1 teaspoon minced garlic
½ cup chopped jalapeno peppers
¼ cup shredded pepperjack cheese
½ cup mayonnaise
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
1 pinch salt
½ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 inch baking dish.
  • In a medium bowl, mix the imitation crabmeat, garlic, jalapeno peppers, pepperjack cheese, mayonnaise, Worcestershire sauce, hot sauce and salt.
  • Transfer imitation crabmeat mixture to the baking dish. Top with Parmesan cheese.
  • Bake in the preheated oven 25 minutes, or until bubbly and lightly browned.

1/2 pound cooked shrimp, chopped
3 scallions, chopped
1/2 cup mayonnaise
3 tablespoons tobiko (flying fish caviar), plus more for garnish (available in Asian markets)
1/2 lemon, juiced
1 tablespoon sriracha hot chili sauce, or other hot sauce
Kosher salt
Finely chopped chives, for garnish

Steps:

  • Thaw the crab sticks according to package directions. Pull the crab sticks into strands and put them into a large bowl. Add the shrimp, scallions, mayonnaise, tobiko, lemon juice, and hot sauce. Mix well then taste and adjust the seasoning with salt. Serve in chilled martini glasses garnished with more tobiko and chives.

3 cups fresh corn kernels (from about 6 ears of corn)
1 small red onion, finely chopped (about 1/2 cup)
2 tablespoons fresh lemon juice
Pinch of sugar
1 teaspoon minced, seeded hot red chile, such as red Thai chile
3 ounces lump crabmeat (about 3/4 cup)
1 tablespoon coarsely chopped fresh basil, plus small leaves for garnish
1/2 teaspoon coarse salt
Freshly ground pepper, to taste

Steps:

  • Heat 1 teaspoon oil in a nonstick skillet over medium heat. Add corn, and cook until tender, about 3 minutes. Remove from heat. Stir in onion. Let cool.
  • Whisk together lemon juice and sugar. Drizzle in remaining tablespoon plus 2 teaspoons oil, whisking until combined.
  • Combine corn-onion mixture, chile, crabmeat, and basil. Gently stir in lemon dressing, salt, and pepper. Cover, and refrigerate until chilled, at least 30 minutes (or up to 2 hours). Serve garnished with basil leaves.

1 tablespoon lemon juice
2 garlic cloves, minced
1 teaspoon ground mustard
1/2 cup mayonnaise

1 package (17.3 ounces) frozen puff pastry, thawed
1 large egg
1 tablespoon water

  • Preheat oven to 375°. Combine the first 12 ingredients. Refrigerate, covered, at least 1 hour., Meanwhile, on a lightly floured surface, unfold puff pastry. Roll each pastry into a 10-in. square; cut each into twenty-five 2-in. squares. Using a round 1-1/2-in. cookie cutter, cut out the centers of half the puff pastry squares. Whisk egg and water; brush over pastry. Place cutout squares on top of solid squares; transfer to parchment-lined baking sheets., Bake until golden brown, about 18 minutes. Cool to room temperature. 1 teaspoon Old Bay Seasoning

1 lb crabmeat, preferably lump, you could you imitation I suppose
1 cup grated cheddar cheese, gouda works well, too

Steps:

  • Preheat oven to 350.
  • In a skillet or saucepan, melt butter. Saute onions and peppers over medium heat until tender; stir in the crushed crackers; remove from heat.
  • In a mixing bowl, beat together cream cheese, sour cream, worcestershire, hot sauce, and dry seasonings.
  • Stir in the sauteed onion/pepper/cracker mixture.
  • Gently fold in the crabmeat -- careful not to break up the lumps too much.
  • Pour into a 2-1/2 - 3 quart casserole dish. Bake uncovered for 20 minutes at 350. Remove from oven and stir. Sprinkle cheese on top and return to oven for another 10 minutes.

Spicy Crab Roll is a popular Japanese sushi roll - creamy, satisfying, and fiery spicy. The kani crab stick is shredded and then seasoned with spicy sriracha mayo, then wrapped in nori seaweed sheets and seasoned rice.

1 cup sushi rice (short-grain sushi rice)
1 cup water
1 ½ tablespoons sushi vinegar ((or mix 1 tablespoon rice vinegar, 1/2 tablespoon sugar, and 1/2 teaspoon salt))
3 teaspoons mayonnaise
1 ½ teaspoons sriracha sauce
4 oz kani crab meat ((imitation crab or canned crab meat))
2 sheets nori seaweed
2 tablespoons sesame seeds

Steps:

  • Rinse the rice and add to the rice cooker. Then add water and cook according to the instructions.
  • Once cooked, transfer to a large bowl and let it cool. When it's still very warm, mix in the sushi vinegar (or the mixture of rice vinegar, sugar and salt).
  • In a clear bowl, mix together Sriracha sauce and mayonnaise. Taste and add more Sriracha if you prefer a spicier flavor.
  • Shred the imitation crab meat using your hands or two forks.
  • Add Sriracha mayo and mix well.
  • Cut the nori sheet into two halves with kitchen scissors.
  • Place half of a nori sheet on top of the bamboo mat shiny side facing down.
  • Spread seasoned sushi rice (about 3/4 cup) over nori evenly. Press the rice gently with your hands. (Tips: You can dip your hands in Tezu water to prevent the rice from sticking to your hands).
  • Sprinkle sesame seeds on top of the rice.
  • Flip the sheet and let the rice side facing down.
  • Add the spicy Kani crab salad to the middle of the nori sheet.
  • Place the thumbs underneath the bamboo mat and lift the edge up and over the filling.
  • Roll the bamboo mat away from you and press the rice and filling together. Keep rolling until the ends meet.
  • More the roll to a cutting board and cut it into 8 pieces.
  • Drizzle more spicy mayo sauce on top of the roll for some extra heat.
