Liven up mealtime with this colorful side dish - a crunchy salad full of fruits and veggies made with Cheerios® cereal.

1 large apple or pear, cut into bite-size pieces
1 large stalk celery, sliced
1/4 cup raisins or peanuts, if desired
1/4 cup reduced-fat ranch salad dressing or mayonnaise
Lettuce leaves
1 cup Cheerios™ or MultiGrain Cheerios™ cereal, slightly crushed

Steps:

  • In medium bowl, mix apple, celery, raisins and dressing until blended. Refrigerate until serving time.
  • Just before serving, arrange lettuce leaves in 4 salad bowls or on plates. Spoon apple mixture over lettuce. Top each serving with 1/4 cup cereal. Serve immediately.

Crunchy Vegetable Salad with Pears and Creamy Cheddar Dressing image

From the kitchen of food blogger Hilary Finch Hutler of tummyrumblr.com comes beautiful and fresh take on a classic salad combination: fruit, nuts, and cheese. Toasted hazelnuts are the perfect match for sweet, ripe pears, and finely grated vintage cheddar cheese adds plenty of interest to the classic buttermilk dressing.

Number Of Ingredients 13

Salad
1 head Romaine lettuce, chopped
1 small head radicchio, chopped
3 stalks celery, thinly sliced on a diagonal
2 large USA Pears, such as Anjou or Bartlett, cored and sliced
1/3 cup toasted and chopped hazelnuts
Dressing
5 tablespoons mayonnaise
3/4 cup buttermilk
3/4 cup finely grated vintage sharp cheddar cheese
2 tablespoons chopped chives
1/2 teaspoon salt
Several turns of freshly ground black pepper

Steps:

  • Place the chopped lettuce and radicchio into a large bowl of ice water to crisp, and set aside for 15 minutes. The dressing can be prepared in the meantime (see below). After 15 minutes, drain the lettuce and radicchio and spin until dry. Add the sliced celery and pears, and gently toss. Divide the salad among six plates and spoon the dressing over the top. Sprinkle each serving with the chopped hazelnuts.
  • For the dressing: Combine all of the ingredients in a pint jar and shake vigorously to combine. Refrigerate until ready to use.

1 cup finely diced white cheddar cheese
1/2 cup chopped pecans, toasted in a skillet over low-medium heat for 2-4 minutes
fresh ground pepper
6 large lettuce leaves, use more if chopping

Steps:

  • Soak celery in a bowl of ice water for 15 minutes. Drain and pat dry. Cut into 1/2-inch pieces.
  • Whisk vinegar, honey, and salt in a large bowl until blended.
  • Add pears; gently stir to coat.
  • Add the celery, cheese, and pecans; stir to combine. Season with pepper.
  • Divide the lettuce leaves among six plates and top with a portion of salad. Serve at room temperature or chilled.

4 stalks celery, trimmed and cut in half lengthwise
2 tablespoons raspberry vinegar or 2 tablespoons other fruit vinegar
2 tablespoons maple syrup (original recipe called for honey)
1/4 teaspoon salt
2 ripe pears, diced (preferably red Barltett or anjou for their crispness)
1 cup finely diced white cheddar cheese
1/2 cup chopped pecans, toasted (see NOTE)
fresh ground pepper
6 leaves butterhead lettuce (I usually use romaine) or 6 leaves other lettuce (I usually use romaine)

Steps:

  • Soak celery in a bowl of ice water for 15 minutes. Drain and pat dry. Cut into 1/2-inch pieces.
  • Whisk together in a large bowl the vinegar, maple syrup and salt. Add pears and stir gently to coat. Add celery, cheese and pecans, stirring to combine. Season with pepper.
  • Place the 6 lettuce leaves on plates and divide the salad, placing a portion on top of the lettuce on each plate.
  • Serve either chilled or at room temperature.
  • NOTE: To toast the nuts, cook in a small dry skillet over medium-low heat, stirring constantly until fragrant and slightly browned (about 2 to 4 minutes).
  • VARIATION: Instead of cheddar and pecans, try a good Parmesan and toasted walnuts.

200 ml yoghurt, plain
2 tablespoons mustard
3 tablespoons balsamico vinegar, white Garlic ground
1/2 teaspoon turmeric powder (optional)
1/2 teaspoon coriander powder (optional)
1/2 teaspoon salt
4 tangerines, peeled
2 tablespoons sunflower seeds

Steps:

  • In a bowl mix chicken, salt, pepper, cornstarch and rosemary together.
  • Heat the olive oil and fry the chicken until through.
  • Arrange the green salad and the rucola in single plates.
  • Mix celery with apple and add the lemon juice.
  • Prepare the dressing mixing yoghurt, mustard, vinegar, spices and the salt in another bowl.
  • Arrange the celery mix and the chicken on the salad.
  • Right before serving add salad dressing, tangerines and seeds.

3 medium Bosc, Devoe or D'Anjou pears, ripe but firm
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 teaspoons sugar
1/4 cup Champagne vinegar
1/3 cup peanut or other neutral flavored vegetable oil
2 cups shredded celery root
1 1/2 tablespoons mayonnaise
1 1/2 tablespoons fresh lemon juice
Salt and freshly ground black pepper to taste
2 cups torn red leaf lettuce

Steps:

  • To make the pear salad, peel and quarter the pears. Cut away the cores and cut each quarter into 3 slices. Toss in a bowl with salt, pepper, sugar, vinegar and oil. Refrigerate for 1 hour, tossing ingredients at least once more.
  • To make the celery root salad, place the celery root in a bowl and mix in the mayonnaise and lemon juice. Season to taste with salt and pepper. This salad can be made ahead and refrigerated.
  • To assemble the salad, place the lettuce in a bowl. Add a little of the vinaigrette from the pears and toss to coat the leaves. Divide the lettuce among 4 plates. Fan the pears in a circle around the lettuce. Place a small mound of the celery root salad in the center of each plate. Serve immediately
