1 pound ground beef
1 onion (finely diced)
salt and pepper (to taste)
1 packet taco seasoning (to taste)
2 cups shredded Cheddar cheese
1 (16 oz) can refried beans
1 (14.5 oz) package tortilla chips
1 fresh jalapeno pepper (sliced)

Steps:

  • In a large frying pan, cook ground beef and onion over medium heat. Add taco seasoning, salt, and pepper. Break the beef into small pieces while cooking. Once meat is browned and thoroughly cooked, drain off the grease and set aside.
  • Spread the tortilla chips onto a cookie sheet and bake at 350 degrees Fahrenheit for about 10 minutes (or until crispy).
  • Top with refried beans, shredded cheddar cheese, sauteed beef, and sliced jalapeno peppers. Heat the refried beans first to make them easy to spread.
  • Place the pan back into the oven until the cheese is melted.
  • Enjoy!

1 pound block of cheese such as cheddar (Monterrey Jack or Colby Jack, shredded)
Optional Topping Such as:
Seasoned Ground Beef
Shredded Beef (Pork or Chicken)
Black beans or pinto beans
Tomatoes (jalapenos or chilies)
Corn (black olives, avocados)
Use as little or as much as you like of toppings (this is a personal choice type of thing!)

Steps:

  • Preheat oven to 350 degrees F.
  • Line a baking sheet with a silicone baking mat or foil.
  • Spread chips over cookie sheet.
  • Sprinkle half of the grated cheese over the chips.
  • Sprinkle toppings over the chips and cheese.
  • Sprinkle on remaining cheese.
  • Bake for approximately 10 minutes, or until cheese is good and melty.
  • Serve warm with sides such as guacamole, sour cream or salsa.

8 homemade or thawed frozen waffles, cut into triangles (like tortilla chips)
1 pound breakfast sausage, casings removed and meat crumbled
1 tablespoon olive oil
6 large eggs
Kosher salt and freshly ground black pepper
1 tablespoon maple syrup
2 cups shredded sharp Cheddar
1 avocado, thinly sliced
1/2 cup quartered cherry tomatoes
3 scallions, white and light green parts only, thinly sliced
1 jalapeno, thinly sliced
1/4 cup chopped fresh cilantro
Hot sauce, for serving, optional
Sour cream, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the waffle triangles on a rimmed baking sheet and bake for 5 to 7 minutes to dry out a bit. Remove from the oven and turn on the broiler.
  • Cook the sausage in a large nonstick skillet over medium-high heat, breaking up any big chunks with the back of a wooden spoon, until browned and cooked through, about 5 minutes.
  • Heat another large nonstick skillet over medium heat. Swirl in the olive oil. Crack the eggs into individual bowls. Add the eggs side by side in the pan. Cook until the outer edges turn opaque, about 1 minute, then cover, lower the heat and cook for 4 minutes. If you want a medium yolk, cook for 5 minutes. Season with salt and pepper to taste.
  • Top the waffles with the sausage, drizzle with the maple syrup and cover with the cheese. Cook under the broiler until the cheese has melted completely, about 2 minutes.
  • Top the nachos with the cooked eggs, avocado slices, tomatoes, scallions, jalapeno and cilantro. Serve with hot sauce if desired and garnish with sour cream.

Steps:

  • Heat the oven to 400˚F.
  • Meanwhile put a skillet over medium-high heat until hot; add the ground beef and all of the seasonings and cook, breaking apart with a spatula, until browned and there's no more visible pink. Transfer the the ground beef to a bowl, leaving behind the rendered fat.

1 avocado, peeled, pitted, and finely diced
3 tablespoons minced red, yellow, or white onion
1 large handful fresh cilantro, finely chopped (a little stem is fine)
3 tablespoons sliced pickled jalapeños (or 1 whole pickled jalapeño), finely chopped
2 tablespoons fresh lime juice
Kosher salt
6 large eggs
1 tablespoon unsalted butter
6 ounces [170 g] tortilla chips (about 6 cups)
1 cup [110 g] coarsely grated sharp cheddar cheese
1 cup [110 g] coarsely grated Monterey Jack cheese
½ cup [120 g] sour cream

Steps:

  • Position your oven rack 6 inches [15 cm] from the broiling element and turn the broiler to high.
  • Place the tomatoes, avocado, onion, cilantro, pickled jalapeños, and lime juice in a large bowl and season with ½ teaspoon kosher salt. Mix gently to combine and season to taste with more salt if needed. Let the mixture sit while you prepare the nachos.
  • Place the eggs and ½ teaspoon salt in a small bowl and whisk well to combine. Place the butter in a medium nonstick skillet over medium heat. Once it melts, add the beaten eggs and cook, stirring, until the eggs are just set, about 2 minutes. Turn off the heat and reserve the mixture.
  • Lay the chips in an even layer on a sheet pan and sprinkle evenly with half of the cheddar cheese and half of the Monterey Jack cheese. Evenly divide the scrambled eggs on top of the cheese layer and then evenly sprinkle the rest of the cheese on top of the eggs.

8 large eggs
6 tablespoons milk
Kosher salt and freshly ground black pepper
6 slices bacon, cut into 1/2-inch thick pieces
Half a 13-ounce bag corn tortilla chips
6 ounces freshly grated Cheddar (about 2 cups)
6 ounces freshly grated Monterey jack cheese (about 2 cups)
1/4 cup salsa, plus more for serving
3 tablespoons chopped fresh cilantro leaves
1 small avocado, diced
4 tablespoons sour cream, thinned with 2 tablespoons water

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with heavy-duty foil, shiny-side up. Spray evenly with cooking spray.
  • Lightly beat the eggs, milk, 1 1/2 teaspoons salt and 6 grinds of pepper in a medium bowl and set aside.

  • Turn the pan to high heat, spray with a light mist of olive oil spray. Holding your wrap so the length runs left to right, rip the Cut Da Carb wrap into strips, (if it doesn’t rip into straight lines, turn it the other way!) Then stack them on top of each other, and using kitchen scissors, right over the pan, cut the strips into triangles and let them drop into the hot pan. Immediately spray with another mist of olive oil spray, this should equal about 3 grams of oil. Sprinkle with at least ½ tsp kosher salt. Maybe more to taste.
  • Toss the chips around right away to avoid letting them stick to each other. Let them cook in the pan, tossing often, for a few minutes until golden brown and crispy. Remove from the pan.
  • Whisk together egg whites, egg, cottage cheese, remaining 1 tsp salt and pinch of pepper. Turn your pan back on to medium heat and spray with a light mist of cooking spray. Add eggs and cook gently for 5-7 minutes until set, adding laughing cow cheese half way through to get it all melted in and combined well. Sprinkle with any additional salt and pepper to taste.
  • Top plate of chips with crumbled egg mixture, diced tomatoes, red onion, avocado, sour cream, and fresh cilantro. Serve with shredded lettuce for more of a taco salad experience!

  • Cut the mini tortillas into triangles (I cut each into 8), and lay them out on a baking tray. Keep them in a single layer if you can, but it's okay if they overlap a bit. Spray them lightly with oil, and add a pinch of salt and pepper. Place under a medium grill (broiler) for a couple of minutes, until golden brown. Then, flip each tortilla chip over and repeat with the other side.
  • When the tortilla chips are ready, layer them up (on a baking tray covered in baking paper) with the cheese, tomato, black beans and hot sauce - I ended up with three layers of each.
