These soft, fudgy, homemade mint brownies are the perfect treat for parties and get togethers--Warning, they'll be gone in seconds!

Number Of Ingredients 14

4 ounces unsweetened baking chocolate
1 cup butter
4 large eggs
2 cups granulated sugar
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
2 cups powdered sugar
4 Tablespoons butter (, room temperature)
1 1/2 teaspoons peppermint extract
1-2 Tablespoons milk
green food coloring
6 ounces semi-sweet chocolate chips ((about 1 cup))
5 Tablespoons butter

Steps:

  • Preheat oven to 350 degrees F. Grease a 9×13'' inch pan with nonstick cooking spray.
  • Chop the butter and the unsweetened chocolate into chunks and place together in a microwave safe bowl.
  • Microwave on low power in 30 second intervals, stirring in between, until melted. (You could also melt them over LOW heat in a saucepan, stirring constantly). Set aside to cool, stirring occasionally.
  • In a large bowl beat together the eggs, sugar, and vanilla. Slowly add the melted chocolate, while stirring.
  • In a separate small bowl combine the flour and baking powder. Stir the flour into the chocolate batter, just until combined. Don't over-mix.
  • Pour batter into greased pan and bake for 20-30 minutes or until a toothpick inserted in the center comes out clean.
  • Remove from oven and allow to cool completely.
  • Combine all frosting ingredients and beat until light and fluffy. Add more milk if you want it thinner.
  • Spread the frosting evenly over the cooled brownies. Refrigerate while you make the chocolate glaze.
  • Place chocolate chips and butter in a microwave safe bowl. Microwave one low power in 30 second intervals, stirring in between, until melted and smooth. Allow to cool for about 5-10 minutes.
  • Spread evenly over the frosted brownies. Return to fridge to allow the chocolate to harden.
  • Allow the bars to sit at room temperature for 10 minutes before cutting into squares. (If you try to cut into them while they are cold the top chocolate layer will crack pretty easily and they wont be as pretty).

16 tablespoons unsalted butter (melted)
2 1/4 cups sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
4 eggs

Steps:

  • Preheat the oven to 350 and prepare an 8 inch square pan by lining it with parchment or foil.
  • In a small bowl, stir together the flour and the cocoa until well combined, then set aside.
  • In a large bowl, combine the melted butter, sugar, salt, and vanilla, and whisk together. Mixture will be grainy but uniform. Add the eggs one at a time, whisking thoroughly after each addition.
  • Set aside the whisk and add the flour/cocoa mixture to the large bowl. Stir with a large spoon or spatula until just combined, scraping down the sides of the bowl as needed.
  • Scrape the batter into the prepared pan and smooth out the top. Bake for 40 to 45 minutes, or until a toothpick inserted in the middle comes out with moist crumbs but no liquid batter attached. Set the pan on a rack to cool for 15 minutes, then use the pan liner to lift the brownies out. Set the brownies on a rack to finish cooling.

1/4 cup butter, cubed
2 large eggs, room temperature
1 cup sugar
1/8 teaspoon salt
1/2 cup plus 2 tablespoons all-purpose flour
12 mint Andes candies, chopped
FILLING:
12 ounces cream cheese, softened
6 tablespoons butter, softened
1 package (10 to 12 ounces) white baking chips
1 tablespoon shortening
1/2 teaspoon peppermint extract
3 to 4 drops green food coloring, optional
12 mint Andes candies, chopped
GANACHE:
9 ounces semisweet chocolate, chopped
1 cup heavy whipping cream

Steps:

  • Preheat oven to 350°. In a microwave, melt unsweetened chocolate and butter; stir until smooth. Cool slightly., In a large bowl, beat eggs, sugar and salt. Stir in chocolate mixture. Gradually add flour, mixing well. Fold in mint candies., Spread into a greased 9-in. springform pan. Bake 20-25 minutes or until a toothpick inserted in center comes out clean. Cool completely on a wire rack., For filling, in a large bowl, beat cream cheese and butter until blended. In a microwave, melt baking chips and shortening; stir until smooth. Cool slightly. Beat into cream cheese mixture. Add extract and, if desired, food coloring. Fold in mint candies. Spread over brownie layer. Refrigerate until firm, about 2 hours., For ganache, place chocolate in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; stir with a whisk until smooth. Cool slightly., Spread ganache over filling. Refrigerate 30 minutes or until set. Remove rim from pan.

1 (19.8 ounce) package brownie mix
2 (4.5 ounce) packages chocolate covered thin mints

Steps:

  • Prepare brownie mix according to package directions. Spread into a 9x13 inch pan and bake as directed.
  • Unwrap mint wafer candies while brownies are baking in the oven. When the brownies are done, place mint wafer candies side by side onto the top of the hot brownies and let them sit for a minute to soften. Using a knife or spatula, gently swirl melted candy over surface of brownies. Allow to cool a few hours so the candy hardens. Cut into bars.
