A friend of mine used to bring this to all of our parties. It's quick to assemble, delicious, travels well and can be frozen.

Steps:
- Heat oven to 350.
- Melt stick of butter in 13x9 pan.
- Mix all other ingredients, except cheese, in a bowl until well blended.
- Pour in buttered dish.
- Top with cheese.
- Bake for about 45 minutes til brown on top.

- Beat eggs, add milk, blend well.
- Add all other ingredients pour into prepared pan.
- Bake 350 for 20 minutes.
- Reduce heat to 325 and bake for 1 hour or until firm.
- Test with a knife inserted into center of casserole come clean.

- Combine the 2 cans of corn in a large bowl; add the green pepper, milk, and 1 beaten egg.
- Next put the cracker crumbs, melted butter, sugar, and pepper into the corn mixture; mix well and put into a 2-quart buttered casserole.
- Bake at 350 degrees for 1 hour.

- Preheat the oven to 325 degrees F. Spray a 9-inch square baking dish with nonstick spray.
- Stir together the whole-kernel corn, cream-style corn, corn muffin mix, sour cream and butter in a large bowl. Stir in the ham and scallions until just combined. Pour into the prepared baking dish and bake until golden brown, about 1 hour 15 minutes.
- Sprinkle evenly with the Cheddar and continue to bake until the cheese is melted, about 5 minutes. Sprinkle with scallions before serving.

- In a large bowl, combine all the ingredients; mix well.

- Preheat oven to 350 degrees.
- Cook the rice in boiling water and simmer for 15 minutes, drain and set aside until needed.
- Saute the onions in butter until soft then add the sweet peppers, mushrooms and drained corn, jalapeno peppers, salt and pepper, cooking on low for 5 minutes.
