These coconut flour brownies are so rich and fudgy, you won't believe they are low carb! Simple ingredients and made in just one bowl!

2 tablespoon coconut flour
1/3 cup cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 large eggs
3/4 cup peanut butter (can use almond butter or nut free alternative)
1/4 cup keto maple syrup (can use standard maple syrup)
1 teaspoon vanilla extract
1/3 cup granulated sweetener of choice (* see notes)
1 cup chocolate chips of choice (optional)

Steps:

  • Preheat the oven to 180C/350F. Line an 8 x 8-inch baking pan with parchment paper and set aside.
  • In a large mixing bowl, combine your dry ingredients and mix well. In a separate bowl, whisk together your eggs, peanut butter, maple syrup, vanilla extract, and granulated sweetener of choice, until glossy. Add the dry ingredients into the wet and mix together until smooth. Fold through the chocolate chips at the end.
  • Transfer your brownie batter into the lined pan and bake for 25-27 minutes, or until a skewer comes out mostly clean.
  • Allow the brownies to cool in the pan completely, before slicing into pieces.

1/2 cup cocoa powder
1/3 cup butter
6 eggs
1 3/4 cups just like sugar (or 1 cup sugar or sugar substitute)
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1/2 cup coconut flour, sifted
1 tablespoon sugar free semi-sweet chocolate chips (to taste)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish.
  • Stir cocoa powder and butter together in a saucepan over low heat until coconut oil has melted, about 5 minutes. Remove from heat and let cool.
  • Beat eggs, just like sugar, salt, and vanilla extract together in a bowl; stir in cocoa mixture. Whisk coconut flour into egg mixture until there are no lumps. Pour batter into prepared baking dish; sprinkle chocolate chips over top.
  • Bake in preheated oven until a toothpick inserted into the center come out clean, about 35 minutes.

1 1/8 cup ChocZero Sugar-free Dark Chocolate Chips ((divided))
2/3 cup Besti Monk Fruit Allulose Blend
1/2 cup Unsalted butter
1/3 cup Cocoa powder
1/4 cup Wholesome Yum Coconut Flour
2 large Eggs
2 tbsp Heavy cream
1 tsp Vanilla extract
1/4 tsp Sea salt

Steps:

  • Preheat the oven to 350 degrees F (176 degrees C). Line an 8x8 in (20x20 cm) baking dish with parchment paper and grease lightly.
  • Melt the butter and 1 cup of chocolate chips in a double boiler on the stove, stirring occasionally. Set aside to cool for a couple of minutes.
  • Transfer the chocolate mixture to a food processor and add the eggs, vanilla and heavy cream. Pulse a few times until combined.
  • In a small bowl, whisk together the Besti, cocoa powder, coconut flour, and sea salt.
  • Add the dry mixture to the food processor and pulse until smooth.
  • Spread the batter in the prepared baking pan and top with 1/8 cup of chocolate chips.
  • Bake about 20-30 minutes, until brownies are barely set. The top should no longer be wet, but still be very soft. An inserted toothpick will come out with just a small amount of batter on it. Cool completely to firm up before cutting.

1 1/2 ounces baker's unsweetened chocolate squares
6 tablespoons butter
1/2 teaspoon vanilla extract
1/2 cup erythritol (ZSweet)
1 teaspoon stevia (2 packets of Sweetleaf brand)
2 teaspoons Splenda sugar substitute
1/2 teaspoon blackstrap molasses
3 eggs
6 tablespoons sifted coconut flour
1/4 teaspoon baking powder
1/8 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Line a loaf pan with aluminum foil, and butter the foil generously.
  • Melt butter and chocolate in microwave for 30 seconds; stir and microwave in additional 15 second increments until fully melted.
  • Beat with electric mixer until smooth.
  • Add eggs one at a time, beating after each addition.
  • Add vanilla and sweeteners and mix again.
  • Combine coconut flour, baking powder and salt in a separate bowl and mix to combine.
  • Add dry ingredients to wet or vice versa. Mix well.
  • Pour into butter loaf pan.
  • Place loaf pan in a larger pan. Insert into preheated oven.
  • Pour boiling water into large pan, so that the loaf pan is surrounded by about an inch of hot water.
  • Bake for 25 minutes. Edges will be firm but center will still be very very moist.
  • Carefully remove from oven.
  • Serve warm or cooled. Try with low-carb vanilla ice cream.
