Sauteed Green Beans with Tomatoes and Basil served with Parmesan Crisps image

Number Of Ingredients 11

1 1/2 pounds fresh green beans, trimmed
2 tablespoons unsalted butter
1 tablespoon olive oil
3 large shallots, thinly sliced
2 garlic cloves, minced
1 (14 1/2-ounce) can diced tomatoes
1/4 cup dry white wine
2 tablespoons thinly sliced fresh basil
Salt and freshly ground black pepper
Parmesan Crisps, recipe follows
1/2 cup grated Parmesan

Steps:

  • Cook the green beans in a large pot of boiling water until just crisp-tender, about 3 minutes. Drain and rinse in cold water. Drain well; set aside.
  • Melt the butter and oil in a heavy, large skillet over medium heat. Add the shallots and garlic and saute until tender, about 2 minutes. Add the tomatoes and cook until heated through, about 3 minutes. Add the beans and cook until the juices evaporate and the beans are almost tender, stirring often, about 10 minutes. Stir in the wine and basil. Simmer 2 minutes longer. Season with salt and pepper, to taste. Transfer to a serving bowl, and serve.
  • Preheat oven to 400 degrees F.
  • Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down. A silicone baking sheet is highly recommended. Repeat with the remaining cheese, spacing the spoonfuls about a 1/2-inch apart.
  • Bake for 3 to 5 minutes or until golden and crisp. Cool.
  • Yield: 8 to 10 crisps

  • Cook 1/2 chopped onion in a pot with 3 tablespoons olive oil, about 5 minutes. Add 1 1/4 pounds trimmed green beans, a 15-ounce can crushed tomatoes, 1 1/4 cups water, 1 teaspoon salt, 1/4 teaspoon pepper and a pinch of cinnamon. Partially cover and simmer, 35 minutes. Season with salt and pepper.

8 slices bacon, diced very small
1 large onion, diced very small
2 pounds green beans, trimmed and halved
1 mounded tablespoon tomato paste
Three 14.5-ounce cans whole tomatoes
Kosher salt and freshly ground black pepper
Cayenne pepper, as needed

Steps:

  • Add the bacon and onion to a large skillet over medium heat. Cook, stirring, until the bacon is beginning to crisp and the onions are golden, 5 to 7 minutes.
  • Increase the heat to medium high and add the green beans and tomato paste. Stir and allow to cook for a minute or two. Add the tomatoes, crushing them with your hands as you add them. Stir to combine. Season with salt, pepper and cayenne. Bring the mixture to a simmer and simmer until thickened and the beans are soft but still green, 5 to 7 minutes.

1 lb fresh green beans, rinsed and trimmed
2 tablespoons butter
1/2 teaspoon dried basil
1 garlic clove, minced
2 small tomatoes, peeled and cut into wedges
1 dash lemon pepper
salt

Steps:

  • After beans have been prepared, drop them into a pot of boiling water.
  • When water resumed boiling, begin timing and boil uncovered 6-10 minutes or until they reach desired crispness. Remove from heat and drain.
  • Heat butter in a medium skillet over low- med. heat, until melted and stir in basil, lemon pepper and garlic.
  • Add tomatoes, turning gently, until heated through.
  • Simmer tomatoes until they begin to release a little juices and are well coated with butter mixture.
  • Remove from heat and stir in beans to coat.
  • Salt to taste, if desired, and serve.

1 lb fresh green beans, washed and snap of tips
3 tablespoons olive oil
1 medium red onion, thinly sliced
3 roma tomatoes or 3 plum tomatoes, finely chopped
1/2 cup water
salt & pepper
5 -6 leaves fresh basil, torn into small pieces

Steps:

  • Heat oil in a large frying pan with a cover.
  • Add the onion slices and cook until just soft (5-6 minutes).
  • Add the tomatoes and cook about 6- 8 minutes until soft.
  • Stir in the water and season with Salt& Pepper.
  • Stir in the beans and coat them with the sauce.
  • Cover and cook over moderate heat for approx.
  • 15-20 minutes.
  • Stir occasionally, and add more water if sauce dries out.
  • Serve hot or cold.
