½ cup unsalted butter
2 large egg yolks
1 tablespoon warm water
1 tablespoon fresh lemon juice
¾ teaspoon coarse salt
1 pinch ground cayenne pepper

Steps:

  • Melt butter in a small saucepan over medium heat until bubbly; do not let brown.
  • Combine egg yolks, water, lemon juice, salt, and cayenne in a blender; blend until frothy. With blender running, pour in hot butter in a very thin stream and blend until sauce is thick and emulsified. Promptly pour sauce into a serving bowl.

3 egg yolks
1 ½ tablespoons fresh lemon juice
4 tablespoons unsalted butter, chilled
¾ cup unsalted butter, melted
salt to taste
1 teaspoon ground white pepper

Steps:

  • Add egg yolks to a small saucepan; whisk until lemon yellow and slightly thick, about 1 minute. Whisk in lemon juice.
  • Add 2 tablespoons cold butter, and place over very low heat. Whisk constantly while butter is melting, and continue whisking until thick enough to see the pan between strokes. Remove pan from heat, and beat in 1 tablespoon cold butter. Repeat. Whisk in melted butter a little bit at a time. Season with salt and white pepper to taste.

3 egg yolks
1 tablespoon lemon juice (or more as desired for flavor)
1 teaspoon Dijon mustard
1/4 teaspoon salt
pinch of cayenne pepper
1/2 cup unsalted butter or ghee (or more for a thinner consistency, melted and hot)

Steps:

  • Melt the butter in a microwave (make sure it's covered as it will splatter) for about 1 minute, until it's hot. Alternatively, you could heat it on the stove.
  • Add the egg yolks, lemon juice, dijon, salt and cayenne pepper into a high powered blender and blend for 5 seconds until combined.
  • With the blender running on medium high, slowly stream in the hot butter into the mixture until it's emulsified.
  • Pour the hollandaise sauce into a small bowl and serve while warm.

3 egg yolks
salt and pepper
1-2 tablespoons lemon juice
2 sticks unsalted butter
dill, snipped

Steps:

  • 1. In a blender, combine egg yolks, pepper, and 1 tablespoon of lemon juice.
  • 2. In a small saucepan, melt the butter and heat until bubbling hot.
  • 3. Cover the blender and blend the egg yolk mixture on high speed for several seconds.
  • 4. Either remove center cap of blender lid or carefully remove the lid itself with blender still running.
  • 5. Pour hot butter in a thin stream into whirring egg mixture.
  • 6. Add dill and pulse to combine.
  • 7. Taste sauce and adjust seasoning with lemon juice, salt, and pepper.
  • BASIC 1-2-3
  • If sauce gets too thick, add one tablespoon of hot water at a time to make it thinner.

1/2 cup good mayonnaise, such as Hellmann's
1/2 cup sour cream
1/2 cup plain yogurt, such as Stonyfield
2 tablespoons cream cheese, at room temperature
1/2 cup chopped scallions, white and green parts (4 scallions)
1/2 cup minced fresh dill
1/4 cup minced fresh flat-leaf parsley
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
1 cup seeded, grated hothouse cucumber

Steps:

  • Place the mayonnaise, sour cream, yogurt, cream cheese, scallions, dill, parsley, lemon zest, lemon juice, 2 teaspoons salt, and 1 teaspoon pepper in the bowl of a food processor fitted with the steel blade. Puree for a few seconds, until well mixed. Add the cucumber and puree for another few seconds, until combined. Pour into a container and refrigerate for a few hours to allow the flavors to develop.

This is absolutely, positively delicious poured over freshly cooked asparagus, broccoli, beans, fish and eggs!! It is best made as close to serving time as possible while it is still hot/very warm. It should always be possible to do this as it only takes about 5 minutes to make! I haven't included the cooking time here as the only 'cooking time' involved is to melt the butter. It really is so easy to make!

3 egg yolks (room temperature)
2 -3 tablespoons lemon juice
2 teaspoons vinegar
1/2-1 teaspoon prepared mustard
1 pinch cayenne pepper
1/2 cup butter (4oz or 1 stick)

Steps:

  • Put egg yolks, lemon juice, vinegar, prepared mustard and pinch of cayenne pepper in a jug.
  • Beat until thick and creamy (a handheld blender is just great for this!).
  • Heat butter SLOWLY until melted and bubbly.
  • Remove from the heat and SLOWLY add to the egg yolk mixture.
  • Combine well.
  • (to absorb the butter into the egg yolk mixture).
  • Beat until smooth and thick.
  • Serve straight away (before the sauce loses it's heat)!
