2 tablespoons vegetable oil
1 lb ground lamb
2 tablespoons garlic, minced
2 tablespoons fresh ginger, minced
1 jalapeno, chopped (add seeds if you want more heat)
1 1/4 teaspoons cardamom
1 1/2 teaspoons curry powder
8 ounces orzo pasta
2 cups canned beef broth
1 cup tomatoes, seeded and chopped
1/2 cup cilantro, chopped

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Add lamb and sauté until cooked through, breaking up with back of spoon, about 5 minutes. Using slotted spoon, transfer lamb to bowl.
  • Reduce heat to medium. Add garlic, ginger and chili to same skillet and sauté 2 minutes. Add cardamom, curry powder and orzo and stir to 1 minute.
  • Add broth and bring mixture to boil. Reduce heat to medium-low. Cover and cook until orzo is tender and most of broth is absorbed, stirring occasionally to prevent sticking on bottom of skillet, about 15 minutes.
  • Return lamb to skillet and mix inches Season to taste with salt and pepper.
  • Mound pilaf on large platter. Garnish with tomato and cilantro and serve.

I needed a side dish to go with some wild-caught salmon I'd marinated in a teriyaki sauce, and found some whole-wheat orzo pasta in the pantry. I threw this together, and WOW! Add some braised spinach or kale, a fresh fruit, and what a nutritious dinner you'll serve!

1 cup orzo pasta
3 cups water
salt
4 green onions, chopped
2 tablespoons fresh parsley, minced
3 tablespoons teriyaki sauce
1 tablespoon brown sugar
1 teaspoon pickled ginger, minced
1 teaspoon dried red pepper flakes, crushed
1 tablespoon sesame oil
1/3 cup salted cashews, chopped
3 tablespoons toasted sesame seeds

Steps:

  • Boil orzo pasta in salted water until just done. Drain, rinse, and toss with remaining ingredients in bowl. Serve at room temperature or cold.

1 pound orzo (rice-shaped pasta)
1/3 cup chunky peanut butter
2 teaspoons Asian sesame oil
1 tablespoon honey
2 teaspoons dry Sherry
1 tablespoon white-wine vinegar
2 tablespoons low-salt soy sauce
1/8 teaspoon cayenne, or to taste
1 tablespoon finely chopped peeled fresh gingerroot
2 tablespoons sesame seeds, toasted lightly
1/2 cup warm water plus additional for moistening pasta
2 to 4 fresh jalapeño chilies, seeded and minced (wear rubber gloves)
2 tablespoons finely chopped drained bottled pimiento

Steps:

  • In a kettle of boiling salted water cook orzo until tender and drain in a colander. Rinse orzo well under cold water and drain well.
  • In a large bowl stir together remaining ingredients until combined well. Add orzo and salt and pepper to taste, tossing well. Chill orzo 2 hours.
  • Just before serving gently stir in additional 1/3 cup warm water and add salt to taste. Serve orzo at room temperature.
