Dinner on the table, quickly, with a minimal effort! I found this recipe on a another website. It is so easy and delicious!

1 1/2 lbs cod or 1 1/2 lbs tilapia fillets
1 cup salsa
1 cup shredded sharp cheddar cheese or 1 cup colby-monterey jack cheese
1/2 cup coarsely crushed corn chips
avocado, peeled,pitted and sliced,as garnish (optional)
sour cream, as garnish (optional)
green chili, as garnish (optional)
ripe olives, as garnish (optional)

Steps:

  • Lay the fish fillets in a single layer in a greased 8"x12" baking dish.
  • Pour the salsa over the top, and then sprinkle evenly with the shredded cheese.
  • Top everything with the crushed corn chips.
  • Bake, uncovered, at 400°F for 15 minutes, or until fish is opaque and flakes with a fork.
  • Serve with choice of garnish: sliced avocado, green chiles, olives and sour cream.

1 ½ pounds cod
1 cup salsa
1 cup shredded sharp Cheddar cheese
½ cup coarsely crushed corn chips
1 avocado - peeled, pitted and sliced
¼ cup sour cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease one 8x12 inch baking dish.
  • Rinse fish fillets under cold water, and pat dry with paper towels. Lay fillets side by side in the prepared baking dish. Pour the salsa over the top, and sprinkle evenly with the shredded cheese. Top with the crushed corn chips.
  • Bake, uncovered, in the preheated oven for 15 minutes, or until fish is opaque and flakes with a fork. Serve topped with sliced avocado and sour cream.

1 (15 ounce) can black beans (drained and rinsed)
1 cup frozen whole kernel corn
1 cup chopped cooked turkey
1 (14 1/2 ounce) can chicken broth
sour cream (for garnish) (optional)
cilantro (for garnish) (optional)

Steps:

  • In large saucepan combine salsa, black beans, corn, turkey and broth.
  • Bring to a boil over medium-high heat.
  • Reduce heat and simmer 5 minutes.
  • Garnish each serving with sour cream and cilantro.

Make this tasty Mexican rice to serve a crowd. Our recipe is vegan but if everyone you're cooking for eats meat, some chopped bacon in with the onions works well

2 tbsp olive oil
1 onion , finely chopped
2 peppers (choose your favourite colours), finely chopped
4 garlic cloves , very finely chopped or crushed
1 tsp cumin seeds or ½ tsp ground cumin
1 tbsp tomato purée
small pinch of sweet smoked paprika
250g basmati rice
450ml hot vegetable stock (make sure it's vegan-friendly)
finely chopped coriander and sliced spring onions, to serve

Steps:

  • Heat the oil in a large saucepan with a lid, then add the onion, pepper, garlic and cumin and sizzle gently for 8-10 mins until the vegetables are soft and golden. Stir in the tomato purée and smoked paprika and cook for 1 min, then stir in the rice.
  • Pour over the stock, then cover and bring to the boil. Stir quickly, then cover again and place on the lowest heat possible. Simmer for 10 mins. Turn off the heat and leave, covered, for a further 10 mins. If serving straightaway, stir through the coriander and spring onions; alternatively, leave the rice to cool, chill, then re-fry before serving and stir the coriander and spring onions through at the end.

36 ounces thawed haddock or 36 ounces cod fish fillets
1/2 cup lime juice
1/2 cup all-purpose flour
2 tablespoons taco seasoning
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
3 tablespoons vegetable oil

Steps:

  • In a dish, arrange fish in a single layer.
  • Pour lime juice over fish.
  • Let stand for 15 minutes.
  • Combine the flour, taco seasoning, cumin and cayenne.
  • Remove fillets from juice and pat dry with paper towels and discard lime juice.
  • Coat fillets with flour mixture.
  • In a large skillet, cook fillets, in batches, over medium-high heat in oil for 6-8 minutes on each side or until fish flakes easily with a fork.

If you like Mexican food and fish- this dish is for you! One of my favorite meals. From Harpoon Henry's Restaurant in San Diego. This comes together in a flash with simple ingredients.

6 (4 ounce) red snapper fillets (or any firm fleshed fish such as tilapia or cod)
1/2 cup flour
4 tablespoons butter
6 ounces green chili sauce (just buy it canned)
3 ounces diced green chilies (just buy it canned)
1 lb monterey jack and cheddar cheese blend (grated)
3 tablespoons chopped cilantro leaves (garnish)
salt (to taste)
pepper (to taste)

Steps:

  • Preheat oven to 350.
  • Coat fillets with flour seasoned with salt and pepper to taste.
  • Heat butter in skillet and lightly sautee fillets in butter til done and flaky.
  • Transfer fillets into individual casserole dishes or small oven proof bowls.
  • Divide sauce and chilis among them evenly and then sprinkle cheese over each evenly.
  • Bake for 15 minutes till cheese is nice and melted.
  • Sprinkle with cilantro leaves.
  • Note:Sometimes I put a layer of mexican rice (try recipe #117892) or orzo flavored with some cumin in the bottom of the bowl before assembling. A one dish meal and you have only one barely dirty skillet to clean!
  • Note:Sometimes I make this just for myself. Fry fish-pour a little sauce-add a TBS of chilis- sprinkle some cheese. It's not brain surgery or rocket science. Save what's left in the cans for another use like adding to scrambled eggs. I hope you enjoy this dish as much as I have for many years.

Because they're quite laborious to prepare, tamales are served for special occasions throughout the year, and often people will get a group of people together to make them at special get-togethers called tamaladas.
  • Sopa Azteca. Tortilla soup is warm and filling. Crispy strips of fried tortillas are drowned in a spicy broth and usually garnished with avocado, cheese, dried chiles and sometimes chicharron (pork rind).
  • Guacamole. This dip is a favorite all around the world. Serve it with nachos or fresh vegetables, or as a topping for tacos. Guacamole will turn any ordinary party into a Mexican fiesta.

  • Mexican Drinks. Of course, tequila (or mezcal!) is a no-brainer, but there are many other choices of Mexican beverages, such as Mexican wine or beer or non-alcoholic aguas frescas.
