Yield 1 (9 1/2-inch) cake, 6 to 8 servings
Number Of Ingredients 14
Steps:
- Preheat oven to 350 degrees F.
- Peel the pineapple and remove core. Slice into (1-inch) thick circles.
- In a small saucepan melt butter with 1 tablespoon of water and add light brown sugar. Stir well with a whisk over medium heat until the sugar is completely dissolved and you have a nice smooth caramel, about 3 to 4 minutes. Pour into a round 9 1/2-inch nonstick cake pan. Arrange pineapple circles evenly in the caramel, (1 in the center and 5 around the outside usually works), and press down so they are submerged in the caramel. Place 1 maraschino cherry in the center of each pineapple ring. Make the batter: Sift flour and baking powder together. In a stand mixer cream butter and granulated sugar until light and fluffy, about 4 minutes. With mixer on low, add eggs 1 at a time. Add half the buttermilk and vanilla then half the flour. Add remaining buttermilk and then remaining flour. Pour the batter into the cake pan over the caramel and pineapple. Spread out evenly with a rubber spatula. Place the cake pan on a roasting tray to catch any caramel that may bubble over and bake in the oven for approx 1 hour. The cake should be nice and golden on top and puffed up slightly. When gently pressed in the center it should bounce back. Allow to cool slightly, (about 1 minute), before inverting onto a cake plate. Dust very lightly with confectioners' sugar and serve each slice with a scoop of yogurt gelato.

Steps:
- Place an oven rack in the lower 1/3 of the oven. Preheat the oven to 325 degrees F. Butter and flour a mini Bundt pan.
- For the Cakes: Place the pineapple in the bowl of a food processor. Pulse until coarsely chopped. In a 10-inch nonstick skillet, combine the chopped pineapple, 2 tablespoons pineapple juice, sugar, and butter over medium-high heat. Bring the mixture to a boil, stirring occasionally. Cook until the liquid evaporates and the mixture begins to brown, about 10 to 15 minutes. Spoon the pineapple mixture into the prepared pan.
- In a large mixing bowl, combine the egg whites, water, vegetable oil, almond extract, cake mix, and 2/3 cup pineapple juice. Using an electric hand mixer, beat the mixture on medium speed for 2 minutes. Pour the batter over the cooked pineapple. Bake for 28 to 30 minutes until the cakes begin to pull away from the sides of the pan and the tops are golden. Allow the cakes to cool for 15 minutes. Place a piece of parchment paper on top of the cakes. Put a baking sheet, upside-down, on top of the parchment paper. Flip both pans over and allow the cakes to cool completely while still in the Bundt pan, about 1 hour. Unmold the cakes and place on individual serving plates.

- In a large sauce pan, melt the butter and add both sugars. Stir until they both dissolve and bring to a slight boil. Open the can of pineapple and with a spoon scoop the crushed pineapple into the bubbling butter. You want to do this so there isn’t a lot of water into mixture. Also you are going to need some of the pineapple juice for the glaze. Don’t forget. Then add the chopped cherries and stir evenly. Allow to simmer for 2-3 minutes.
- One tablespoon at a time, add the cornstarch and stir until each tablespoon completely dissolves. The filling will thicken and once it does remove from heat and allow to slightly cool.
- Take one roll of the pastry sheets and roll it out on a floured surface. If there are gaps in the pastry, you can take a little bit of water and mesh it back together. With a round biscuit cutter about the size of 2.3” /5.8 cm or a fairly large size biscuit cutter, make as many rounds as you can on each sheet.
- Take a small spoon and add some of the filling in the middle of each round. Bring one side of the pastry round together and pinch the edges together until they are sealed and use the edges of a fork to press around the edges. Place them on a baking sheet that is lined with parchment paper. Repeat process until both pastry sheets are used. You may have to use a dough roller to roll out the scraps of dough.

- Preheat the oven to 190°C/375°F. Combine butter and brown sugar in a bowl. Use a spoon to evenly divide the mixture amongst the tins of a regular muffin tin. Divide the pineapple slices and maraschino cherries amongst the tins, with the cherries inside of the pineapple slices.
- Whisk flour, baking powder, and salt in a medium bowl. Separate eggs amongst two large bowls. Beat the egg yolks for approx. 2 min., or until thick and pale yellow. While beating, add sugar, pineapple juice, and vanilla extract. With the beaters on low, add the flour mixture and beat until just combined. Add pistachios to a food processor and pulse until roughly chopped. Then add chopped pistachios to the batter, reserving around a teaspoon of pistachios for serving.
- Using clean beaters, beat the egg whites to stiff peaks. Gently fold the sour cream into the flour batter, then the egg whites, then spoon the batter evenly into the muffin tins.
- Bake at 190°C/375°F for approx. 20 min. Cool for at least 10 min., then invert the pan onto a baking sheet. Serve topped with remaining pistachios and enjoy!

- In a small pot over medium heat stir together 1/4 cup butter, 1/2 cup brown sugar and a teaspoon of whiskey. Once the mixture starts to bubble, let it cook another minute or two. It should thicken a little. Remove from heat and spoon into a buttered cupcake pan. Now lay in the pineapple slices and cherry halves. I found that my pineapple slices were a bit too big for standard size baking cups. To remedy this, I sliced out a bit of the pineapple, shown in the photo above.
- For the batter first whisk together the flour, baking powder, salt and cinnamon. Now cream together the softened butter and sugar. Stir in the eggs, whiskey and vanilla extract. Now add in half the flour mixture, stir. Then pour in the reserved 1/2 cup pineapple juice, stir. Then the remaining flour mixture. Spoon mixture over the prepared pineapple filled pans. Don't overfill the cups, but they will be slightly more full than standard cupcake recipes. One heaping spoonful per cup should do it.
- Bake at 350°F for 25-28 minutes until golden brown and a tooth pick inserted in the center comes out clean. Allow to cool for a few minutes. While they cooled, I laid a cutting board over the cakes to help create a flatter bottom for them to sit on. Invert the pan over a cutting board or large plate to turn the mini cakes upside down (which for these is right side up). If any pineapple pieces fall off, put them back in place.
