3 (6-inch-square) matzos
1 pound cottage cheese
3 large eggs
7 tablespoons sugar
1/2 teaspoon cinnamon
1/2 cup pecans, chopped (2 ounces)
1/3 cup raisins
1/2 stick (1/4 cup) unsalted butter, melted
Accompaniment: sour cream (optional)

Steps:

  • Preheat oven to 325°F.
  • Soak matzos in cold water until slightly softened, 1 to 2 minutes. Drain on a rack.
  • Stir together cottage cheese, eggs, 6 tablespoons sugar, cinnamon, pecans, and raisins.
  • Coat bottom and sides of an 8-inch square baking dish or pan with half of butter. Put 1 matzo in dish and spread half of cottage-cheese mixture over it. Top with another matzo and remaining cottage cheese mixture. Top with remaining matzo, brush with remaining butter, and sprinkle with remaining tablespoon sugar.
  • Bake pudding in middle of oven until golden, puffed, and set, about 1 hour. Cut into squares and serve warm.

1 pound currants
1 pound golden raisins
1 pound bread crumbs
1 pound brown sugar
8 ounces suet
4 ounces mixed candied citrus peel
4 ounces glace cherries, chopped
4 ounces almonds, chopped
1 lemon, grate rind
1 orange, grate rind
1 carrot, peeled and grated
1 apple, peeled and grated
2 tablespoons ground almonds
1 tablespoon all-purpose flour
1 teaspoon mixed spice
Pinch salt
6 to 8 eggs
5 ounces maple syrup
10 ounces stout beer (bottle) or dark beer (recommended: Guinness)
5 ounces brandy
5 ounces sherry
3 tablespoons confectioners' sugar, sifted
2 sticks butter
1/4 cup sugar
3 tablespoons brandy
1/4 cup cognac

Steps:

  • In a large bowl, mix fruits and dry ingredients first. Then mix with lightly beaten eggs and liquids. Grease the bottom of a bowl large enough to hold pudding and press mixture into it. Place waxed paper over the top and then foil over that, crimping it around the edges to keep firm. Either steam for 2 hours in pressure cooker with about 2 inches water or put in pan with water on the stove and steam for 4 hours. Keep checking water in pan to prevent burning. Store well wrapped for 3 to 4 months.
  • To make the brandy cream, add butter, sugar and brandy in a stand mixer and mix on high speed for 1 to 2 minutes.
  • Steam for 1 hour before serving, then release the pudding mold into the center of a plate. Sprinkle confectioners' sugar. Warm 1/4 cup of cognac in a small pot. Cup the cognac in a large basting spoon until it flames, then pour the cognac over the pudding. Top with a dollop of the brandy cream. Slice and serve.

I found this recipe while searching for an additional kugel to add to my Passover holiday menu. This was a HUGE success. You can pre-make the kugel and then right before you start your seder as your dinner is being kept warm in the oven place it inside to reheat. When your family reaches the festive meal portion of the evening spread the preserves on top and serve. 1 cup sugar
2 teaspoons cinnamon

5 sheets matzos
boiling water
6 large apples, peeled and chopped
1/4 lb butter, melted
12 ounces cherry preserves

Steps:

  • Preheat the oven to 350°F.
  • Grease a 9x13-inch pan.
  • Beat eggs until light and fluffy.
  • Break up matzos into small pieces. Pour boiling water over and drain well.
  • Add sugar to eggs; beat again.
  • Add matzo; beat again.
  • Add melted butter if making this dish for a meat meal use margarine; fold in apples.
  • Bake 1 hour.
  • Spread preserves on top; bake an additional 10 minutes longer.
  • If preparing this dish in advance, freeze the bottom without the preserves. Reheat, then add the preserves on top.
  • The original recipe states that the serving size is 24. My family likes this so much it makes about 10 servings so I double it and make it in two separate pans.

1 1/4 cups sugar
juice and peel of 1 lemon
1 lb strawberry, washed and hulled if large, cut in half lengthwise
1/2 lb blackberry, washed
1/2 lb blueberries, washed
3/4 lb raspberries
15 -20 slices white bread, very thin such as pepperidge farm crusts trimmed
2 cups freshly whipped cream

Steps:

  • Cook sugar, lemon juice, peel, and 2 1/4 cups water in a saucepan over medium-high heat until sugar dissolves, about 2 minutes.
  • Reduce heat to medium, add strawberries, and poach for 2 minutes. Using a slotted spoon, transfer strawberries to a bowl. Poach blackberries in the same syrup for 30 seconds, then add to strawberries. Repeat with blueberries, then with half the raspberries. Add remaining raspberries to syrup and cook, mashing with spoon, until very soft, about 10 minutes. Discard peel. Cool syrup.
  • Use a pastry brush to lightly coat a deep 1-quart bowl with syrup. Cut 1 slice of bread to fit the bottom, dip it into syrup, and place in bowl. Dip additional bread slices into syrup and line sides of bowl, overlapping slightly.
  • Spoon about a third of mixed berries into bowl. Cut several more bread slices to make an even layer of bread over berries, then dip into syrup, arrange, and press down lightly. Repeat process twice, ending with a double layer of bread. Refrigerate remaining syrup.
  • Cover pudding with plastic wrap, place a plate on top, and weigh it down with two large cans. Place bowl on a plate (juice may seep out) and refrigerate for at least 8 hours. Invert pudding onto a platter (if pudding sticks, slide a knife around the edge) and serve cold with reserved syrup and whipped cream.

1/2 cup hot water
1/2 cup light molasses
2 teaspoons baking soda
1/4 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1 1/2 cups flour
2 cups cranberries (frozen, thawed are fine)
1/2 cup walnuts, chopped
2 cups milk
1/4 cup sugar
1 teaspoon cornstarch
5 egg yolks
1 1/2 teaspoons vanilla

Steps:

  • Set up your rice cooker for steaming by placing a small trivet or wire cooking rack in the bottom of the rice bowl. Fill the bowl 1/4 to 1/3 full of hot water and then close the cover and set for the regular cycle. If the water boils before you are ready to steam your pudding, turn the switch to "keep warm" and then when you are ready switch back to cooking.
  • Grease or coat the inside of a 1 1/2 quart round melon-shaped tin pudding mold with a clip-on lid with butter-flavored Pam spray.
  • In a large bowl combine all the pudding ingredients in the order given with a rubber spatula to fold in ingredients until evenly moistened.
  • Scrape batter into prepared mold, filling it 2/3 full, snap on the lid. Set mold on the trivet or rack in the bottom of the rice cooker, making sure it is covered and tipped. Close cover and reset the cooker for the regular cycle to bring back to a boil, if necessary. Steam for one hour, checking to make sure the water doesn't boil off. Check pudding for doneness -- it will feel firm to the touch and it should be puffed, rising to fill mold and a cake tester (or use a toothpick) inserted in center will come out clean. Unplug machine.
  • Using oven mitts transfer mold from the steamer to a wire rack and remove the lid. Let stand for a few minutes and then turn upside down to unmold pudding on a serving plate.
  • Serve warm cut into wedges with custard sauce (recipe follows).
  • To make the custard sauce:.
  • In a medium saucepan over medium heat scald milk. Set aside.
  • In a large bowl or food processor combine sugar and cornstarch.
  • Whisk in the egg yolks and vanilla. Beat with a whisk or process until light colored and foamy. Whisking constantly or with the food processor running add the hot milk to the mixture. Pour custard sauce back into the saucepan.
  • Cook over medium-low heat, stirring constantly with a whisk until thickened and smooth and the sauce coats a wooden spoon (5 minutes). DO NOT BOIL.
  • Pour sauce into a serving bowl and let cool to room temperature.
  • Refrigerate, covered, until serving time and then serve cold over the pudding with a little vanilla around each pudding wedge.
