2 28 oz cans of crushed tomatoes
1 lb 80/20 ground beef
1/2 cup Parmesan cheese
1/3 cup breadcrumbs
5 cloves of garlic (pressed or minced (2 for the sauce, 3 for the meatballs))
2 Tbsp dried basil (1 for the sauce, 1 for the meatballs)
2 Tbsp dried parsley
1 tsp salt
1/2 tsp black pepper (1/4 tsp for the sauce, 1/4 tsp for the meatballs)
1 egg

Steps:

  • Combine crushed tomatoes, 2 minced cloves of garlic, 1 Tbsp of basil and 1/4 tsp of black pepper in the slow cooker. Stir.
  • In a bowl, combine everything else.
  • Using your hands, mix the meat with the ingredients.
  • Form into golf-ball sized balls.
  • Add the meatballs to the slow cooker and gently submerge in the sauce.
  • Cook on high for 4 hours, medium for 6 hours or low for 8 hours.
  • Serve over pasta.

This is a spaghetti sauce recipe that I've developed over time. You may alter the ground meat as you please; sometimes I use all ground beef when I find a good sale but half beef/half pork is pretty tasty. My crock pot is my best friend at times when I'm having busy days at work but still want a decent meal on the table for my family. I serve spaghetti with crusty bread and a romaine salad. Cook time is the crock pot cooking time. This recipe is for a 4 quart crock pot, halve it if your pot is smaller.

6 smoked bacon rashers, chopped
1 ½kg lean minced beef (or use half beef, half pork mince)
4 onions, finely chopped
3 carrots, finely chopped
4 celery sticks, finely chopped

500g mushrooms, sliced
4 x 400g cans chopped tomatoes
6 tbsp tomato purée
2 tbsp dried mixed herbs

large glass red wine (optional)

  • Heat the oil in a large pan and fry the bacon and mince in batches until browned. Add to your slow cooker.

3 Tablespoons Olive OIl
1 Medium Onion, Peeled & Diced Small
2 Carrots, Peeled, Trimmed & Diced Small
3 Cloves Garlic, Peeled & Minced
1 Cup Dry Red Wine
1 (28 Ounce) Can Chopped Tomatoes
1 Tablespoon Tomato Paste
1/4 Cup Chopped Fresh Parsley
1/8 Cup Chopped Fresh Basil
1 Teaspoon Dried Oregano
Salt & Pepper
1 Pound Pasta of Choice
Grated Pecorino Romano or Parmesan Cheese
Chopped Fresh Parsley

Steps:

  • If cooking in a slow cooker, in a heavy skillet, heat the olive oil over medium heat and brown the ribs well on all sides.
  • Place the ribs in your slow cooker, and add the onions and carrots to the skillet and cook for 3 to 4 minutes or until they take on color.
  • Add the garlic, and cook until fragrant.
  • Add the red wine to the skillet, and stir well, scraping any browned bits off the bottom of the pan and cook for 3 to 4 minutes.
  • Pour the wine and carrots over the ribs, then also add the tomatoes, paste, parsley, basil, oregano, salt and pepper.
  • Turn your slow cooker on low for 6 hours. (If the sauce begins to thicken too much, add a cup of water)
  • After 6 hours, use a fork to pull the meat off the bones of the ribs, break the meat up into small pieces, and discard the bones.
  • If cooking on the stovetop, use a Dutch oven instead of the skillet.
  • Brown the ribs, set aside and brown the vegetables.
  • Return the ribs to the pot, add the other ingredients and bring to a boil.
  • Reduce heat to a simmer and cook for 3 to 4 hours or until the meat begins to fall off the bones.
  • Remove the meat from the bones and stir into the sauce.
  • Cook the pasta until it is "al dente", then drain.
  • Add a scoop of sauce to the pasta and mix.
  • Serve the pasta in individual bowls topped with additional sauce and a sprinkling of chopped parsley.
  • Pass the cheese around the table.

24.5 Ounces Marinara Sauce, (jarred or homemade)

Steps:

  • Season the chicken breasts with Italian seasoning, salt, pepper, garlic powder, onion powder, and red pepper flakes. Place them in an even layer in the bottom of a 6 or 7 quart slow cooker, then pour in marinara sauce. Fill the empty marinara sauce jar with water, close the lid, and give it a shake. Pour the water into the slow cooker.
  • Add the lid, and cook on high for 3 to 4 hours. After that time, remove the chicken and either shred it or cut it into cubes. Return the chicken to the slow cooker along with the pasta noodles and heavy cream. Press the noodles down to ensure they are submerged in the liquid.
  • Close the lid, adjust the setting to low heat, and cook for an additional 45 minutes to 1 hour depending on how firm you like the noodles cooked. Stir occasionally to make sure the noodles are evenly cooked.
  • Serve hot with a side salad and garlic bread. Store leftovers in the refrigerator for up to 3 days.

4 cloves garlic, minced
1 large carrot, finely chopped
1 celery stalk, finely chopped

1/2 cup dry red wine
2/3 cup heavy cream

Steps:

  • Heat the oil in a large saute pan over medium-high heat. Add the garlic, carrots, celery and onions. Sprinkle with salt and pepper and cook about 3 minutes. Add the tomato paste, thyme and nutmeg, and continue cooking until the vegetables have softened and started to brown, about 2 minutes. Deglaze with the wine, pulling up any bits from the bottom of the pan. Season with salt and pepper.
  • Carefully transfer to the slow cooker. Stir in the cream and tomatoes. Mix the pork and sirloin together in a separate bowl, using your hands, until combined. Stir the meat into the slow cooker, spreading out evenly and avoiding any large clumps. Cover and cook on high for 4 to 6 hours or on low 8 to 10 hours. Skim the accumulated grease from the surface before serving. Serve over pasta with crusty bread for soaking up the sauce.
