2 pounds zucchini, thinly sliced
½ pound onions, quartered and thinly sliced
¼ cup salt
2 cups white sugar
2 cups apple cider vinegar
1 teaspoon celery seed
1 teaspoon ground turmeric
1 teaspoon prepared yellow mustard
2 teaspoons mustard seeds
3 1-quart canning jars with lids and rings

Steps:

  • Place zucchini and onions into a large bowl, cover with water, and stir in salt until dissolved. Let the vegetables soak in the salted water for at least 2 hours; drain and transfer to a large heatproof bowl.
  • Bring sugar, vinegar, celery seed, turmeric, mustard, and mustard seeds to a boil in a saucepan; pour the mixture over the zucchini and onions. Let the mixture stand for at least 2 more hours. Return zucchini, onions, and pickling liquid with spices to a large pot and bring to a boil. Boil for 3 minutes.
  • While vegetables are soaking in pickling liquid, sterilize jars and lids in boiling water for at least 5 minutes. Pack the zucchini and onion into the hot, sterilized jars, filling the jars to within 1/4 inch of the top with pickling liquid. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area, and wait at least 24 hours before opening.

2 pounds small zucchini (preferably about 4" or 8" long), trimmed
4 tablespoons coarse sea salt or pickling salt, divided
12 fresh dill sprigs
2 teaspoons yellow or brown mustard seeds
1 teaspoon coriander seeds
1 teaspoon dill seeds
1/4 teaspoon saffron threads
4 garlic cloves, halved
4 red jalapeños or Fresno chiles, split lengthwise
2 1/2 cups white wine vinegar
1/4 cup sugar

Steps:

  • If using 4" zucchini, halve lengthwise. If using 8" zucchini, halve crosswise, then quarter lengthwise. Place in a large bowl. Add 2 tablespoons salt and 4 cups ice. Add cold water to cover. Top with a plate to keep submerged. Let sit for 2 hours. Drain; rinse.
  • Divide dill sprigs and next 6 ingredients between 2 clean, hot 1-quart jars; set aside.
  • Bring vinegar, sugar, remaining 2 tablespoons salt, and 1 1/4 cups water to a boil in a large saucepan. Working in batches, add zucchini and cook, stirring occasionally, until khaki in color and slightly pliable, about 2 minutes. Using tongs, transfer zucchini to jars.
  • Divide hot syrup between jars to cover zucchini, leaving 1/2" space on top. Wipe rims, seal, and process in a boiling water bath for 10 minutes. Allow at least a week to pickle before eating.

10 cups zucchini, shredded
3 cups onions, chopped
12 garlic cloves
3 tbsp. dill or caraway seeds
4 cups water
4 cups apple cider vinegar (5% acidity)
1/3 cup salt

Steps:

  • Grate zucchini into a large stainless steel or ceramic bowl, then add a couple tablespoons of salt. Give it a good stir and let it sit (covered) at room temperature for 8-10 hours.
  • Squeeze excess juice from the zucchini before getting ready to make the brine.
  • Chop onions and garlic, then add to grated zucchini with dill seeds and other spices (if using).
  • Pour water, vinegar and salt into a large stockpot and bring to a light boil, then add the entire zucchini mixture.
  • Mix it well and bring mass to a low boil for 20-25 minutes, stirring occasionally.
  • Ladle into sterilized jars and process in a hot water bath for 10-15 minutes, adjusting for altitude.

4 red bell peppers
5 tablespoons salt
3 cups sugar
1 teaspoon turmeric
3 cups apple cider vinegar
1 teaspoon dry mustard
1 teaspoon coarse black pepper
1 teaspoon celery seed

Steps:

  • Grate zucchini, onions and peppers in a food processor. Place in a large bowl and add salt. Mix well. Cover and let stand at room temperature 8-10 hours.
  • Rinse thoroughly in a large strainer and drain well. Use the back of the spoon to push mixture against strainer to release as much water as you can.
  • Place zucchini mixture in a large stockpot and add remaining ingredients.
  • Mix well and bring to a boil. Keep at a low boil for 30 minutes, stirring occasionally.
  • Place in sterilized pint jars and process in a hot water bath for 15 minutes (adjust for altitude).

Steps:

Sheryl was not just a good cook, she had her own catering business and owned The Lunch Bucket, a popular Restaraunt here in the Sacramento Area back in the day. I use my mandolin to slice the zucchini, which makes short work of slicing them. The cooking time includes curing time.

2 lbs zucchini
1/2 cup pickling salt, divided
2 1/2 cups water
2 teaspoons celery seeds
2 teaspoons mustard seeds
2 1/2 cups cider vinegar
1 cup sugar
4 heads fresh dill
1 teaspoon cayenne pepper
4 garlic cloves

Steps:

  • Wash zucchini and cut into thin lengthwise slices.
  • Cover with 1 inch water and 1/4 cup salt.
  • Let stand for 2 hours.
  • Drain thoroughly.
  • Place celery seeds, and mustard seeds in a spice bag.
  • Add spice bag to the water, vinegar, sugar and remaining 1/4 cup salt.
  • Bring mixture to a boil.
  • Pour hot brine over zucchini slices and allow to stand for 2 hours.
  • Bring all ingredients to boiling point and cook for 5 minutes.
  • Place zucchini slices and brine into 4 clean and hot pint jars, leaving 1/4 inch head space. To each jar add 1 head dill, 1/4 tsp cayenne, and 1 clove garlic. Seal.
  • Process for 10 minutes in a boiling water bath.

  • Puree zucchini, garlic and broth until blended. Pour back into stock pot and add 2 sprigs chopped dill.
  • Add milk and heat and stir. Serve with dollop of plain yogurt and snipped dill.
  • If you want to serve it cold, instead of reheating the zucchini and broth, chill until cold and serve with yogurt and dill.

  • Grate the zucchini into a colander, salt and leave for 30 mins or up to an hour to drain in the sink. Then squeeze out extra moisture either by wringing the mixture with your hands and placing in a clean bowl OR by putting into a clean tea towel and wringing it.
  • Mix eggs, zucchini, green onions, garlic, dill, feta, salt and pepper together in a large mixing bowl. Sprinkle flour and baking powder over the top (around the entire bowl, not in one spot) then mix until just combined. Don't overmix here as that can create dense fritters.
  • Heat oil in frying pan on medium heat. Place a tablespoon of the mixture in the pan and flatten with the back of the spatula. Repeat with the remaining mixture, cooking in batches without overcrowding the pan (I usually fit 3 fritters each batch). Cook for 3-4 minutes each side until golden and crispy. Transfer to a plate lined with paper towel.
