1/4 cup milk
1 tsp. garlic powder
1/4 tsp. dried thyme leaves
1 lb. boneless skinless chicken breasts, cut into bite-size pieces
2 cups frozen mixed vegetables (carrots, corn, green beans, peas), thawed, drained
1 ready-to-use refrigerated pie crust (1/2 of 14.1-oz. pkg.)

Steps:

  • Heat oven to 400°F.
  • Mix cream cheese spread, milk and seasonings until blended. Cook and stir chicken in large nonstick skillet on medium heat 5 to 6 min. or until chicken is lightly browned. Add vegetables; cook 1 to 2 min. or until heated through. Stir in cream cheese mixture; spoon into 9-inch pie plate.
  • Cover with crust; seal and flute edge. Cut several slits in crust. Place pie plate on baking sheet.
  • Bake 25 to 30 min. or until golden brown.

1 tablespoon butter
1 large onion, chopped
2 teaspoons finely minced garlic
2 tablespoons all-purpose flour

3 carrots, halved and cut into 1-inch pieces (1 1/2 cups)
1 cup peeled and diced russet potato (1/2-inch)
1 granny smith apple, cored and cut into 1/2-inch pieces
2 1/2 cups chicken broth
1/2 cup frozen peas
1/4 cup chopped fresh dill
2 1/2 cups diced cooked chicken
salt and pepper, to taste
1 sheet prepared puff pastry, thawed if frozen (1/2 pound)

Steps:

  • Heat the oil and butter in a pot over low heat. Add the onion; cook, stirring, for 10 minutes. Add the garlic; cook 2 minutes more. Sprinkle with the flour and tarragon; cook, stirring constantly, for 1 to 2 minutes more.
  • Add the carrots, potatoes, apple, and broth; bring to a boil. Reduce heat to a gentle simmer and cook, partially covered, until the vegetables are tender, about 20 minutes. Add the peas, dill, and chicken; season to taste with salt and pepper, then cook 5 minutes more.
  • Preheat the oven to 350°F.
  • Spoon the mixture into a 2-quart round ovenproof casserole. On a lightly floured surface, roll puff pastry out to form a circle 2 inches larger than the casserole. My son's favorite food is pot pie and "complains" he does not get enough of it. Couple that reason with my in-law's visiting and needing an impressive dish, I used my leftover turkey from Thanksgiving and made this BIG pot pie. This definitely was a "wow" dish. The crust is downright beautiful, with its many deep layers that resemble puff pastry. It cuts beautifully and best of all you can make it in advance. Don't let the long instructions deter you. I make a lot of pot-pies and it really didn't take too much longer and the amount it makes is worth it.I did do a few shortcuts and it made it simpler and not as daunting.

4 1/2 cups all-purpose flour, plus
more all-purpose flour, for dusting
1 tablespoon salt
2 cups unsalted butter, cold and cut into small chunks
3/4 cup ice water, plus

8 cups chicken broth or 8 cups turkey broth
8 cups leftover cooked turkey or 8 cups cooked chicken, cut in small chunks
1/2 cup unsalted butter
1/2 cup all-purpose flour
sea salt
fresh ground black pepper
4 boiled carrots, cut in 1/2 inch circles (I cooked carrots and onions separately and added defrosted corn.)
1 cup sweet peas, defrosted
1 garlic clove, chopped
1 teaspoon dried thyme
1/2 lemon, juice of
1 egg, mixed with
3 tablespoons water, for egg wash for top of pastry

Steps:

  • Note: I used my leftover turkey stock and just added pepper.
  • I didn't use any of the herbs or lemon.
  • To make the pastry:.
  • Food Processor method: Pulse the butter, salt, flour in processor until size of small peas. Add water and do slow pulses until just combined.
  • Or use Tyler's from scratch method:.
  • Combine the flour and salt in a very large mixing bowl.
  • Add the butter and mix with a pastry blender or your hands until the mixture resembles coarse crumbs.
  • Pour in the ice water and work it in to bind the dough until it holds together without being too wet or sticky.
  • Squeeze a small amount together, if it is crumbly, add more ice water, 1 tablespoon at a time.
  • Wrap the large ball of dough in plastic wrap and refrigerate while preparing the rest of the recipe (feel free to make the dough the night before if you prefer.).
  • To make the pot pie filling.
  • Use a large stockpot and heat over medium-low heat.
  • Melt the butter and just as the foam subsides, add the flour, stirring constantly with a wooden spoon or whisk to prevent lumps.
  • This is a roux, which will act as a thickener.
  • Cook and stir the roux for one minute, to cook the raw flour taste out, stirring constantly.
  • Now, gradually pour in chicken broth, whisking the entire time to prevent lumps.
  • Whisk and simmer for 10 minutes to cook out the starchy taste of the flour and thicken the broth; it should look like cream of chicken soup.
  • Season the mixture with salt and pepper.

  • (Make sure your dough FITS on your pan and in the oven before going any further!).
  • Spoon the cooled chicken filling on the pastry that is on the pizza stone, leaving a border around the sides.
  • Lightly beat the egg with 3 tablespoons of water to make an egg wash and brush it on the dough border.
  • Fold the"free" dough over the filling like a blanket and crimp the ends with a fork to form a tight seal; it should look like a big pillow.
  • Brush the top of the giant chicken pie with the remaining egg wash, sprinkle with the coarse salt, and cut tiny slashes in the top so steam can escape.
  • Place the chicken pie in the oven and bake for 45 minutes to 1 hour until puffed and golden.
  • Let the chicken pie rest for 10 minutes before moving it.
  • Run a spatula underneath the pot pie to loosen it from the pizza stone.

  • To make the chicken broth: Put the chicken in a large stockpot and cover with 3 quarts of cool water. Add the vegetables and herbs and bring it up to a boil over medium-high heat. Simmer, uncovered, for 1 hour; skimming frequently as the oil rises to the surface. What we're doing here is not only cooking the chicken but also creating the base sauce for the pot pie. It's the old trick of killing two birds with one stone -- or one pot as the case may be. Remove the chicken to a platter to cool. When it's cool enough to handle shred the chicken meat, discarding the skin and bones, and set aside. Using a colander, strain the chicken broth into another pot and discard the solids; you should have about 2 quarts when you're done.
  • To make the pot pie filling: Wipe out the stockpot and put it back on the stovetop over medium-low heat. 1/2 teaspoon kosher salt
1/2 stick (4 tablespoons) unsalted butter, cold, cut into 1/2-inch cubes (see Cook's Note)
4 ounces cream cheese, cold, cut into 1/2-inch cubes
2 to 4 tablespoons ice water
1 tablespoon olive oil
1/2 medium onion, sliced into 1/8-inch-thick half-moons
1 clove garlic, minced
1 medium potato, peeled and cut into 1/4-inch cubes (about 1 cup)
1/2 cup French green beans, cut into 1/2-inch pieces
1/2 red bell pepper, chopped into 1/4-inch pieces
1/2 large rotisserie chicken, meat picked and shredded into bit-size pieces (about 2 cups)
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
3/4 cup heavy cream
1/2 cup whole milk
1/4 cup dry vermouth (see Cook's Note)
1/4 cup grated Parmesan (use the real deal!)
1/2 teaspoon chopped fresh thyme
Zest of 1/2 lemon
Kosher salt and freshly ground black pepper
1 egg whisked with 1 tablespoon water, for egg wash

Steps:

  • For the crust: Whisk together the flour and salt in a large mixing bowl. Add the butter and cream cheese and toss to coat with the flour. Using a pastry blender, two knives or your fingertips, work the fat into the flour until the mixture looks like moist cornmeal. Sprinkle in the water, a tablespoon at a time, gently working the mixture into a shaggy dough that just comes together when pinched. Gather the dough into a ball, then divide it in half and form into two disks. Wrap each disk in plastic and refrigerate for at least 20 minutes.
  • For the filling: Heat the olive oil in a large skillet over medium heat. Add the onions and garlic and sauté until translucent, about 4 minutes. Add the potatoes and continue to cook, stirring occasionally, until the potatoes have softened, about 10 minutes. Add the green beans and bell peppers; cook for another 2 minutes. Transfer to a large bowl with the chicken pieces and set aside.
  • In a saucepan, melt the butter over medium heat and whisk in the flour. Continue whisking over low heat for 2 to 3 minutes (it's OK if the roux colors -- I like the nutty flavor), and then add the cream, milk and vermouth. Continue stirring over medium heat until the mixture thickens, about 15 minutes. Remove from the heat and stir in the Parmesan, thyme and lemon zest. Season with salt and pepper, then pour the roux over the chicken-vegetable mixture. Stir to combine. Cover with plastic wrap and refrigerate until cool.
  • Roll out one of the disks of dough into a rough 12-inch round. Line a 9-inch pie plate with the dough so that it overhangs the edge by about 1/2 inch. Dock the dough in the pie pan by pricking the bottom with the tines of a fork. Add the filling to the lined pie plate. Roll out the second disk of dough into a 10-inch round and top the pie. Crimp the edges to seal. Cut slits in the top of the pie to vent. Place in the freezer until the crust feels frozen, 10 to 15 minutes. (At this point, the pie can be wrapped in plastic and then foil and frozen for up to a month. See Cook's Note for baking instructions.)
  • Preheat the oven to 375 degrees F. Brush the pot pie with egg wash, place on a baking sheet and transfer to the oven. Bake until the crust is golden brown and the filling is bubbling, about 40 minutes.

One 2- to 3-pound chicken fryer, cut up
3 celery stalks
3 medium carrots, peeled
1 large yellow onion
4 tablespoons (1/2 stick) butter
1/4 cup all-purpose flour
2 cups low-sodium chicken broth or stock
1 chicken bouillon cube
1/4 cup white wine, optional
1/2 cup frozen peas
1 cup heavy cream
2 sprigs fresh thyme
1 teaspoon kosher salt, or more as needed
Black pepper
1/2 recipe Thyme Pastry, recipe follows
3 cups all-purpose flour
1 teaspoon salt
1 1/2 cups (3 sticks) cold butter
1 egg
5 tablespoons cold water
1 tablespoon distilled white vinegar
1 sprig fresh thyme leaves

Steps:

  • For the chicken: Start by putting the chicken in a pot and covering it with water. Bring the water to a boil, and then reduce the heat to low. Simmer for 45 minutes, and then remove the chicken from the pot. Set the chicken aside to cool briefly.
  • Shred the chicken with 2 forks, reserving the bones. For the stock, return the bones to the pot and boil for 20 minutes. Remove the bones from the pot and discard.
  • For the pot pie: When you're ready to use the Thyme Pastry, remove from the freezer and allow it to sit on the counter to thaw slightly, about 20 minutes. Preheat the oven to 400 degrees F.
  • Begin by finely dicing the vegetables. Slice the celery stalks into narrow strips, then slice in the other direction to create a fine dice. Repeat this process with the carrots, and the onion.
  • Melt the butter in a large pot or Dutch oven over medium heat. Add the onion, carrots and celery. Saute until the vegetables start to turn translucent, a couple of minutes.
  • Add 2 cups of the shredded chicken and stir to combine. Sprinkle the flour evenly over the vegetables and chicken, and stir to combine. Cook for a couple of minutes, stirring gently.
  • Pour in the chicken broth, stirring constantly. Stir in the bouillon cube and wine if using. The flour will combine with the chicken to create a delicious gravy. Next, add the peas.
  • Pour in the cream and stir. Allow the mixture to cook over low heat, thickening gradually, about 4 minutes. Season with the thyme, salt and pepper, and remove from the heat. Taste and adjust the seasonings as needed. Be sure it's adequately salted!
  • Pour the chicken mixture into a deep pie pan or small casserole dish.
  • Roll out the pastry so that it's 1 inch larger than the pan. Place the crust on top of the chicken mixture and cut small slits in the top. Press the crust gently into the sides of the dish to seal. I don't worry about making a perfect edge on my chicken pot pie because a) it looks more rustic and b) I'm lazy, hungry and I want to eat.
  • Bake until the crust is golden brown and the filling is bubbly, about 30 minutes. Cool for 10 minutes before serving.
  • To freeze: Allow the filling to cool completely then top with the crust. Cover with plastic wrap or aluminum foil and place in the freezer.
  • To cook from frozen: Remove the pot pie from the freezer, brush with egg wash (1 egg mixed with 2 tablespoons water or cream) and place directly in a 375-degree F oven and bake until lightly browned and bubbly, 30 to 45 minutes.
  • For the thyme pastry: Combine the flour and salt in a large bowl. Using pastry cutter, gradually work the butter into the flour until the mixture resembles tiny pebbles. This step should take 3 or 4 minutes.
  • Lightly beat the egg with a fork, and then add it to the mixture. Next, add in the cold water and vinegar. Stir the mixture together until it's just combined, and then remove half the dough from the bowl. (Dividing the dough in half results in two pretty generous pie crusts. If you desire a thinner crust, you may divide the dough into three crusts.)
  • Place in a large plastic bag (do not seal) and slightly flatten with a rolling pin. This makes it much easier to roll out the crust later. After flattening, seal the bag tightly.
  • Repeat with the other half of the dough and place the plastic bags in the freezer. I like to make several batches of pie crust at a time so I always have a crust ready to go.
  • For recipes other than this pot pie, remove from the bag and place on a lightly floured surface. With a rolling pin, begin rolling the dough from the center, outward. Be gentle and patient; it'll take a little time to get the dough completely rolled out.
  • If you think the bottom is really sticking to the surface below, use a nice, sharp spatula to loosen it and sprinkle some extra flour on top. Then flip it over to finish rolling. Remember to roll from the center in single, outward strokes; no back-and-forth rolling.
  • Again with a spatula, loosen and lift the pie crust and carefully lay it over a pie pan. Using your hand, lightly form the crust so that it fits inside the pan and overlaps the edges.
  • Because it's quick and easy, I just tuck the excess dough under itself above the rim. Then you can apply whatever decorative effects that you like to the edge. Or you can leave it plain if you'd like! Just tell yourself it's more rustic that way!
  • Fill the pie crust with filling and bake according to the pie recipe's directions. Or, for a pre-baked crust, fill with pie weights (or pinto beans placed on aluminum foil) and bake at 400 degrees F until golden, about 10 minutes.

1 stalk celery
1 tablespoon salt
1/4 teaspoon peppercorn, whole
1 sprig parsley
1 bay leaf
1/3 cup butter
1 cup onion, chopped
1 cup carrot, chopped
1 cup celery, chopped
1 potato, chopped
1/4 cup peas
1/2 cup flour
2 cups chicken broth
1 cup cream, 1/2 and1/2
1 teaspoon salt
1/4 teaspoon pepper
3 cups flour
1 teaspoon salt
1 cup lard or 1 cup shortening
1 egg, slightly beaten
5 tablespoons water, ice
1 tablespoon vinegar
1 egg yolk
1 tablespoon milk

Steps:

  • Stew chicken. Debone chicken to get 4 cups cooked chicken (use rest for another chicken dish); get 2 cups broth (use rest of broth for another chicken dish).
  • Heat chicken fat or butter in skillet.
  • Saute onion, carrot, celery, and potato for 5 minutes until tender crisp; add peas.
  • Stir in flour until blended.
  • Stir in chicken broth and 1/2 and 1/2 cream.
  • Cook and stir over medium heat until mixture boils.
  • Season with salt and pepper.
  • Combine with chicken and pour mixture in 2 quart baking dish.
  • Roll out pastry to 1/4 inch thickness and 1 inch bigger than dish.
  • Cover chicken mixture; fold excess pastry under and crimp edge.
  • With a sharp knife cut a small diamond in middle of top crust.
  • Brush generously with egg yolk and milk topping mixture.
  • Bake in preheated 400 degree Fahrenheit oven for 30 minutes.
  • PASTRY:.
  • For pastry,combine flour and salt; cut in lard.
  • Mix egg, ice water, and vinegar.
  • Gradually stir into flour. Mix.
  • Roll out.
  • This dish freezes and reheats well.

1 cup potato, diced
1 cup onion, diced
1 cup celery, diced
1 cup carrot, diced
1/3 cup melted margarine
1/2 cup all-purpose flour
2 cups chicken broth
1 cup half-and-half
1 teaspoon salt
1/4 teaspoon pepper
4 cups chicken, cooked and chopped
2 pie crusts (either store bought or your own recipe)

Steps:

  • Preheat oven to 400°F.
  • Saute onion, celery, carrots and potatoes in margarine for 10 minutes.
  • Add flour to sauteed mixture, stirring well, cook one minute stirring constantly.
  • Combine broth and half and half.
  • Gradually stir into vegetable mixture.
  • Cook over medium heat stirring constantly until thickened and bubbly.
  • Stir in salt and pepper; add chicken and stir well.
  • Pour into shallow 2 quart casserole dish and top with pie shells.
  • Cut slits to allow steam to escape.
  • Bake for 40-50 minutes or until pastry is golden brown and filling is bubbly and cooked through.

1 large onion, chopped
2 teaspoons finely minced garlic
2 tablespoons all-purpose flour
2 teaspoons dried tarragon
3 carrots, halved and cut into 1-inch pieces (1 1/2 cups)
1 cup peeled and diced (1/2-inch) russet potatoes
1 Granny Smith apple, cored and cut into 1/2-inch pieces
2 1/2 cups chicken broth
1/2 cup fresh or frozen peas
1/4 cup chopped fresh dill
1 medium-sized ripe tomato, seeded and cut into 1/2-inch dice
2 1/2 cups diced cooked chicken
Salt and pepper, to taste
1 sheet prepared puff pastry (1/2 pound), thawed if frozen
1 egg mixed with 1 tablespoon water

Steps:

  • 1. Heat the oil and butter in a pot over low heat. Add the onion; cook, stirring, for 10 minutes. Add the garlic; cook 2 minutes more. Sprinkle with the flour and tarragon; cook, stirring constantly, for 1 to 2 minutes more.
  • 2. Add the carrots, potatoes, apple, and broth; bring to a boil. Reduce heat to a gentle simmer and cook, partially covered, until the vegetables are tender, about 20 minutes. Add the peas, dill, tomato, and chicken; season to taste with salt and pepper, then cook 5 minutes more.
  • 3. Preheat the oven to 350°F. Spoon the mixture into a 2-quart round ovenproof casserole. On a lightly floured surface, roll puff pastry out to form a circle 2 inches larger than the casserole. 1 cup sliced carrots
1 cup frozen green peas
½ cup sliced celery
⅓ cup butter
⅓ cup chopped onion
⅓ cup all-purpose flour
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon celery seed
1 ¾ cups chicken broth
⅔ cup milk
2 (9 inch) unbaked pie crusts

Steps:

  • Preheat oven to 425 degrees F (220 degrees C.)
  • In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.
  • In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.

Celebrate Easter with this spring chicken pot pie. It's kinder on your wallet than the traditional roast lamb, and equally enjoyable

4-6 skinless, boneless chicken thighs
1 tbsp olive oil
100g smoked bacon lardons
2 leeks , sliced
3 tbsp plain flour
100ml white wine (or extra stock)
200ml chicken stock
200g crème fraîche
100g frozen or fresh podded peas
1½ tbsp Dijon mustard
small bunch of tarragon , chopped
1 egg , beaten
320g sheet puff pastry

Steps:

  • Season the chicken thighs with some salt and pepper. Heat the oil in a heavy-based saucepan and fry the chicken for 3-4 mins on each side until lightly golden, then transfer to a plate. Add the bacon to the pan and fry for 5 mins until golden. Tip in the leeks and fry for another 5 mins.
  • Sprinkle the flour over the leeks and bacon, and stir until combined. Add the wine, if using, and bubble for a few minutes, then add the stock and stir well. Slice the chicken and return it to the pan - don't worry if it's not fully cooked through at this point, it will finish cooking in the oven.
  • Stir in the crème fraîche, peas, 1 tbsp mustard and the tarragon, and bubble for a few minutes until thick and saucy. Add a splash more stock or water if it seems too thick Remove the pie filling from the heat. Whisk the remaining ½ tbsp mustard with the egg in a bowl.
  • Heat the oven to 200C/180C fan/gas 6. Spoon the filling into a pie dish with a lip and use some of the egg mix to brush the sides of the dish. Unroll the pastry over the top of the pie and crimp the edges against the sides of the dish, then cut away any excess with a knife. Will keep frozen, well covered, for up to three months.
  • Brush the remaining egg glaze over the pie and make a small steam hole in the middle. Bake for 40 mins until golden and puffed. Serve with buttered new potatoes and steamed greens or carrots, if you like.

Steps:

  • Heat oven to 375°F.
