- Preheat a grill to medium high and prepare for indirect grilling: On a charcoal grill, bank the coals to one side. On a gas grill, turn off half the burners. Toss the chicken with the ginger, 1 tablespoon fish sauce and 1 teaspoon each brown sugar, lime zest, lime juice and chili-garlic sauce. Season with salt and pepper. Place the chicken skin-side up on the cooler side of the grill; cover and cook until a thermometer inserted into the thickest part registers 165 degrees F, about 20 minutes. Move to direct heat and cook, uncovered, flipping occasionally, until the skin is charred and crisp, about 5 more minutes.
- Meanwhile, make the dressing: Whisk 2 tablespoons water and the remaining 1 tablespoon fish sauce, 2 teaspoons brown sugar, 1 teaspoon lime zest, 2 teaspoons lime juice and 1/2 teaspoon chili-garlic sauce in a large bowl. Whisk in the vegetable oil.
- Add the nectarines, mint, peanuts and 1/4 teaspoon salt to the bowl with the dressing; toss. Divide the chicken and nectarine salad among plates.

Found this on line and it's simple, yummy and only 4 smart points. It calls for boneless, skinless chicken thighs, but I used breasts as that's what I have. It uses a ginger lime marinade and then grilled until done. Watch the grilling though as the honey in the marinade tends to make the chicken burn if you don't watch it closely

- In small glass bowl, combine soy sauce, lime juice, lime zest, ginger, garlic, honey, oil, crushed peppers and 2 tablespoons of cilantro. Remove and reserve 2 tablespoons marinade to use for basting when cooking chicken.
- Place chicken in plastic zipper bag and add marinade.
- Squeeze the air from the bag and close it. Place bag of chicken in the refrigerator to marinate for 2-4 hours.
- Grill chicken over medium high heat for 6-8minutes. Flip and brush with reserved marinade. Grill until chicken is cooked through, 6-8 minutes more.

- Slice each chicken thigh into 2 or 3 large chunks, then put in a bowl with the ginger, garlic, chilli powder, half the coriander, lime juice and 1 tbsp of the oil. Stir well, then cover and leave in the fridge to marinate until ready to cook. For the best flavour, do this in the morning or, better still, the night before.
- Peel and quarter the onions, then very finely chop them in a food processor; for a curry you want the onion really fine. Heat the remaining oil in a wok or large frying pan, then add the onion and stir-fry for about 8 mins until soft. Stir in the turmeric and cook for 1 min more, stirring well.

- Preheat the oven to 400˚ F. Bring a medium pot of water to a boil. Stir the lime juice, fish sauce, soy sauce, sugar and ginger in a small bowl until the sugar is dissolved. Toss the chicken with 2 tablespoons of the sauce and the grated garlic; season with salt and pepper. Let marinate 10 minutes.
- Heat 2 tablespoons vegetable oil in a large nonstick skillet over medium-high heat. Pat the chicken dry. Add to the skillet and cook until browned, 3 minutes per side. - At least 1 hour prior to cooking combine minced garlic and ginger, lime juice, coconut aminos or soy sauce, avocado oil, and fish sauce in a large mixing bowl and whisk thoroughly. Add chicken breasts to the bowl and toss until they are evenly coated in the marinade. Cover the bowl and place in the fridge for at least 1 hour to marinate.
- Clean your grill and preheat to high heat. Once the grill is hot, place marinated chicken on grill grates diagonally. Close the grille and cook for 3 minutes
- Flip the chicken to the other side maintaining the same diagonal on the grill. Close the grill and cook for 3 minutes.

- Put the turmeric, honey, ginger, garlic, lime zest and juice and chili sauce into a bowl, then whisk to combine. Make several deep slashes through the skin and flesh of each chicken breast, then add them to the bowl and stir to coat in the mixture. Cover with plastic wrap and leave in the fridge overnight.

- Mix half the lime zest and all the juice with the maple syrup and grated ginger. Slash each chicken breast 3-4 times with a sharp knife, then coat well with the marinade. Set aside for 10 mins. Heat the grill and line the grill tray with foil.

- Remove the chicken from the package and examine. If the breast is very large (thicker than 1"), using your knife, cut the breast in half as if you were making a book out of the breast. This will result in two even pieces of chicken. Set the chicken aside and wash your hands, clean up your work area with hot soapy water.
- Into a bowl, whisk together the mayo, lime zest, lime juice and garlic ginger paste (if you don't have the paste, see notes for the substitution), salt.
- Pour the marinade into a zip style plastic bag (or you can just leave the marinade in the bowl). Put the chicken into the marinade. Make sure that the marinade completely covers all of the chicken pieces. If leaving in the bowl, put plastic wrap over the top or seal the plastic bag very well. Allow to marinate for up to 24 hours (24 hours is really optimal).
- After marinating, cook the chicken on the grill. Do not reuse any of the marinade to baste the cooking chicken. Discard all of the marinade after removing the chicken.
- Serve chicken with slices of lime on the side.

- Mix the everything except the chicken and sweet potatoes in a small saucepan and bring to the boil over high heat. Cook until the mixture reduces by half, then remove from heat and set aside to cool slightly.
- Set your oven to 400°F/200˚C, combination steam setting. If you have variable steam settings, use 80% or 100%. If not, don't worry! Just set to combi steam at the correct temperature and the oven will work out the humidity.

- Put the sweet potatoes into the oven. If you’re using chicken thighs, put them in now (potatoes on bottom shelf and chicken above), and cook everything for approximately 20-25 mins until it’s all tender and browning at the edges. If you’re using tenderloins, cook the sweet potatoes for 10 minutes first, then add the tray of chicken and cook for a further 12-15 minutes.
