Crock Pot Creamy White Chicken Chili is the perfect creamy, spicy warm meal that you can throw into your crock pot and come back to an excellent meal.

Steps:
- Spray the crock of your slow cooker with non-stick cooking spray.
- Place diced onions and bell pepper in the bottom of the slow cooker.
- Season both sides of the chicken with taco seasoning; place chicken in an even layer on top of the peppers and onions.
- Add minced garlic.
- Pour chicken stock into the crock.
- Cover and cook for 5 hours on low.
- When finished cooking, use two forks to shred the chicken.
- Add all cheeses, diced green chilis (not drained) and drained beans to the crock.
- Cover and cook for 30-45 minutes more.
- Stir until all cheeses are blended into the broth and it has a creamy consistency.
- Serve in bowls and top with green onions and crispy tortilla strips.

- Spray 4-quart slow cooker with cooking spray. Add lasagna noodles, chicken, onion, garlic, Alfredo sauce, chicken broth, basil, salt and pepper to slow cooker. Stir gently; stir in 1 cup of the cheese.

- Heat oil in large heavy pot to med/high.
- Add onions & saute until translucent, about 10 minutes.
- Add garlic, chiles, chicken, cumin, oregano, and hot pepper.

- Cook onion in 2 Tbsp of the olive oil until soft and set aside.
- In a dutch oven, add remaining olive oil on low and add flour, stirring continuously to make a roux.
- Stir in onion, then gradually add broth, and half and half, whisking constantly.
- Bring mixture to a boil, then simmer.
- Stir in tabasco, chili powder, cumin, salt, and white pepper, beans, chicken, and chilies, simmer for approximately 30 minutes, stirring occasionally.
- Add sour cream, and half and half and simmer for another 15 minutes.
