2 eggs
2/3 cup white sugar
4 tablespoons pineapple juice
2/3 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup butter (1/2 stick or 4 tablespoons)
2/3 cup brown sugar
1 (14 ounce) can pineapple rings
6 maraschino cherries

Steps:

  • Preheat oven to 350°F Spray your muffin tins with non-stick cooking spray.
  • In a mixing bowl, add eggs, white sugar, and pineapple juice. Beat for 2 minutes. In a separate bowl, sift together the flour, baking powder, and salt. Add to the wet ingredients and turn mixer back on for 2 minutes.
  • In a small sauce pan, melt the butter and add the brown sugar. Stir on low heat for one minute.
  • Spoon layer of the warm brown sugar mixture into the bottom of each muffin tin, then place a pineapple ring on top. Add a cherry in the middle of each pineapple. Pour cake mixture over to fill muffin tin 3/4 of the way full. If you are using regular muffin tins, you will need to cut down the rings to fit or just use pineapple tidbits.
  • Bake for 30-35 minutes, until a wooden pick in the center of cakes comes out clean.

3 cans (8 oz each) pineapple slices in juice, drained reserving juice
12 maraschino cherries
1 box Betty Crocker™ Super Moist™ yellow cake mix
1 cup pineapple juice (from cans of pineapple)
1/2 cup vegetable oil
3 eggs

Steps:

  • Heat oven to 350°F. Place 1 teaspoon melted butter in each of 12 ungreased jumbo or large muffin cups. Add 1 tablespoon brown sugar to each muffin cup. Place 1 pineapple slice in each cup; place 1 cherry in center of each pineapple slice.
  • In large bowl, beat cake mix, 1 cup pineapple juice, the oil and eggs with electric mixer on low speed until moistened; beat 2 minutes on high speed. Divide batter evenly among muffin cups.
  • Bake 30 to 35 minutes or until golden brown and cakes spring back with touched lightly in center. Cool cakes in cups 5 to 10 minutes.
  • Place cookie sheet upside down over each muffin pan; turn cookie sheet and muffin pan over. Remove pan. Serve cakes warm.

  • Preheat oven to 350 degrees (F). Generously spray a 12-mold JUMBO muffin tin with non-stick cooking spray; set aside.

50g light soft brown sugar
7 pineapple rings in syrup, drained and syrup reserved
7 glacé cherries
100g softened butter
100g golden caster sugar
100g self-raising flour
1 tsp baking powder
1 tsp vanilla extract
2 eggs

Steps:

  • Heat oven to 180C/160C fan/gas 4.
  • For the topping, beat 50g softened butter and 50g light soft brown sugar together until creamy. Spread over the base and a quarter of the way up the sides of a 20cm round cake tin. Arrange 7 pineapple rings on top (reserving the syrup for later), then place 7 glacé cherries in the centres of the rings.
  • Place 100g softened butter, 100g golden caster sugar, 100g self-raising flour, 1 tsp baking powder, 1 tsp vanilla extract and 2 eggs in a bowl along with 2 tbsp of the reserved pineapple syrup. Using an electric whisk, beat to a soft consistency.
  • Spoon into the tin on top of the pineapple and smooth it out so it's level. Bake for 35 mins. Leave to stand for 5 mins, then turn out onto a plate. Serve warm with a scoop of ice cream.

2 medium peaches, peeled
1-ounce finely chopped crystallized ginger, approximately 3 tablespoons

1/8 teaspoon baking soda
1/8 teaspoon kosher salt
1/3 cup granulated sugar
1/2 cup buttermilk, room temperature
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F.
  • Divide 2 tablespoons of the butter between 4 (6-ounce) ramekins. Melt the remaining tablespoon of butter and set aside. Evenly divide the brown sugar between the ramekins; sprinkling it into the bottoms of the dishes. Cut each peach into 12 to 14 pieces. Lay the peaches on top of the sugar; evenly dividing them between the dishes and sprinkle with the ginger. Set aside.
  • In a medium mixing bowl whisk together the flour, baking powder, baking soda and salt. In a separate bowl whisk together the sugar, buttermilk, vanilla extract and 1 tablespoon of melted butter. Add the wet mixture to the dry mixture and stir just until combine. Pour the batter over the peaches; dividing the mixture evenly between the dishes. Place on the middle rack of the oven and bake for 20 to 25 minutes or until the cake reaches an internal temperature of 190 degrees F on an instant-read thermometer.
  • Remove from the oven to a rack and allow to cool for 5 minutes. Run a knife around the edge of each dish and turn upside down onto a serving plate. Repeat with each cake. Serve immediately with whipped cream or ice cream if desired.

2 tbsp rum , optional
6 canned pineapple rings
6 glacé cherries
140g butter , softened
140g caster sugar
2 large eggs , beaten
140g self-raising flour
1 tsp baking powder
50g desiccated coconut
6 tbsp milk
custard , to serve

Steps:

  • First, make the topping. In a small pan heat the butter, sugar and rum (if using), on a low heat until dissolved, bubble for a few mins until slightly thickened. Divide between 6 really well-greased, 200ml ramekins. Add a pineapple ring with a glacé cherry in the middle to each.
  • Heat oven to 180C/160C fan/gas 4. Beat together the butter and sugar with an electric whisk until pale and fluffy. Gradually beat in the eggs, then fold in the dry ingredients. Finally stir in the milk and divide the mixture between the ramekins. Put them on a baking tray and cook for 25-30 mins until risen, golden and springy to the touch.
  • To serve, turn the ramekins upsidedown onto a plate or a bowl and tap gently to release. Serve with custard.

Four 1/4-inch-thick slices fresh pineapple, peeled and cored
1/2 cup sifted cake flour
1/2 teaspoon baking powder
Pinch of kosher salt
2 tablespoons vegetable oil
3 tablespoons frozen pineapple juice concentrate, at room temperature
1/4 teaspoon pure vanilla extract
2 large egg whites
1 tablespoon sifted confectioners' sugar

Steps:

  • Place a rack in the center of the oven and preheat to 350 degrees.
  • Spray four 4-inch-wide shallow ramekins with nonstick cooking spray. Sprinkle the bottom of each with 1/4 teaspoon sugar, place a slice of pineapple in each ramekin, and set aside.
  • Sift together the flour, remaining sugar, baking powder, and salt into a large mixing bowl. Make a well in the center of the dry ingredients and add the oil, pineapple juice concentrate, and vanilla. Set aside.
  • In another large mixing bowl, beat the egg whites until they are white and foamy, about 1 minute. Add the confectioners' sugar and continue beating until stiff but not dry, about 2 minutes. 1 tablespoon water
2 cups lightly packed light brown sugar

2 1/2 teaspoons baking powder
2 sticks unsalted butter, room temperature
2 cups granulated sugar
2 large eggs
1/2 cup buttermilk
2 teaspoons pure vanilla extract
Confectioners' sugar, for dusting cake
1 quart yogurt gelato, store-bought, for serving

Steps:

  • Preheat oven to 350 degrees F.
  • Peel the pineapple and remove core. Slice into (1-inch) thick circles.
  • In a small saucepan melt butter with 1 tablespoon of water and add light brown sugar. Stir well with a whisk over medium heat until the sugar is completely dissolved and you have a nice smooth caramel, about 3 to 4 minutes. Pour into a round 9 1/2-inch nonstick cake pan. Arrange pineapple circles evenly in the caramel, (1 in the center and 5 around the outside usually works), and press down so they are submerged in the caramel. Place 1 maraschino cherry in the center of each pineapple ring. Make the batter: Sift flour and baking powder together. Add remaining buttermilk and then remaining flour. Pour the batter into the cake pan over the caramel and pineapple. Spread out evenly with a rubber spatula. Place the cake pan on a roasting tray to catch any caramel that may bubble over and bake in the oven for approx 1 hour. The cake should be nice and golden on top and puffed up slightly. When gently pressed in the center it should bounce back. Allow to cool slightly, (about 1 minute), before inverting onto a cake plate. Dust very lightly with confectioners' sugar and serve each slice with a scoop of yogurt gelato.

2 tablespoons pineapple juice plus 2/3 cup
1/2 cup packed light brown sugar
2 tablespoons unsalted butter, at room temperature
3 egg whites
2/3 cup water
2/3 cup vegetable oil
1 1/2 teaspoons almond extract
One 18.25-ounce box white cake mix (recommended: Betty Crocker Super Moist)

Steps:

  • Place an oven rack in the lower 1/3 of the oven. Preheat the oven to 325 degrees F. Butter and flour a mini Bundt pan.
  • For the Cakes: Place the pineapple in the bowl of a food processor. Pulse until coarsely chopped. In a 10-inch nonstick skillet, combine the chopped pineapple, 2 tablespoons pineapple juice, sugar, and butter over medium-high heat. Bring the mixture to a boil, stirring occasionally. Cook until the liquid evaporates and the mixture begins to brown, about 10 to 15 minutes. Spoon the pineapple mixture into the prepared pan.
  • In a large mixing bowl, combine the egg whites, water, vegetable oil, almond extract, cake mix, and 2/3 cup pineapple juice. Place a piece of parchment paper on top of the cakes. Put a baking sheet, upside-down, on top of the parchment paper.   • In a large sauce pan, melt the butter and add both sugars. Stir until they both dissolve and bring to a slight boil. Open the can of pineapple and with a spoon scoop the crushed pineapple into the bubbling butter. You want to do this so there isn’t a lot of water into mixture. Also you are going to need some of the pineapple juice for the glaze. Don’t forget. Then add the chopped cherries and stir evenly. Allow to simmer for 2-3 minutes.
  • One tablespoon at a time, add the cornstarch and stir until each tablespoon completely dissolves. The filling will thicken and once it does remove from heat and allow to slightly cool.
  • Take one roll of the pastry sheets and roll it out on a floured surface. If there are gaps in the pastry, you can take a little bit of water and mesh it back together. With a round biscuit cutter about the size of 2.3” /5.8 cm or a fairly large size biscuit cutter, make as many rounds as you can on each sheet.
  • Take a small spoon and add some of the filling in the middle of each round. Bring one side of the pastry round together and pinch the edges together until they are sealed and use the edges of a fork to press around the edges. Don't overfill the cups, but they will be slightly more full than standard cupcake recipes. One heaping spoonful per cup should do it.
  • Bake at 350°F for 25-28 minutes until golden brown and a tooth pick inserted in the center comes out clean. Allow to cool for a few minutes. While they cooled, I laid a cutting board over the cakes to help create a flatter bottom for them to sit on. Invert the pan over a cutting board or large plate to turn the mini cakes upside down (which for these is right side up). If any pineapple pieces fall off, put them back in place.
