- Wash, dry and prep veggies and shrimp.
- You'll want to cook the asparagus first. You can either steam it or blanche it in boiling water. If you're going the steaming route, place a steamer basket in a large pot and add a few inches of water. Bring to a boil and then add asparagus. Cover and cook 4-6 minutes, or until tender but still has a bit of a bite. You don't want mushy asparagus! Remove from steamer basket and let cool. If you're blanching, bring a large pot of salted water to a boil and add asparagus. Cook 2-4 minutes, or until tender but still has a bit of a bite. Drain and let cool. Cooking time for steaming and blanching will depend on the size of your spears.
- While the asparagus is cooking, whisk together the 1/4 cup olive oil, lemon juice and dijon for the vinaigrette. Season with salt and pepper to taste.
- While the asparagus is cooling, cook the shrimp. Season your shrimp with salt and pepper and if you have any other herb blend you like to use, add that too! I used a garlic herb blend. Heat 1 tablespoon of olive oil in a large skillet. Add shrimp and cook 2-3 minutes on medium-high heat or until opaque and cooked through. Remove from heat.
- To assemble the salad, place the asparagus, shrimp, avocado, tomatoes and basil in a bowl. Pour the vinaigrette over it and lightly toss to combine and coat. Season again with salt and pepper to taste. Serve at room temperature or chilled.

- Bring both a medium pot of water and a medium sauté pan of water and to a boil. Add the shrimp to the pot and the asparagus to the sauté pan and cook for 2-3 minutes. Use a skimmer or tongs to transfer the shrimp and asparagus to an ice water bath. Drain and then slice the asparagus into 1 1/2 inch pieces.
- Add the shrimp, sliced asparagus, baby spinach, avocado and green onion to a salad bowl. Add the dressing, season with salt and pepper and toss it all together.

- Preheat a grill or grill pan to medium high.
- Make the dressing. Combine the mayonnaise, celery leaves, 2 tablespoons chopped cilantro, 1 tablespoon water, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Grate in the zest of 1 lime and squeeze in the juice.
- Toss the shrimp with the vegetable oil, 1/4 teaspoon salt and a few grinds of pepper in a bowl. Arrange the shrimp on the grill and cook until pink and just firm, about 2 minutes per side. Transfer to the bowl with the dressing; squeeze in the juice of the remaining 1/2 lime.
- Add the sliced celery, avocados, salad mix and radishes to the bowl with the shrimp; toss to coat. Top with the remaining 1 tablespoon chopped cilantro.

- To make the dressing: In the bowl of a food processor or mini chopper, add the walnuts, shallots and garlic. Pulse until the walnuts are crumbly but the mixture is starting to get a little pasty. Add the oil, vinegar, honey, salt and pepper and puree until smooth. Adjust the seasoning if necessary.
- For the salad: Bring a large pot of salted water to a boil. Fill a large bowl with cold water and ice and set aside. Cook the asparagus until crisp-tender, 1 to 2 minutes, then transfer immediately to the ice bath to chill for 2 to 3 minutes. Drain and pat dry. Cut diagonally on a long, sharp bias into 2-inch pieces. Add to a serving bowl.
- Add the radishes to the asparagus. Squeeze the lemon juice over the vegetables and season with a pinch of salt and a few grinds of pepper. Gently toss. Spoon the dressing over the salad and toss again. Arrange the avocado over the salad, then garnish with the tarragon and serve immediately.

- To make the vinaigrette, whisk together the lime juice, cumin, lime zest, garlic, mustard, salt and pepper. Whisk in the olive oil. Set aside.
- To make the salad, bring a saucepan three-fourths full of water to a boil. Add the shrimp and cook until they curl and turn pink, about 3 minutes. Drain and pat dry. Peel and devein and place in a large non-aluminum bowl. Add half of the vinaigrette to the shrimp, toss well, and let stand for 10 minutes.
- Meanwhile, halve, pit and peel the avocados and cut lengthwise into slices 1/2 inch thick. Core and halve the tomatoes and cut into wedges 1/2 inch wide. Add the avocados, tomatoes, and cilantro to the shrimp and toss gently.
- Place the salad greens in a separate bowl. Whisk the remaining vinaigrette and pour over the greens. Toss well. Divide the greens among individual plates. Top with the shrimp mixture. Season each serving with several grinds of pepper and serve at once.
