CHEESE STRAWS
Flaky, buttery cheese straws are a party hit with kids and grown-ups. Crank up the mustard and pepper if you want more zing.

Steps:
- Sift the flour and a pinch of salt into a bowl. Using your fingertips, rub in the butter until all the lumps are gone and the texture is like fine breadcrumbs. Stir in the cheese, mustard powder, cayenne, and egg yolks. Add 4-5 tablespoons of cold water and mix to a firm dough. Wrap in cling film and chill in the fridge for 30 minutes.
- Preheat the oven to 190C/375F/Gas 5. Line a baking sheet with baking parchment. Roll out the dough to a square, roughly the thickness of a £2 coin. Cut the square in half, then cut each half into 1cm/½in strips. Transfer carefully onto the lined baking sheet and bake for 10-15 minutes, until crisp, then leave to cool on the tray.
PARTY-PERFECT CHEESE STRAWS

- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper or silicone baking mats.
- Lightly flour your work surface. Unfold the sheets of puff pastry and roll each until they are 10-by-12-inches in size. Brush both sheets of puff pastry with the egg wash.
- Evenly sprinkle the Parmesan, Gruyere and poppy seeds atop the puff pastry. Then use a rolling pin to lightly roll the toppings into the pastry.
- Using a sharp knife or pizza wheel, cut each sheet of puff pastry into twelve 1-inch strips. Twist the strips, and then arrange them on the baking sheets, spacing them 1 inch apart.
- Bake the straws until they are golden brown and puffed, 10 to 15 minutes. Turn the straws over and bake them an additional 2 minutes. Remove the straws from the oven and let them cool before serving.

This is a favorite Christmas recipe of my father's and husband's. It's fairly simple to do and tastes good.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease a cookie sheet.
- In a large bowl cream butter and cheese. Stir in flour and salt; mix well. On a lightly floured surface, roll the dough out to 1/2 inch in thickness. Cut into 2 inch strips and sprinkle with ground red pepper. Place strips on prepared cookie sheet(s) 1 1/2 inches apart.
- Bake in preheated oven for 10 to 15 minutes, or until crisp.

CLASSIC CHEESE STRAWS

- Unfold the puff pastry sheets on a lightly floured surface. Beat the egg with 1 tablespoon water; generously brush on the pastry sheets (reserve the remaining egg wash).
- Combine the cheddar, parmesan, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl. Sprinkle the cheese mixture over 1 pastry sheet, then place the other pastry sheet on top, egg wash-side down, lining up the edges. Lightly dust the pastry with flour; firmly press the top sheet down, then roll out the sandwiched pastry sheets into a 10-by-12-inch rectangle.
- Line 2 baking sheets with parchment paper. Cut the puff pastry rectangle in half lengthwise. Cut each half crosswise into 18 strips. Twist each strip a few times and arrange 1/2 inch apart on the prepared baking sheets. Brush with the reserved egg wash. Refrigerate at least 20 minutes or up to 1 day.
- Position racks in the upper and lower thirds of the oven and preheat to 375 degrees F. Bake the cheese straws, switching and rotating the baking sheets halfway through, until puffed and golden brown, 30 to 35 minutes. Slide the straws (on the parchment) onto a rack and let cool completely.
NANA'S FAMOUS CHEESE STRAWS
A recipe passed on through generations! The sharper the cheese the better. If you don't have a cookie press don't worry - cheese cookies taste just as good!!

Steps:
- preheat oven to 325.
- mix all ingredients together in a large bowl.
- mix it very good to incorporate the ingredients evenly (I use my hands).
- if you have a cookie press, fill it using the manufacturers directions and set it on the star press.
- Using a cookie sheet make rows of the cheese straws longways.
- If you do not have a press then you can make balls and place on a cookie sheet (works just as well).
- put in oven for 10-12 minutes or until crisp.
- Remove from heat and let stand for a few minutes.
- Enjoy!

- Sift the flour, mustard, salt and cayenne into a medium bowl. Using an electric mixer, beat the cheese and butter on low speed until well blended. Gradually beat in the flour until completely incorporated. Add the water and beat for 1 minute.
- Turn the dough out onto a lightly floured surface and knead 5 times. On a large sheet of wax paper, roll the dough into a 12-by-9-inch rectangle. Slide the dough onto a cookie sheet and refrigerate until chilled, about 15 minutes.
- Preheat the oven to 425°. Cut the dough in half crosswise, then cut it into 6-by-1/4-inch strips. Transfer the strips to 2 cookie sheets. Bake 1 sheet at a time for about 14 minutes, or until the cheese straws are golden brown and crisp. Let cool slightly, then transfer to a rack to cool completely.
