Yield Makes two 1 3/4 pound loaves

Number Of Ingredients 7

2 1/2 cups warm water (110 degrees)
1 tablespoon active-dry yeast
1 tablespoon sugar
1 tablespoon coarse salt
7 cups bread flour, plus more as necessary
4 tablespoons (2 ounces) unsalted butter, room temperature, plus more for bowls, pans, and brushing
Nonstick cooking spray

Steps:

  • Place 1/2 cup warm water in a small bowl or liquid measuring cups yeast and sugar over water and whisk to combine. Let stand until creamy, about 5 minutes.
  • Place salt, remaining two cups warm water, and about 3 1/2 cups flour in the bowl of an electric mixer. Attach dough hook to mixer; turn mixer on and off a few times just to incorporate flour. Add 1 cup flour. With mixer on low, slowly add yeast mixture and remaining 2 1/2 cups flour. Increase speed to medium and mix until dough comes together, scraping down sides of bowl as necessary. If dough does not come together, add more flour, 1 tablespoon at a time.
  • Continue kneading on medium speed for about 5 minutes Add butter and continue mixing dough, 4 to 5 minutes. Dough may come apart before coming back together.
  • Turn dough out onto a lightly floured work surface and shape into a ball. Butter a large bowl and transfer dough to prepared bowl, turning dough to coat. Cover tightly with plastic wrap sprayed with nonstick cooking spray and let stand at room temperature until doubled in size, 45 minutes to 1 hour.
  • Butter two 4 1/2-by-8 1/2-inch loaf pans; set aside.
  • Place dough, top-side down, on work surface to deflate; divide dough in half. Working with 1 piece of dough at a time, use the palms of your hands and fingertips or a rolling pin to pat dough into a 7-inch square.
  • Place dough on work surface so one of the short sides is facing you. Starting with the bottom edge, roll dough and pinch to seal seam. Place roll in pan, seam side down. Repeat process with remaining piece of dough.
  • Spray two pieces of plastic wrap with nonstick cooking spray. Cover loaf pans with plastic wrap, sprayed side down. Let stand in a warm place until doubled in size, growing over tops of pans, and when pressed gently with your finger an impression remains, 1 hour to 1 hour and 15 minutes.
  • Preheat oven to 425 degrees on a conventional oven or 400 degrees on a convection oven with a rack set in the center of oven.
  • Transfer pans to oven and bake for 15 minutes. Reduce oven temperature to 375 degrees (conventional) or 350 (convection) and continue baking until honey brown and an instant-read thermometer inserted into the center of each loaf reaches 205 degrees, about 45 minutes more.
  • Transfer to wire racks. Let cool slightly; turn out loaves. Brush tops with butter and let cool. Do not cut until almost cool.

WHITE YEAST BREAD

Or make a whole variety of rolls, from basic round ones to more complex shapes: pretzel-type knots or, if you're feeling particularly inventive, small animals - snakes, mice, even hedgehogs!

2 teaspoons caster sugar (superfine)
2 cups warm water
2 1/2 teaspoons dried yeast or 3 1/2 ounces fresh yeast or .25 ounce fast-acting yeast
1 pound 10 ounces strong white flour (bread flour), plus extra for dusting
2 teaspoons salt
3 tablespoons butter or 4 tablespoons olive oil
1 egg, beaten, optional
Poppy or sesame seeds, for the top of the loaf, optional

Steps:

  • In a measuring cup, mix the sugar with a 1/2 cup of the warm water and yeast and let stand in a warm place for 5 minutes, or until frothy. If using fast-acting yeast, there is no need to let the mixture stand.
  • In a large bowl, sift together the flour and salt. Rub in the butter, and make a well in the center. If using olive oil instead of butter, pour the olive oil into the remaining 1 1/2 cups water. Pour in the yeast mixture and most of the remaining water (and the olive oil, if using). Mix to a loose dough, adding the remaining water if needed, plus extra if necessary.
  • Knead the mixture until the dough is smooth and springy to the touch, about 10 minutes. If kneading in an electric food mixer with a dough hook, 5 minutes is usually long enough.
  • Put the dough in a large oiled bowl. Cover the top tightly with plastic wrap, and place somewhere warm to rise, until it is doubled in size. This may take up to 2 or even (on a cold day) 3 hours.
  • Preheat the oven to 425 degrees F.
  • When the dough has more than doubled in size, punch down, and knead again for 2 to 3 minutes. Leave to relax for 10 minutes before you begin to shape the bread.
  • Shape the bread into loaves or rolls, and then transfer to a baking tray, and cover with a clean tea or dish towel. Allow to rise again in a warm place for 20 to 30 minutes, until the shaped dough has again doubled in size. When the dough has fully risen, it should leave a dent when you gently press the dough with your finger.
  • The bread is full of air at this point, and therefore very fragile, gently brush the loaf with egg wash and sprinkle with poppy or sesame seeds, if using, or dust lightly with flour for a rustic-looking loaf.
  • Bake in the oven for 30 to 45 minutes for a loaf, depending on its size, or 10 to 15 minutes for rolls, Turn the heat down to 400 degrees F, after 15 minutes for the remaining baking time. When baked, the bread should sound hollow when tapped on the base. Transfer the loaf to a wire rack to cool.

4 tablespoons (1/2 stick) butter, melted, plus more for buttering the bowl and loaf pans
1 tablespoon sugar
2 teaspoons kosher salt
5 1/4 cups all-purpose flour, plus more for flouring the board

Steps:

  • Combine the yeast and 2 cups warm water in a mixing bowl and stir to dissolve. Add the butter, sugar and salt. Use a wooden spoon to stir in one-third of the flour until smooth. Add another third of the flour and stir, then turn it out onto a floured board to knead. Knead it over 15 minutes, adding the rest of the flour as you knead. Don't let it get dry too fast; it should stay sticky. Put the dough in a buttered bowl and cover with plastic wrap. Let it rise for 1 hour.
  • Knead the dough another 5 minutes, place it back in the bowl and let it rise another hour.
  • Butter 2 loaf pans. Shape the dough into 2 loaves and transfer them to the prepared pans. Cover and let rise for 45 minutes.
  • Preheat the oven to 400 degrees F.
  • Bake the loaves until golden brown on top and cooked through, 30 to 35 minutes. Remove to a rack to cool.

EASY WHITE BREAD

10 g (2tsp) instant yeast

Steps:

  • Whisk water, sugar and yeast together. Allow to stand for 10 minutes until foamy.
  • In the bowl of a stand mixer fitted with the dough hook attachment, combine the flour and salt.
  • With the mixer running, add the water and allow to knead in.
  • Add the butter or oil, allow to knead in then add more flour, one third cup at a time until the dough is smooth.
  • Knead for another minuted until the dough comes away from the sides of the bowl.
  • If the dough is still very sticky, add more flour and knead in.
  • The dough should be smooth and soft and only a slight bit sticky.
  • Cover with plastic or a damp tea towel and allow to rise for 1 hour.
  • Once the dough has proofed, press it into rectangle on a lightly floured surface. Roll onto its self into a log, pinch the seam then transfer to a loaf pan that has been lightly greased.
  • Covere again and allow to rise for 30 minutes while you preheat the oven to 180°C/350°F.
  • Place in the oven and allow to bake for 30-45 minutes until golden brown and risen. Once baked the bread will sound hollow when tapped on the bottom.
  • Remove, brush with a little butter and allow to cool before slicing.

I make bread almost every week, and have made this particular bread recipe longer than I care to admit. It is soft, light, airy, and tastes wonderful. This recipe never fails me. This recipe can also be made into dinner rolls, but adjust the temperture for rolls to 325 and bake for 25-30 minutes.

2 (1/4 ounce) packages active dry yeast (regular not rapid rise)
2 teaspoons salt
1/4 cup sugar
1/2 cup canola oil or 1/2 cup light tasting olive oil
2 cups hot water (hot to the touch from the tap)
1/3 cup powdered milk
2 cups all-purpose flour
3 cups bread flour

Steps:

  • Note: If you do not have powdered milk, you can heat 2 cups of milk, or 1 cup milk and 1 cup water; whichever you prefer, in a small saucepan to 120 degrees on a candy thermometer and omit the 2 cups of water.
  • Grease a large mixing bowl and set aside. In another large mixing bowl, add the yeast, salt, sugar, oil, and hot water. With a mixer, mix all those ingredients for 2 minutes. Add 2 cups of flour and the powdered milk. Mix for another 2 minutes. With a wooden spoon, stir in 3 cups of bread flour. Remove the dough from the bowl out onto a lightly floured counter top or table.
  • Begin to knead the dough. You may need to sprinkle a little flour on your dough or counter top a couple of times as you knead until it doesn't stick to your surface any more. Knead the dough for 10 minutes until smooth and elastic.
  • Take dough & place in the greased bowl; flip the dough over so greased side is up. Cover with a piece of plastic wrap; don't tighten it down, just lay it over the bowl loosely....or you can use a small tea towel too. But the plastic helps it from drying out too much.
  • Let it rise until double in a warm place -- a sunny window or on a warm clothes dryer that is running. It can rise as quickly as 45 minutes in those warm places. Otherwise, it can take up to 1 hour to 1 ½ hours depending on the temperature in your house.
  • Lightly grease 2 bread loaf pans with shortening. Divide dough in half & shape into a bread loaf pans. Cover with kitchen towel and let rise until doubled.
  • Preheat oven to 350 degrees. Bake for about 30-40 minute (everyone's oven temperature varies, so keep that in mind) Loaves should be golden brown on top. Remove from oven. Remove loaves from pans onto a wire rack.
  • Take a wet paper towel, and it can be really good and wet, and wipe off the tops of the baked loaves of bread. This does not make your bread soggy. It keeps the bread crust soft! But, you can skip this step if you want.
  • And....if you insist on cutting a slice of bread before it is cool, use a electric knife or a large serrated bread knife so the loaf don't get squashed down when you are cutting it. Spread some butter on your slice of bread and enjoy!

1 2/3 cups lukewarm water (divided)
2 1/4 tsp instant yeast (or active dry yeast)
1 tsp sugar
1 Tbsp honey ((or more sugar))
1 tsp salt
1 1/2 Tbsp unsalted butter (cubed at room temperature)
4 1/2 cups all-purpose flour
1 1/2 Tbsp butter (melted for brushing)

Steps:

  • In the bowl of a stand mixer fitted with the dough hook combine the instant yeast, sugar, and half of the lukewarm water. Let sit for 5-10 minutes until foamy (if using active dry yeast, let sit for 15 minutes).
  • Add remaining water, honey, salt, cubed butter, and 4 cups flour to the bowl. Knead at low speed until the dough comes together and is soft but not sticky. Add a few more tablespoons flour if necessary. Continue to knead for 6-9 minutes until the dough pulls away from the sides of the bowl and is soft and smooth.
  • Transfer the dough to a lightly greased bowl and make sure that it is completely coated. Cover with plastic wrap and let rise in a warm and draft-free place for about 45 minutes or until doubled in size.
  • Lightly flour your work surface and turn out the dough onto it. Divide it into two equally sized portions. Use your fingers to gently pat each half into an 8x12 inch rectangle while pressing it all over to remove any air pockets. Starting at the short end, roll up the rectangle into a tight roll and pinch the seams to seal. Tuck the ends of the roll slightly under the roll to create some tension on the surface and place each loaf into a greased 8x4 inch loaf pan tucked ends and seam side down. Cover with a greased piece of plastic wrap and let rise for about 45 minutes in a warm and draft-free place until doubled in size.
  • Preheat oven to 390 degrees F and adjust oven rack to lower-middle position.
  • Bake loaves for 25-30 minutes until golden brown (and the loaf registers 208 to 210 degrees).
  • Invert bread onto a cooling rack. Reinvert loaves and brush tops and sides with melted butter. Let cool completely before slicing.

3 packages traditional yeast
6 cups very warm tap water
1 teaspoon salt (heaping)
1/2 cup oil
12 cups all-purpose flour

Steps:

  • In a large mixing bowl put in the sugar.
  • Add the water and sprinkle with the yeast.
  • Let stand 10 minutes.
  • Stir yeast mixture with a whisk.
  • Add salt and oil, stir again.
  • Gradually add flour one cup at a time, stirring with the whisk until too thick to stir.
  • Swich to a wooden spoon until dough comes away from the sides of the bowl.
  • Turn onto a floured surface and knead for 8 minutes while adding remaining flour.
  • Spray an extra large bowl with vegetable spray.
  • Place dough in the bowl.
  • Spray dough with the vegetable spray.
  • Cover with a towel and let rise in a warm place 1 1/4 hours.
  • Punch down dough, turn out onto floured surface and cut into 5 pieces.
  • Make each piece into a ball.
  • Spray 5 loaf pans with vegetable spray.
  • Shape dough balls into loaves, place in the pans.
  • Cover with a towel in a warm place for 1 hour.
  • Preheat oven to 325 degrees.
  • Place loaves in oven and bake for 35- 40 minutes.
  • Cool on wire rack.

NEWFOUNDLAND WHITE BREAD

5 cups flour
1 (5 g) package instant yeast
2 teaspoons salt
2 tablespoons sugar
3 tablespoons unsalted butter, melted
2 cups milk, warm

Steps:

  • Combine 3 cups of the flour along with the sugar, instant yeast and salt in a large bowl or in the bowl of a large electric mixer that uses a dough hook.
  • Add the melted butter and warm milk.
  • Using a wooden spoon or the regular paddle of your electric mixer beat for 4-5 minutes until the mixture is smooth with no lumps. If using an electric mixer, switch to the dough hook at this point and begin to slowly incorporate the remaining 2 cups of flour. If not using an electric mixer keep mixing in the flour gradually until a soft dough forms that leaves the sides of the bowl.
  • Turn the dough out onto the countertop or bread board to knead. You may need to use a little less or a little more flour, this is not uncommon. Knead the dough for an additional 10 minutes either in the electric mixer or on a bread board or countertop.
  • Cover dough and leave to rest and rise for one hour.
  • Punch the dough down and knead it for a few minutes by hand before letting it rest for another 10 minutes.
  • Grease 2 medium loaf pans. Divide the dough into 6 equal portions, forming each division into a ball. Place 3 balls of dough in each loaf pan.
  • Cover with a clean tea towel and allow the dough to rise until it is about 2 inches above the rim of the pan, about 2 hours depending on room temperature.
  • Bake at 375 degrees F for 30-40 minutes depending on the size of the pans that you are using.
  • When baked, turn loaves out onto a wire rack to cool. Brush the tops with melted butter if desired to soften the top crust.

2 ¼ tsp active dry yeast (7 g)
1 cup lukewarm water
1 tbsp honey ((or sugar or maple syrup))
Proofed yeast mixture ((ingredients listed above))
19.5 ounces AP flour (4 ⅓ cups, spoon and leveled (please see notes))
⅓ cup lukewarm water
1 ¼ tsp sea salt
2 tbsp honey ((or sugar or maple syrup))
¼ tsp citric acid (or ½ tbsp white vinegar (optional))
2 tbsp unsalted butter (melted (or vegetable oil))

Steps:

  • Place the water in the mixer bowl of your stand mixer.
  • Stir in the honey to dissolve, and sprinkle the yeast over the water. Gently stir to mix.
  • Allow the yeast to sit in a warm place for about 15 minutes, until it's activated and becomes frothy. This could take longer if your yeast was in the freezer. If the yeast doesn't activate (no frothy bubbles), then your yeast is likely too old and you will need it replaced with fresh yeast.
  • Once the yeast is activated, you're ready to make the bread dough.
  • To the proofed yeast mixture, add the flour, warm water, salt, honey, citric acid and melted butter.
  • Using a dough whisk or a spatula, mix the ingredients to form a rough dough.
  • Place the bowl in the mixer with a kneading hook attached, and knead the dough on low speed for about 2-5 minutes, until the dough comes together to form a ball.
  • Increase the speed by 1 level (speed 3 in a kitchen aid mixer) and knead the dough for a further 12-15 minutes until it's smooth and elastic.
  • While the dough is kneading, check on it every few minutes to make sure it's kneading well, and is not too dry or too wet.
  • If the dough is sticking to the sides of the bowl, then it's too wet, so add a little extra flour (a dusting at a time), to get the right texture. To check if it's at the right consistency - lift the kneading hook from the bowl, and check if the dough only sticks to the bottom of the bowl. If yes, then the moisture is perfect. If the dough isn't sticking to the bottom of the bowl however, you may need to add a little extra water (just ½ tsp at a time), to get the right consistency. The dough should be smooth, a little soft and a little tacky to the touch.
  • Once the dough is kneaded, remove the dough hook and fold the dough over a few times by hand, to get a smooth ball. Then place it in a lightly oiled bowl, and cover with plastic wrap. Let the dough proof for about 1 hour until it has doubled in size.
  • While the dough is proofing, prepare the bread loaf pan. Butter 1 - 9 x 5 inch loaf pan and set aside, until the dough is ready.
  • Turn the proofed dough out onto a lightly floured work surface. Gently press the dough into an evenly thick rectangle. The short side of this rectangle should be roughly about 8 - 8.5 inches (i.e. slightly shorter than the length of your bread loaf pan).
  • Next, tightly roll up the short side, along the length of the dough rectangle. Make sure to pinch/press the edge of the dough as you go, while rolling it up (read the post and see pictures for more details).
  • Once the dough is rolled up, pinch the seams to seal it, and tuck in the two sides and pinch these seams as well. Make sure all the seams are on one side (this will be the bottom) and the other side is smooth and seam-free (this will be the top).
  • Transfer this into the prepared loaf pan, seam side down, and press the dough into the pan. Make sure it's evenly pressed into the bottom of the pan. Loosely cover the loaf pan with plastic wrap and let it proof again in a warm place, for about 45 minutes - 1 hour.
  • The top of the dough should rise about 1 inch above the rim of your bread loaf pan (when looking from the side), and when you leave an indentation in the dough with your finger, the indentation should remain, and not bounce back (read the post and see pictures for more details).
  • Preheat oven to 375°F, during the last 30 minutes of the second proofing time. It's best for the oven to be preheated to the right temperature for at least 20 minutes, before baking the bread.
  • When the bread loaf is ready and the oven has preheated, place the loaf pan in the middle of the oven, and bake for 45 minutes. It's done when it sounds hollow when the bread is tapped on top, OR when the internal temperature has reached 195°F.
  • Remove the pan from the oven, and keep it in a warm place (away from drafts) to cool. After about 10 minutes, remove the bread from the pan and keep it on a wire rack to cool down completely. The bread is now ready to be served.
  • Optional - brush melted butter on the top while it's hot to add more buttery flavor.
  • Keep the loaf in a bread box at room temperature for upto 4 - 5 days, or slice and keep in the freezer for up to 1 month.

  • Make a well in the centre, then add 3 tbsp olive oil and 300ml water, and mix well. If the dough seems a little stiff, add another 1-2 tbsp water and mix well.
  • Tip onto a lightly floured work surface and knead for around 10 mins.
  • Once the dough is satin-smooth, place it in a lightly oiled bowl and cover with cling film. Leave to rise for 1 hour until doubled in size or place in the fridge overnight.
  • Line a baking tray with baking parchment. Knock back the dough (punch the air out and pull the dough in on itself) then gently mould the dough into a ball.
  • Place it on the baking parchment to prove for a further hour until doubled in size.
  • Heat oven to 220C/fan 200C/gas 7.
  • Dust the loaf with some extra flour and cut a cross about 6cm long into the top of the loaf with a sharp knife.
  • Bake for 25-30 mins until golden brown and the loaf sounds hollow when tapped underneath. Cool on a wire rack.

The buttery, slightly sweet, but mostly neutral flavor of white bread really lets the main ingredients shine. So, whether you're a nostalgic baby boomer like me, or just a curious millennial 'wondering' what a classic white bread tastes like, I really do hope you give this a try soon.

1 ¼ cups whole milk, warmed
1 (.25 ounce) package active dry yeast
1 large egg, beaten
1 tablespoon white sugar
1 tablespoon white vinegar
¼ teaspoon baking soda
1 teaspoon fine salt

2 ¾ cups all-purpose flour, or more as needed
3 tablespoons unsalted butter, very soft
1 tablespoon all-purpose flour, or as needed

Steps:

  • Pour warm milk into a bowl of a stand mixer fitted with the dough hook. Sprinkle yeast on top and let dissolve until a few small bubbles begin to a form, 10 to 15 minutes. Add beaten egg, sugar, vinegar, baking soda, salt, cayenne, flour, and butter.
  • Knead on low speed until dough begins to come together. Increase speed slightly and knead about 3 minutes more. Use a spatula to scrape the sides clean and gather the dough into the center. Cover and let rise until doubled in volume, 1 1/2 to 2 hours.
  • Butter a spatula and a loaf pan. Scrape the dough into the pan using the spatula. Smooth out the top to distribute dough evenly. Dust the top with flour and press gently to even out the dough. Let rise in pan for 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Use a sharp knife or razor to cut a deep slash lengthwise through the center of the loaf. You may need to go over it several times. Brush the top with most of the melted butter.
  • Bake in the preheated oven until golden brown, about 30 minutes.
  • Brush hot loaf with remaining butter. Let cool in the pan for 10 minutes, then turn it out onto a wire rack to cool for at least 1 hour before slicing.

  • In a 4-qt. bowl, dissolve yeast and sugar in 1/2 cup water. Let stand 5 minutes. Add the butter, salt, remaining water and 3 cups flour. Beat until smooth.   • In a large bowl, dissolve yeast and sugar in warm water. Stir in lard, salt and two cups of the flour. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
