GARLIC BASIL SHRIMP

2 tablespoons olive oil
1 1/4 pounds large shrimp (20 to 25 per pound), peeled and deveined
3 garlic cloves, minced
1/8 teaspoon dried hot red-pepper flakes, or more to taste
3/4 cup dry white wine
1/4 cup finely chopped fresh basil leaves
1 1/2 cups grape tomatoes, halved
Salt and freshly ground black pepper

Steps:

  • Heat the oil in a large heavy skillet over moderately high heat until hot but not smoking, then saute shrimp, turning over once, until just cooked through, about 2 minutes. Transfer with a slotted spoon to a large bowl.
  • Add garlic and red pepper flakes to the oil remaining in skillet and cook until fragrant, 30 seconds. Add wine and cook over high heat, stirring occasionally, for 3 minutes. Stir in basil and tomatoes and season the sauce with salt and freshly ground black pepper, to taste. Return the shrimp to pan and cook just until heated through.

Sweet Pea Agnolotti with Poached Shrimp and Basil image

1 cup all-purpose flour, plus additional for dusting
Kosher salt
9 large egg yolks plus 1 whole egg
Olive oil
Pea Filling, recipe follows
Cornmeal, for dusting
Shrimp Sauce, recipe follows
Fresh Opal basil buds and flowers
Black pepper
Grated Parmesan
Snow peas, cut into chiffonade
Basil Oil, recipe follows
2 cups frozen peas
1 cup ricotta cheese
Olive oil, for drizzling
Kosher salt
1 onion, sliced
1 clove garlic
2 big pieces lemon peel
1 bunch fresh thyme
1/2 bulb fennel, sliced
1 pound large shrimp (31/35 count), peeled, deveined and halved lengthwise, shells reserved
1 tablespoon extra-virgin olive oil
1 cup white wine
2 cups heavy cream
1 bunch fresh basil, leaves picked from stems
1/4 cup canola oil
Pinch salt

Steps:

  • For the pasta dough: In a stand mixer fitted with the dough hook, combine the flour and 1/2 teaspoon salt. Add the egg yolks, one at a time, and continue to mix. Drizzle in 1 tablespoon olive oil and continue to incorporate all the flour until it forms a ball.
  • Sprinkle some flour on a work surface, then turn the dough out onto the work surface. Knead and fold the dough until elastic and smooth, about 10 minutes. Brush the surface with some olive oil and wrap in plastic wrap; let rest for about 30 minutes to allow the gluten to relax.
  • Cut the ball of dough in half; cover and reserve the piece you are not immediately using to prevent it from drying out. Dust the counter and dough with a little flour. Press the dough into a rectangle and roll it through a pasta machine two or three times with rollers set on the widest setting, pulling and stretching the sheet of dough with the palm of your hand as it emerges from the rollers.
  • Narrow the setting and crank the dough through again two or three times. Continue narrowing until the machine is at the narrowest setting; the dough should be paper-thin, about 1/8-inch thick (you should be able to see your hand through it). Dust the sheets of dough with flour as needed and continue to roll out the rest of the dough.
  • Beat the whole egg with 1 tablespoon water to make an egg wash. Dust the counter and a sheet of dough with flour, and lay out the long sheet of pasta on the counter. Brush the top with the egg wash, which acts as a glue. Drop tablespoons of the pea filling on half of the pasta sheet, about 2 inches apart. Fold the other half over the filling like a blanket. With an espresso cup or fingers, gently press out air pockets around each mound of filling. Use a sharp knife to cut each pillow into half-moons, and crimp the edges with the tines of a fork to make a tight seal. Dust the agnolotti and a sheet pan with cornmeal to prevent sticking, then lay the agnolotti out on the sheet pan to dry slightly while assembling the rest.
  • Bring a large pot of salted water to a boil and cook the agnolotti until they float to the top, about 4 minutes. Lift the agnolotti from water with a large strainer or slotted spoon.
  • To serve: Place agnolotti on a plate and pour shrimp sauce over them. Garnish with Opal basil buds and flowers and some black pepper, Parmesan, snow peas and a drizzle of basil oil.
  • Combine the peas, ricotta, olive oil and some salt in a food processor and pulse together until well combined. Set aside.
  • Sweat the onions, garlic, lemon peels, thyme, fennel and shrimp shells in the olive oil in a large pot over medium heat, 5 minutes. Add wine and continue to cook until reduced by half, about 3 minutes. Strain through a colander into a pot and add the cream. Bring to a boil and keep cooking until reduced by half, about 3 minutes, then lower the heat and add the shrimp. Cook until the shrimp are just pink, being careful to not overcook. then turn off the heat.
  • Set aside and keep warm.
  • Bring a small pot of water to a boil and prepare a large bowl of ice water. Add the basil and cook for less than 1 minute. Take out the basil and place into the ice bath.
  • Combine the blanched basil, canola oil and salt in a blender; blend on high until smooth. Transfer to a squeeze bottle.

¼ cup butter, melted
1 ½ lemons, juiced
3 tablespoons Dijon mustard (such as Grey Poupon Country Mustard™)
½ cup minced fresh basil leaves

3 pounds fresh shrimp, peeled and deveined

Steps:

  • In a shallow, non-porous dish or bowl, mix together olive oil and melted butter. Stir in lemon juice, mustard, basil, and garlic, and season with salt and white pepper. Add shrimp, and toss to coat. Cover, and refrigerate for 1 hour.
  • Preheat grill to high heat. Remove shrimp from marinade, and thread onto skewers. Discard marinade.
  • Lightly oil grill grate, and arrange skewers on preheated grill. Cook for 4 minutes, turning once, or until opaque.

5 pounds shrimp, raw peeled and deviened
2 lemons cut in 1/2
2 cups white wine
1 parsley sprig
10 white peppercorns
Salt and freshly ground black pepper
Water
Ice water (to shock the shrimp)
Basil pesto, recipe follows

Steps:

  • Put the shrimp, lemons, white wine, parsley, and peppercorns in a large pot. Season with some salt and cover with cold tap water. Bring to a boil. As soon as the shrimp reaches a boil remove from the heat, strain the water, and plunge the shrimp into the ice water to stop the cooking. Allow the shrimp to chill for about 10 minutes.
  • After shrimp are cooled strain the water and toss the shrimp with the pesto, season with salt and pepper, to taste.
  • 2 cups basil leaves
  • 1 tablespoon toasted pine nuts
  • 1 cup extra-virgin olive oil
  • 1 teaspoon chopped garlic
  • Salt and freshly ground black pepper
  • Put all ingredients in a food processor and pulse a few times to blend the pesto. Do not blend until completely smooth, leave it a little rough.

2 lemons, cut in 1/2
2 cups white wine
1 bunch parsley
10 white peppercorns
1 cup basil leaves
1 tablespoon toasted pine nuts
1 cup extra-virgin olive oil
1 tablespoon chopped garlic

  • Put all of the ingredients in a large pot. Season with some salt and cover with cold water. Bring to a boil. As soon as the shrimp reaches a boil, remove from the heat, strain the water and plunge the shrimp into ice water to stop the cooking. Allow the shrimp to chill for about 10 minutes.;
  • Put all ingredients in a food processor and pulse a few times to blend the pesto. You do not want it completely smooth, leave it a little rough. After the shrimp are cooled, strain the water and toss the shrimp with the pesto, season with salt and pepper.;

1/2 handful salt
2 carrots, roughly chopped
2 stalks celery, roughly chopped
2 cups pinot grigio
2 fresh bay leaves, or 1 dried
6 peppercorns
2 pounds jumbo shrimp, shell on

Steps:

  • Mix salt, carrots, celery, pinot grigio, bay leaves, and peppercorns in 2 quarts of water and bring to a simmer. Add the shrimp and just bring back to a boil. Once the water boils, cook for 60 seconds. Remove the shrimp immediately and lay out on a cookie sheet to cool to room temperature. Refrigerate until chilled, about 1 hour. Peel shrimp just before serving and serve chilled.

SHRIMP WITH TOMATOES, BASIL, AND GARLIC

1/2 cup quartered vine-ripened grape or cherry tomatoes
2 teaspoons finely chopped fresh basil leaves
Kosher salt and freshly ground black pepper
6 ounces medium-large shrimp, shelled and deveined
2 teaspoons extra-virgin olive oil
1/2 small clove garlic, minced

Steps:

  • In a medium bowl, combine the tomatoes and basil. Season with salt and pepper to taste and set aside while you saute the shrimp.
  • Put the shrimp in a pie pan and pat them completely dry with a paper towel. Arrange the shrimp so they lay flat and are evenly spaced in the pan.
  • Heat a medium skillet over medium heat. Season one side of the shrimp with salt and pepper; add the oil to the pan and turn the heat to high. Invert the pie pan over the skillet so the shrimp fall into the pan all at once.
  • Saute the shrimp, undisturbed, until they turn golden brown on the bottom, about 2 minutes. Add the garlic to the pan. Turn the shrimp over with tongs. Turn the heat off and cook the shrimp for 1 minute in the residual heat of the pan. Shake the pan to combine the shrimp with the garlic and then transfer them to the bowl with the tomato mixture. Toss to combine. Serve hot or at room temperature.

LEMON BASIL SHRIMP RISOTTO

2 tablespoons butter
1 1/2 pounds peeled and deveined shrimp
4 cloves garlic, minced
1 onion, finely diced
2 cups arborio rice
1 cup dry white wine
About 5 cups vegetable broth
1/2 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 lemon, zested and juiced, plus extra lemon zest, for garnish
2 tablespoons heavy cream
18 fresh basil leaves, chopped, plus extra for serving
Grated Parmesan, for sprinkling

Steps:

  • Heat the butter in a large skillet over medium-high heat. Add the shrimp in a single layer and cook on both sides until opaque in the middle, about 3 minutes. Remove to a cutting board and cut in half. Set aside.
  • Return the skillet to the stovetop (do not wash it) and add the garlic and onion. Stir and cook until the onion starts to turn translucent, 2 to 3 minutes. Reduce the heat to medium low. Add the rice to the skillet and cook, stirring, for a couple of minutes, taking care not to burn it. Pour in the wine and stir. Once the wine is absorbed, begin adding the broth 1/2 to 1 cup at a time, allowing the rice to cook and absorb the liquid each time. Stir occasionally as you go and add the salt and pepper during one of the broth additions. After 4 cups of broth have been absorbed, taste the rice. It should have a slight bite, but if it seems undercooked, add additional broth for the rice to absorb and cook until the risotto is to your liking.
  • Add both the lemon zest and juice to the risotto towards the end of cooking. Stir in the heavy cream, shrimp and basil, then serve immediately with extra lemon zest and Parmesan cheese on top.

3 bay leaves
1 handful fresh thyme leaves
1 handful fresh flat-leaf parsley
1/4 cup seafood seasoning (recommended: Old Bay or Zatarains shrimp boil)
2 pounds jumbo shrimp, with shells, heads, and tails on
Bloody Mary Cocktail Sauce, recipe follows
4 ripe tomatoes, coarsely chopped
2 celery stalks, coarsely chopped
1 medium onion, coarsely chopped
1/2 cup ketchup
2 tablespoons grated fresh or prepared horseradish
1 lemon, juiced
2 teaspoons hot sauce
1 tablespoon Worcestershire sauce
1 shot pepper vodka
1 teaspoon celery seed
Sea salt and freshly ground black pepper

Steps:

  • Fill a large pot with about a 1/2 gallon of water, add the salt and squeeze in the lemon juice; toss the halves in there too for extra flavor. Add the herbs and seafood seasoning. Bring to a boil over medium-high heat and simmer for 5 minutes to infuse the water with the aromatics.
  • Reduce heat to medium-low and add shrimp. Simmer, uncovered, for 5 minutes or until the shrimp are bright pink and the tails curl. Using a slotted spoon, remove the shrimp from the poaching liquid and chill thoroughly before peeling. Serve with lemon wedges and Bloody Mary Cocktail Sauce as part of a raw shellfish bar.
  • Combine the tomatoes, celery, and onion in a blender and puree to break the vegetables down. Add the remaining ingredients and puree until smooth. Chill before serving with a raw bar.

1 tablespoon olive oil
1 tablespoon butter, melted
1 tablespoon Dijon mustard

8 uncooked large shrimp, peeled and deveined

Steps:

  • In a small bowl, combine the basil, oil, butter, mustard, lemon juice, garlic, salt and pepper. Pour 3 tablespoons into a small resealable plastic bag; add shrimp. Seal bag and turn to coat; let stand at room temperature for 15-20 minutes. Set remaining marinade aside. , Drain and discard marinade. Thread shrimp onto two metal or soaked wooden skewers. Grill, covered, over medium heat for 2-3 minutes on each side or until shrimp turn pink, basting occasionally with reserved marinade.

1 pound penne pasta
1 tablespoon plus 1/4 cup extra-virgin olive oil
8 garlic cloves, cut into matchsticks, plus 1 more for pressing
1 tablespoon finely snipped fresh rosemary leaves
1 large onion, thinly sliced
1 pound large shrimp, peeled
2 jalapeno chiles, seeded and finely diced
1/2 red bell pepper, seeded and cut into strips
1 yellow bell pepper, seeded and cut into strips
1/2 cup thinly sliced basil leaves, plus whole leaves for garnish
1 tablespoon tamari sauce
2 teaspoons Worcestershire sauce
2 tablespoons medium sherry
2 teaspoons sugar
1/3 cup pitted and halved black olives

Steps:

  • Bring a large pot of water to a rapid boil; add salt. Add pasta, and cook according to package directions until al dente. Drain, and return pasta to the pot with 1 tablespoon olive oil and 1 garlic clove put through a garlic press. Stir to combine. Keep warm.
  • In a large skillet, heat remaining 4 tablespoons olive oil until hot but not smoking. Add garlic matchsticks, and cook until golden, stirring constantly. Add rosemary, and cook for 1 minute. Remove garlic and rosemary from the skillet; set aside. Add onion, and cook, stirring, until golden.
  • Add shrimp and jalapenos to the infused oil, and cook, stirring, until shrimp are just done. Add peppers, basil, salt, and pepper, and cook until the peppers are cooked, yet still crisp. Make a well in the center of the skillet, and add tamari sauce, Worcestershire sauce, sherry, and sugar. Stir to dissolve sugar. Return garlic and rosemary to the skillet. Add olives, and cook until heated through, 1 to 2 minutes, stirring occasionally.
  • Serve shrimp and peppers over the warm penne. Garnish with sprigs of basil. Serve immediately.

SHRIMP WITH BASIL-GARLIC BUTTER

1/3 cup dry white wine

2 tablespoons chopped sun-dried tomatoes packed in oil
6 tablespoons cold unsalted butter, cut into pieces
1/2 cup shredded fresh basil

Steps:

  • Preheat oven to 350°F.
  • Season shrimp with salt and pepper. Heat oil in a large nonstick skillet over moderately high heat until hot but not smoking and sauté shrimp 1 minute per side. Transfer shrimp to a baking dish and bake in middle of oven until just cooked through, about 7 minutes.
  • While shrimp bakes, add garlic to skillet and cook, stirring, over moderate heat 15 seconds, then stir in wine, juice, and tomatoes. Boil, stirring occasionally, until liquid is reduced by two thirds. Swirl in butter and basil over low heat and season with salt and pepper.
  • Serve shrimp with sauce.
