped
1 (15 ounce) can lima beans, drained
1 (15 ounce) can kidney beans, undrained
1 (15 ounce) can pork and beans
2 tablespoons ground dry mustard
½ cup brown sugar
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside. In the same skillet, crumble ground beef and cook over medium-high heat 2 minutes. Mix in onion and continue to saute until beef is browned and onion is golden. Drain grease if desired.
  • In a 4 quart casserole dish, mix together bacon, beef, onion, lima beans, kidney beans, pork and beans, dry mustard, brown sugar, salt, and pepper. Cover dish and bake in preheated oven for 45 minutes, until bubbly.

1 (15 ounce) can pork and beans
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can butter beans
1 (15 ounce) can lima beans, drained

1 cup packed brown sugar
1 cup chopped onion
3 tablespoons white wine vinegar
1 teaspoon mustard powder
½ cup chopped celery

Steps:

  • Preheat oven to 350 degrees F (175 C).
  • Place bacon and ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
  • In a four quart casserole dish, mix together the bacon, ground beef, pork and beans, kidney beans, butter beans, lima beans, ketchup, onion, vinegar, dry mustard and celery.
  • Cover and bake for 1 hour.

1 (16 ounce) can baked beans with pork
1 (15 ounce) can butter beans, undrained
½ cup ketchup
2 teaspoons white vinegar
1 tablespoon dry mustard
¾ cup packed brown sugar
1 pound lean ground beef
4 ounces bacon, chopped
½ cup chopped onion
salt to taste
ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium heat, fry the ground beef, bacon and onion together until ground beef is no longer pink. Drain fat.
  • In a large mixing bowl, combine the kidney beans, baked beans with pork and butter beans. Stir in the ketchup, white vinegar, dry mustard, brown sugar and cook beef mixture. Mix thoroughly, adding salt and pepper to taste.
  • Pour the bean and meat mixture into a 9x13 inch baking dish. Bake in preheated oven for 30 to 40 minutes.

1 small onion, chopped
1 can (21 ounces) pork and beans
1 can (16 ounces) kidney beans, rinsed and drained
1 can (16 ounces) butter beans, rinsed and drained
1/2 cup packed brown sugar
1/2 cup ketchup
4 bacon strips, cooked and crumbled
1 tablespoon cider vinegar
1 teaspoon prepared mustard
1 teaspoon salt

Steps:

  • Preheat oven to 325°. In a large skillet, cook beef and onion over medium heat until beef is no longer pink, 5-7 minutes, breaking up beef into crumbles; drain. Stir in remaining ingredients. These Slow Cooker Calico Beans are a fast, frugal and delicious dinner that the entire family will love! They can be cooked in the Instant Pot or the oven as well!

4 slices thick cut bacon (diced)
1 pound lean ground beef
1/2 cup chopped onion
1 can (28 ounces molasses pork and beans)
1 can (16 ounces kidney beans, rinsed and drained)
1 can (16 ounces lima beans, rinsed and drained)
1/2 cup packed brown sugar
1/2 cup ketchup
1 tablespoon cider vinegar
1 teaspoon prepared mustard
1 teaspoon salt

Steps:

  • In a large skillet or in the bottom of your Instant Pot using the "saute" button, cook the bacon for 2-3 minutes. Add in the beef and onion and cook until the meat is no longer pink, then drain.
  • Combine the beef mixture, bacon, beans, brown sugar, ketchup, vinegar, mustard and salt in a slow cooker or in the Instant Pot.
  • For the slow cooker, you can cook on high for 3-4 hours, or low for 6-8 hours.
  • For the Instant Pot, you can also cook on low all day OR use the chili/stew button and cook on high pressure for 15 minutes.
  • If you want to cook in the oven you can also spoon the mixture into a greased 2-qt. baking dish. Bake, uncovered, at 325° for 45-60 minutes.

1 (15-ounce) can black beans
8 ounces bacon (chopped)
1 cup chopped onion
1/2 cup ketchup (see note)
1 teaspoon Worcestershire sauce
2 teaspoons dry mustard
1/3 cup brown sugar
3/4 teaspoon salt
1 tablespoon apple cider or red wine vinegar
1/3 cup water or low-sodium broth
1 teaspoon cornstarch (optional, helps thicken the sauce a bit)

Steps:

  • Preheat the oven to 325 degrees F. Lightly grease a 3-quart baking dish (see note).
  • Drain and rinse all the beans (go ahead and throw them all together in one colander) and set aside.
  • In a large skillet, cook the bacon until crisp. Drain on paper towels, leaving about 1 teaspoon grease in the skillet.
  • Add the onion to the skillet over medium heat and cook until softened, 4-5 minutes. Off the heat, add the beans and bacon.

½ cup diced yellow onion (about half a large onion)
½ cup diced bacon (about 3-4 pieces thick-cut bacon)
1 (15½-oz) can dark red kidney beans, rinsed and drained
1 (16-oz) can butter beans, rinsed and drained
2 (16- to 18-oz) jars or cans of B&M brick oven baked beans
¾ cup brown sugar
½ cup ketchup
2 tsp apple cider vinegar (can use white vinegar instead)
1 tsp kosher salt
1 tsp dry mustard

Steps:

  • Heat a large Dutch oven over medium heat. Add bacon, onion and ground beef. Cook and brown, breaking up ground beef with wooden spoon, until beef is cooked and onion is soft and translucent, about 10 - 12 minutes. Drain grease.

These are my Aunt Jessie's famous baked beans. She makes them for all our family picnics and everyone loves them. I make them vegetarian by eliminating the bacon and ground beef. It isn't necessary to replace the eliminated items but you can substitute tofu crumbles for the beef.

Number Of Ingredients 11

6 slices bacon
1/2 lb ground beef
1 medium onion, chopped (1/2 cup)
1/2 cup ketchup
1 teaspoon salt
3/4 cup firmly packed brown sugar
1 teaspoon dry mustard
2 teaspoons vinegar
1 (16 ounce) can pork and beans or 1 (16 ounce) can vegetarian baked beans
1 (16 ounce) can kidney beans
1 (16 ounce) can lima beans or 1 (16 ounce) can butter beans

Steps:

  • Cook bacon in skillet until crisp, then crumble and set aside.
  • Cook beef in skillet until no pink remains. Add onion, sauté just until tender.
  • Combine beef, onion, ketchup, salt, brown sugar, mustard and vinegar in a 3 qt baking dish or crock pot. Partially drain all the beans (I don't drain the baked beans) and add to the baking dish or crock pot, stirring gently to mix. Sprinkle with bacon.
  • Bake at 350 F for 40 minutes or cook in crock pot until heated through.
  • For vegetarian version just sauté onion and add to bean mixture. If using dry tofu crumbles it isn't necessary to rehydrate them first, I just stir them into the mixture. It may require addition of water to the mixture if it gets too thick, I just play it by ear. When using frozen crumbles or gimme lean ground "beef" I heat it up in the pan with the onion before adding to the bean mixture.
